Dinners this week:

Meatloaf/mashed potatoes
Tuna and Noodles
Ham and Bean Soup - crockpot
Sloppy Joes/chips
Maple Soy chicken thighs/salad/steamed veggies

Hi 3crazykids,

Can you please tell me how much maple syrup & soy you use in that recipe?

Sure! Here is the recipe I am trying - I've never made it before so I hope it's a tasty one. :goodvibes

Ingredients

1/2 cup maple syrup
1/4 cup fresh orange juice
2 tablespoons soy sauce
2 teaspoons dark olive oil
1/2 teaspoon crushed red pepper
2 garlic cloves, minced
8 bone-in chicken thighs, skinned
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

Combine the first 6 ingredients in a bowl and stir with a whisk. Place chicken thighs and maple mixture in a large zip baggie and zip closed. Marinate in the refrigerator for 1 hour.

Preheat oven to 375 degrees.

Remove chicken from the bag, and place it on a lined baking sheet. Baste the chicken with 1 teaspoon of remaining marinade mixture and sprinkle with salt and pepper. Bake chicken at 375 for 25 minutes. Turn chicken over; baste with remaining 1 tablespoon of maple mixture and bake and additional 15 to 20 minutes or until the chicken is done. Serve with a side of rice.

well my ignitor in my gas oven went last Thursday - soooo I do have a repair guy coming tonight hopefully he can fix it and it won't cost me too much!!

I'll post my menu tomorrow :)

Yesterday I picked up chinese takeout on the way home. It was a good thing because a huge storm blew thru and we lost power for an hour.

Tonight I am making pork chops with roasted sweet potatoes, stuffing, and applesauce.

Well the oven is fixed! the repair man move the ignitor from the broiler to the oven which is perfect as we don't use the broil anyway so our dinner are as follows for the 3 of us this week (DS is home)

Monday - chicken teriyaki tips, rice a roni fried rice, leftover wontons
Tuesday - burgers
Wednesday - Turkey cutlets, gravy, leftover stuffing, instant mashed potatoes, fresh and canned green beans
Thursday - meatball subs for the boys and pasta and meatballs for me
Friday - frozen pizza
Sat - Not sure yet my mom is coming down the for the week and it's the Hubs bday but he will be hunting all day
Sunday - celebrating the hubs bday with all the fam at Bugaboo Creek - YUM
I am on vacation Thanksgiving week and my mom will be visiting for the week so all dinners are up in the air except Thursday when we will have Turkey dinner with all the fixing for Thanksgiving with the inlaws..

Boy, I've gotten off track lately. Here's to a less frantic lifestyle...

Tonight: canned minestrone bumped up with ground beef, and more pasta, beans and vegetables. Cheese bread from the bakery. Big honkin' green salad. Oranges for dessert.

One day at a time...

It's been really busy and I am starting to stress about the holidays. I wish there was a way to slow everything down....

M-I made Italian chicken:
1/2 cup grated parmesan cheese
2 tablespoons dried oregano
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon pepper
3 tablespoons melted margarine
4 boneless skinless chicken breast halves
Coat the chicken in butter and dip in the mixed dry ingredients. Place in a greased baking dish (drizzle with more butter) for 15-20 minutes at 425.

I paired this with a big, beautiful salad. I will make this again and again. I usually do not like chicken if it's not on the grill, but this was really yummy.

T-Cuban black beans and rice served with tortillas and all of the fixings. Fruit salad with grapes, bananas and mandarins.

W-Veggie chili and broccoli cornbread

T-Pork, scalloped potatoes, and green beans

F-homemade pizza night with another big, beautiful salad

Not sure about the weekend. I will have to go to the store before then. Is anyone like me, I can't stand grocery shopping before and in-between holiday meals. It is hard to "normal" grocery shop or something.

holy cow - this thread is 2 years old and I'm just finding it now????

I'm sooooooo late to the party - but going through some of the pages I thank you all for giving me some ideas.

I hate cooking and can never think of what to make. DH is a chef/cook at work and sometimes hates to think about cooking when he gets home. it's great to have some ideas ready to go

thanks everyone
