Good afternoon friends (Hugs Lily!) my week is a busy one DS is home and we have LAX everynight and Sat am plus I am allowed to work OT finally!!

Last night we had fend for yourself night :)
Tonight - Monday - Burgers on the grill and chips/popcorn! I have mine in 1/2 of a low carb wrap. YAY for nice weather! DS will have leftover shepards pie because he had burgers last night at his dads..
Tuesday - Homemade Mac & Cheese made from Dreamfields elbows for everyone with salad and the boys will have some popcorn chicken with theirs
Wednesday -LAX home game - Homemade chicken tenders & green beans for all , Lipton alfredo noodles for the boys, zucchini for me
Thursday - Zumba night for me Hubs in charge - Meatball subs for the boys and i'll have shrimp and cabbage when i get home
Friday - LAX away game - probs Pizza for the boys and I'll make a homemade one with a low carb wrap when we get home
Saturday - hopefully steak on the grill but we'll see how the budget holds out..

So I've had the Dreamfields pasta twice now - no blood sugar spikes at all and the first time I ate it I gained 1.1 lbs and the second time I ate it I lost .8lbs.. so I am likely to incorporate this brand of pasta into my weekly menus in case I just say I am making spaghetti, Mac & Cheese, lasagne, baked ziti, stir fry with noodles - whatever it may be it will be with the Dreamfields brand of pasta.. :cool1:
 
Alright, here is what I have for this week. I am going to try and control my breakfast, snacks, and dinners the most as I will most likely be spending my lunches at the hospital. They have decent offerings which will help.

Breakfast ideas:
Hard Boiled Eggs
Honey Nut Chex and Banana
Oatmeal Squares (once I get a chance to make them)
Fruit Smoothies

Snacks:
Popcorn
Honey Nut Chex
Oatmeal Squares
Cheese Sticks
Hummus and Vegetables

Dinners:
Monday: Pasta with Butter, Parmesan, and Peas
Tuesday: Loaded Baked Potatoes and Salad
Wednesday: Asian Sesame Salmon with Steamed Broccoli and Rice
Thursday: Roasted Beet and Chevre Salad with Dijon Vinaigrette
Friday: Skinny Chicken Cordon Bleu with Crash Hot Potatoes and Salad
Saturday: Unknown... meeting with my online class and don't know what time
Sunday: Thai Green Curry Chicken and Vegetables with Rice
 
SlowCooker Sunday: Beef cubes and gravy over noodles, carrots, raspberries and cream

Meatless Monday: Curried chickpeas with tomato and okra over barley, baked pears

Tuesday: leftover beef cubes with peas over biscuits, blueberries and lemon yogurt

Wednesday: baked flounder with the leftover chickpeas/tomato/okra, pears mixed with ricotta cheese, vanilla cream and cinnamon

Thursday: Meatballs and zucchini in tomato sauce over polenta, vanilla ricotta and graham crackers

Friday: Salmon poached in orange juice, leftover barley or brown rice, green beans, raspberries and blueberries

Saturday: Leftover Meatballs/Zucchini in tomato sauce if there's any left. Otherwise, I'll eat out...because I can.
 
Frozen veggies with all meals, unless otherwise stated:

Last night: Steak and mashed potatoes with salad
Tonight: Homemade pizza and salad
Tues: Bean and Rice Burritos (from the freezer), veggie tray
Wed: Chicken breasts, noodles, broccoli and cheese
Thurs: Homemade calzones (from the freezer) with salad
Fri: Shepherd's pie
Sat: leftovers
Sun: Butter chicken in the crockpot with salad
Mon: Homemade Pork Tortieres, mac and cheese, green beans
Tues: Homemade pizza (from the freezer)
Wed: Bean and Rice Burritos (from the freezer)
Thurs: Hamburber helper

I shop every Thursday. This coming Thursday is going to be a light week. I need to get the basic staples that I get each week (milk, eggs, butter, fruit and veg) and only a handful of other items. I'm really getting to the bottom of my freezer, and so far...it looks like nothing is going to be thrown out!! :cool1::cool1::cool1:
 

Okay--this is a challenge for me now. We're leaving Alaska and moving to Oregon on June 1st, and I would like to eat as much of the food we have as possible. So here's this week's plan to use up food in the freezer:

Monday: Halibut gratin, rice pilaf, green beans
Tuesday: Turkey and veggie noodle soup w/ toast
Wednesday: Crockpot country ribs, mashed potatoes, green beans
Thursday: crockpot pot roast, left over mashed potatoes, veggies
Friday: Homemade pepperoni pizza
Saturday: leftovers all day
Sunday: homemade rolls, salad, halibut chowder
 
I have been sick since Saturday with strep so dinners have been fend for yourself. I did make a big batch of vegetable beef soup Friday so at least we had that.

Life is crazy busy with three kids and I find it xo hard to find time to post. I keep trying and failing :mad:
I hope everyone is enjoying eating at home!

With two dds in softball meal planning is key. I have even started to make dinner at breakfast that way its cooked and ready.

This weeks plans
Monday was pork loin with roasted potatoes and corn on the cob i even made a key lime pie for my hubby

Tuesday spaghetti and left over sauce i am roasting a garlic bulb right now to add to butter to make a nice garlic butter for bread with it and a salad

Wednesday dr pepper spicy pulled pork on tortilla shells with toppings

Thursday Italian chicken with rice and veggie.

Thats what i have so far.

Hugs charming! I finally found out what was wrong with my oldest. We had so many tests and went to see two specialists only to find out she has MONO! I was relived but mad at the same time! She's been ill for two months so I am hoping it will run it's course soon! We still have to go back to the doctor in a few months if her lymph nodes don't go down.

I have school tonight but made meatloaf muffins so my hubby can just stick them in the microwave for he and the kids.
 
tinkmom2, so glad they finally figured out what is wrong. I can not believe it has been mono this whole time. Here's to a speedy recovery.
 
What a relief it's nothing more serious than mono. I mean, of course how ridiculous that she had to go through so much to get the diagnosis but considering what it MIGHT have been...this is a much nicer scenario. Glad you now know what you're dealing with and here's hoping the proper treatment puts an end to the swelling and discomfort!
 
Wow, mono! I had that in college. I believe I caught it from a water fountain in the library. I never drank from a water fountain again. I was so sick I went to the hospital for three days! I was dehydrated and my throat was swelling shut when I got there. Bless your little girl!

So my strep is gone but I now have a sinus infection with bronchitis. I hate being sick. Luckily I keep a well stocked fridge/freezer/pantry so it was easy for my mom to pull together some easy meals.

Saturday - Bistro Steak with Red Wine Sauce, wild rice, salad

Monday - Hamburgers, fruit salad, french fries
Tuesday - Pasta, meatballs, garlic bread, salad
Wednesday - track meet so ate out
Thursday - Walking Tacos
