We are still waiting to hear about what is going to happen with mom. Insurance is being difficult about the skilled nursing facility and hospice is being difficult because we don't have Medicaid approval yet for a facility. But no one seems to realize that at home hospice is impossible. It is not safe for her or physically doable for me. The thought of her coming home puts me into a panic.

Plus, I graduate on Saturday. However, I don't think I am going to walk. Mom can't be there and my family can't travel to be there so... yea. Plus, I really do hate public spectacles like that and was only doing it because mom wanted to see it.

Sorry for the rant. Just stressed out at the moment.

Here is my menu for next week:

Monday: Marinated strip steak, fried potatoes and onion, and baked parm tomatoes

Tuesday: Chicken fajitas and mexican rice

Wednesday: Steak and cheese sandwiches and fries

Thursday: Chicken with peanut sauce and sweet potatoes and rice

Friday: Vegetable Lasagna

Saturday: Leftover lasagna

Sunday: Thai chili salmon, rice, and stir fried vegetables
 
Eureka - I have some similar issues: one boy won't eat rice the other won't eat potatoes. Neither of them is much on veggies. Here are some things that work for us:

crockpot meatballs - frozen meatballs + 1 small jar grape jelly + 1 jar chili sauce in the crockpot on high for 2 hrs. Serve on french rolls or over couscous (the kid who won't eat pasta has his as a sandwich)

pepper steak - I use the recipe on the link below and serve over jasmine rice. Kid who won't eat rice boils ramen noodles w/o the spice packet to go under his. I omit the tomato and saute the onion and pepper separately, since only dh and I eat those.

polish sausage "dogs" - These are in the hot dog section. Maybe not the best thing for you, but yummy grilled and served with baked beans and potato wedges (cut up potatoes, toss with olive oil and Mrs Dash, bake at 425* for 35 min). You can serve them on or off buns, and you can add sauted onion and pepper for bahama mamas.

and rice or potatoes (one kid gets applesauce instead of that side)

A bottled "30 minute marinade" does wonders for boneless pork chops. We like teryaki (serve with pineapple chunks and potato wedges from above), garlic and herb (served with creamy garlic rice or Lipton Rice & Sauce garlic shells and either green beans or asparagus - ditto on the applesauce), or even Caribbean Jerk served with whatever sounds like it would work with that.

The same marinades also work on chicken, with similar side dishes. We often steam zucchini / squash / onions / peppers to go with the chicken or chops. Kids can have applesauce.

A pre-sliced quarter ham is another great and easy dinner. They are pre-cooked and just need to be warmed in the oven (my kids won't eat it cold). I layer the slices in a pan and cover with foil. Sometimes I just heat it up, sometimes I add pineapple juice or half a can of soda or some brown sugar. Serve with corn on the cob (in season), spanish rice (homemade or from a mix) or a yellow rice mix and your choice of veggies from any of the above meals.

Chop the leftover ham into small pieces and freeze in 1/2 cup portions to liven up green beans another night. Also good to add to omelets.

Now, my boys know that if they don't like the meal being served, they are allowed to make a pbj. You also saw that I allow a substitution if one of the boys can make it himself. One of mine has a bowl of ravioli every time I make chili. I will not make a special meal for anyone, but I do allow my kids to make their own appropriate substitution (like making instant mashed potatoes on a rice night). This is the best compromise dh and I could come up with. As my mom always says "as long as there is one food on the table that each of my kids will eat, it is a successful meal."

Thanks for your suggestions. I do crockpot meatballs with pasta and my meat lover just loads up on the meat. I shop on Fridays and asked them tonight what they wanted next week. One kid said tortellini and kielbasa...I slice it up and throw it in with the pasta and make a creamy sauce with marinara and half and half. I can't eat red sauce so will just leave mine plain, and make sure there is plenty of kielbasa, lol. They also both wanted steak with baked potato next week, so that is easy. My anti-pasta/rice guy also hates peanut butter...he tries tons of foods but just like his mother did as a kid (lol!) his palate is limited. Hope he will expand his horizons as he gets older like I did.

Friday: Grilled Steaks with aparagus and salad

Saturday: Baked Pizza Pasta (Meat Sauce, Pepperoni, Mozz Cheese over whole wheat penne pasta), salad and whole wheat French bread

Sunday: I am making a ham, homemade mac and cheese and some cupcakes to take over to my mom's house. We will probably have deviled eggs and butter beans too.

Monday: Grilled Porkchops, baked sweet potatoes, broccoli

Tuesday: Grilled hamburger patties with gravy, onions and mushrooms, cauliflower mash (kind of like loaded mashed potatoes, but you use cauliflower), peas.

Wednesday: Leftovers from the previous 3 nights :)

Thursday: Baked chicken, green beans, salad

Friday: kabobs, salad
 
Next 10 days or so....
Today: a new fish recipe/quiche for my son who doesn't like fish, red potatoes
Saturday: ham steaks, baked beans
Sunday: leftovers/whatever/hopefully lunch out for Mother's Day
Monday: soup and sandwiches
Tuesday: steak and baked potato
Wednesday: leftovers
Thursday: make your own burritos and corn
Friday: kielbasa and tortellini in a tomato/cream sauce, salad
Saturday: homemade pizza
Sunday: leftovers/whatever
Monday: sweet italian sausages and pasta or on hoagie rolls with peppers and onion (this is a new-to-us dinner idea, we'll see who likes it)

Hey, we are here to listen:grouphug: Congratulations on your graduation! I am graduating on the 24th. I didn't graduate from college the first time around lol Now the trick is finding a job!

