Very busy day today so I have minestrone soup in the crockpot and will be making sourdough bread in my bread machine this afternoon to go with it.

Thinking tonight will actually end up being pizza... and not homemade. I am so not feeling the salmon, I forgot to do dishes yesterday, I am tired and stressed, and I just don't want to cook. So gonna order a pizza and curl up on the couch and watch something on netflix.

Poor man's stew tonight I.E Hot Dog Stew

Hot dogs
stew veggies or whatever you have on hand
tomato sauce - equal amount of water to however many cans of sauce you add, doctor it up with Italian spices, garlic, and a touch of salt/pepper, cook til hot and tada!

It's been raining since yesterday morning and a bit cold here in Southeast Georgia so it's a good day for something hot!

I hope everyone has a good dinner with the family tonight! :wave2:

I made chili on Saturday and my DH brought home a pizza that one of his customers gave him. We ate that last night. Tonight is homemade mac and cheese.

SOOOO Excited my DD is home from college for the summer!!! and she might transfer to a local school so she won't be far away :)

This week is still an easy week for me as my Ex & his wife are out of town and my DD and DS are staying at his house to watch a half brother most of the week..

Tonight after LAX is Meatloaf & green beans for everyone (mine however had cauliflower instead of rice in it) I'll have some brussel sprouts and the fam will have garlic noodles

Tuesday - Grilled Chicken & green beens for everyone, mashed with gravy & stuffing for the fam and I'll have some grilled zucchini with mine

Wednesday - starting tonight will just be myself and Hubs - Kielbasa and cabbage with rice pilaf for Hubs

Thursday - My mom is staying over tonight (she lives about 2 hrs away & is in town cause my Gramp turns 90 on Friday) I have zumba so maybe her and Hubs will eat Chinese and I'll just have an Atkins meal when I get home

Friday - my Gramps 90th bday celebration - I am making some dreamfields lasagna for myself and will eat some salad (skip the crackers/cheese, fruit, bread and cake)

Saturday - My mom will be over again for the night - I think we'll cook homemade pizza, I'll make mine on a low carb wrap

Sunday - Mother's day - I think we'll take my mom out to eat, her choice breakfast or lunch...

Sunday: Chimichangas, refried beans, left over corn casserole
Monday: Hamburgers, fruit salad, corn
Tuesday: Pasta, salad, garlic bread
Wednesday: Eat out Track Meet
Thursday: BBQ chicken, salad, fruit
Friday: Leftovers
 
Meals for this week (in no particular order):

polish sausages on buns, with baked beans and homemade potato wedges

leftover chili over spaghetti

marinated chicken breast with green beans and rice

grilled pork chops, home fries, steamed squash/zucchini/onions/peppers

dinner out Friday

dinner out Sat (just me and one boy - dh flies out Sat and ds12 will be at a band event)

And, yes, most of those meals are breadless. Dh needs to lose weight, ds12 needs to lose weight, and I do not need to gain back the 45# I lost last year. No bread is very helpful on that front.


The following couple of weeks will be interesting with dh out of town and the kids in the last few weeks of school. I see a lot of cheap Little Caesar's pizza and frozen hamburgers in our future...
 
I am getting tired of my every day meals and need a change but not sure what to do. One child doesn't like pasta or rice, the other doesn't like fish and told me the other day that pork chops are "not that good." They also don't like beans of any kind, and are not crazy about homemade soups either. Some nights I don't really even bother and we have (canned) soup and sandwiches or frozen chicken patties but that's a lot of sodium and fat. Plus I need to eat low-acid and lower-fat for GERD issues. Sigh. Any suggestions?

Anyway, this week:
Monday: pesto pasta/gorton's fish for the anti-pasta kid and salad
Tuesday: crockpot turkey meatloaf (requested by my 10 yr old), corn
Wednesday: leftovers/band concert at 6:30
Thursday: chicken of some kind, probably teriyaki with rice and salad
Friday: fish/homemade quiche from the freezer for anti-fish kid, not sure of sides
Saturday: ham steaks and oven-fried potatoes
Sunday: always a leftover/to each his own night
 
We do meatball subs with frozen meatballs. You can heat them in the microwave. Kids live this. When I am lazy serve with applesauce and baby carrots. So easy
 
Yesterday (Sunday): I had a frozen turkey (FREE!) from Easter that I defrosted and made w/ stuffing and cranberry sauce.

Today: Pizza, $6 for a large cheese pie. Great deal! And I made my other meals for rest of week because of our son's busy baseball schedule.

Tuesday: Baked Chicken Cutlet sandwiches, spinach, & not sure of what other side yet.

Wednesday: Baked Tilapia & or left over pizza

Thursday: Spaghetti w/ stewed vegetables

Friday: Breakfast for dinner (Pancakes, scrambled eggs, sausage)

Not sure about Saturday. Sunday is Mother's Day BBQ
 
Sun: Hamburgers on the grill with sautéed garlic and mushroom, mac & cheese

Mon: Chicken cordon bleu sausage (soooo delicious!!!!), fried potatoes, honeyed carrots, pineapple

Tues: Sweet and sour chicken, fried rice, egg rolls

Wed: Spaghetti with meat sauce, salad, garlic bread

Thurs: Tacos, chips and salsa

Fri: Homemade pizzas, salad

Sat: Grilled hot dogs, pasta salad

Sun: Mothers Day...my mom is camping about 30 mins away so we are going to the campground for an early afternoon meal. DH and DD will take me to dinner later in the evening

Mon: Chicken lettuce wraps, steamed jasmine rice

Tues: Crockpot Italian chicken, broccoli

Wed: Sloppy joes, applesauce
 
Last week was rough, but we are back on track.

Sunday we went out to celebrate my cousin's college graduation.

Monday we had corned beef with potato pancakes, applesauce, and carrots.

Tuesday we had some chicken soup from the freezer.

Tonight we had roasted chicken with cheesy potatoes, zucchini, and fruit.