Today I am making chili dog casserole. It's super easy and was requested from my DD whom is also graduating (from 8th grade)
 
Hi Friends - sorry I've not been around the past few days, On Sunday evening around 7pm my gramp (who just celebrated his 90th Bday on Friday night with us all) was rushed to Maine Medical Center with chest pains  then it turned into stomach pains and as of last night they thought maybe he has a bleeding stomach ulcer (they are doing a scope test today to confirm) so I was at the hospital from 8pm Sunday night to 3am Monday am  so anyway I worked Noon to 6 pm yesterday then went to the hospital then to goodwill cause I only have enough pants to last till tomorrow so I wasnt home till 9:20pm ! And came to work today at 6am and will work till 4pm then visit gramp again till around 6pm! then back home again.. PHEW .. I am keeping track of my carbs and sticking to about 25-30 but the scale has stop moving down (it just moves up a little and back to same then down a little and back up to the same.. LOL so without exercise 163 looks like the magic number) I stayed on track for Mother's day but did allow myself 3 doritos, one bite of a burger with bun, one bite of chocolate cake with vanilla homemade frosting and one BIG bite of Lemon Lush I just counted everthing and had a salad for Dinner

On a happy note last night at goodwill I bought my "goal" dress.. size 8 slinky black dress --- I did try it on and snapped a few pics (just for myself to see the before) I am excited to see what it looks like on my birthday (10/10) .. I am setting a goal of 4lbs a month till then to look fabulous in that dress! I am going to post a pic of it on the hanger on facebook tonight.. I will be starting a 30 day ab buster I saw on Facebook soon as my gramp comes home..

This week for meals its just myself and the hubs..
Sunday - Dinner was a salad for me and Hubs had leftover KFC
Monday - since we were out running around I had a Mcdonald's cheeseburger with only the top bun, 1 chicken nugget and 2 FF with a bottle of water. Hubs had the 2 cheeseburger meal and the rest of the nuggets
Tonight - Chicken Scampi made with Campbell's scampi skillet sauce and dreamfields angel hair pasta and salad when i get home from the hospital
Wednesday - Parmesan Coated Pork chops, dreamfields Mac and Cheese, green beans
Thursday - I am indulging and having a barber foods chicken stuffed with apple and brie with fried cabbage - I am going very light on carbs for bfast and lunch
Friday - flat iron steak on the grill, cauliflower and green beans
Sat & Sun ???

Dh is on a 2 wk business trip right now. I'm feeding me and 2 tween boys.

We will be having:

frozen burgers with potato wedges - probably 2x
hamburger helper for the boys - 2x (I will have a sandwich or soup)
spaghetti - 2x
Little Caesers - either 1x or 2x
polish sausage with baked beans - 1x
hot dogs and chips - 1x

Not the most appetizing, I know, but it's the last 2 wks of school and we have a lot going on, including 8th grade "graduation", an amusement park field trip going until 9pm, 2 scout meetings and 1 committee mtg. I need quick and and easy, and prefer not to go to the grocery. Almost all of these things are readily available in my freezer and pantry.
 
No cooking for me tonight. My girlie is sound asleep with her head on my lap and DH is working OT. Days with a sleeping child on me are few and far between and I refuse to interrupt! Think I will have DH pick up pizza on his way home.
 
Well, it's official! DH signed the paperwork today for a contract at a new university so we are moving 2500 miles back to Ontario at the end of next month!

Anywho...

I've got all our dinners planned out for the next six weeks and we should come very close to eating up the remainder of our stocked food. I shouldn't have to buy much more than milk and produce between now and then.

I'll just post the rest of May for now...

We have had Mexican food twice this week: beef and been burritos and build your own nachos last night. It was a school night for me and easy for the DH to put together. We are having my last Spanish Class next week and then I am making chicken and mole' torta sandwiches.
I scored a whole bag of avocados for .99 and made some guac last night too. Along with that I also got a whole bag of fresh organic peaches and pears on clearance.
I also made shrimp and grits casserole this week. I will have to post that to my blog when I have a free minute. Finals week is loads of fun:cool1:

Monday: Hotdogs/Bratts, fruit, corn
Tuesday: Steak Fajitas
Wednesday: Spicy Chicken Italian Bake, salad

Yesterday I made: Baked chicken cutlets, yams and green beans.
Tonight: Chili w/ lots of veggies in it, and cauliflower on the side.
Tomorrow: Going to DH's cousins and having pizza.

Sunday: I have a groupon and will pick up dinner, since we have baseball practice from 3-5, not going to feel like cooking.
 
Update: So, mom is coming home on Monday on Hospice. I can't afford to keep her in a facility or do Medicaid (which will force me to sell the house). Hospice is totally covered by the insurance. I am honestly terrified, but it is what it is.

So, here is my meal plan for the next week. I really need to stay on track!

Tonight: Brats, Mac and Cheese, & Pickled Beets
Saturday: Out with friends to celebrate our graduation
Sunday: Steak Sandwich & Fries
Monday: Chicken Fajitas & Rice

While this doesn't pertain to eating, my prayers are with you. Today I buried my grandmother who passed away after 8 months in Hospice. My grandfather passed away 4 years ago, in Hospice care. My other grandfather recently began Hospice care for terminal cancer. They are amazing people who do fantastic things. We've had both in home and hospital care with them and can't say enough. They truly make the end of a loved ones life better and the life of the family better, too. My thoughts and prayers are with you.
