Hi guys! I love this thread, I wish I could make some of the dishes you make, lol....but, my husband had a heart attack and is a diabetic, I found out in November that I have a heart condition called SVT and I have high blood pressure, and need to lose weight! Ugh.... If you guys have any dish ideas that is low fat, low sodium, and no processed ingredients, and pretty much nothing white ie... Bread, sugar, flour..... Help!
 
OceanAnnie - that sounds good! I have done the same thing with buffalo sauce and bbq sauce, I'll have to try this way now.
 
Last night I made Egg Drop Soup (super Easy), Fried Rice (using brown rice) and Kung Pao Chicken.... It turned out great and we both were getting our take out fix even though it was home cooked!


Tonight is steak, Pot, and Salad Wedge.

Joining this thread! We are trying to do better eating at home and I am working on couponing as well.

Sunday: spaghetti

Monday: chicken pot pie, salad

Yesterday (Tuesday): ate out but with a gift card

Today (Wednesday): spinach and ham quiche (in the oven right now!), grapes

Thursday: taco soup in the crock pot - with tortilla chips and fruit

Friday: going to a dinner party

Saturday: meeting a friend for drinks... so may try to eat leftovers at home first.
 
OceanAnnie - that sounds good! I have done the same thing with buffalo sauce and bbq sauce, I'll have to try this way now.

Make sure you use the "creamy" balsamic vinaigrette. It coats the chicken really well! Let me know how you like it! :)
 
Doing well with useing up what I have in the freezer:banana: Going to make shepherds pie tonight.I am going to try and be really good this weekend......my husband is an RN and works 12hr shifts and has to work every other weekend, this weekend is his weekend on. I am not going to cave to the pizza delivery or dollar menu:thumbsup2 I would love an crockpot recipes that you have tried and love:flower3:

Egg Drop Soup

Ingredients

4 cups chicken broth, divided
1/8 teaspoon ground ginger
2 tablespoons chopped fresh chives
1/4 teaspoon salt
1 1/2 tablespoons cornstarch
2 eggs
1 egg yolk

Directions

Reserve 3/4 cup of chicken broth, and pour the rest into a large saucepan. Stir the salt, ginger and chives into the saucepan, and bring to a rolling boil. In a cup or small bowl, stir together the remaining broth and cornstarch until smooth. Set aside.
In a small bowl, whisk the eggs and egg yolk together using a fork. Drizzle egg a little at a time from the fork into the boiling broth mixture. Egg should cook immediately. Once the eggs have been dropped, stir in the cornstarch mixture gradually until the soup is the desired consistency.

Good luck and I have a pork loin recipe for crockpot, I will look for it. BUT i don't know if you have that in your freezer..:rolleyes1

I am doing the same thing with using what I have - I can now see the back of the freezer! :banana: But I was soooo tempted to get pizza last night. I waiting for DH to say the word but nope...I cooked.


I am not a big fan of stews & roasts so I don't use my crock pot too much but I do make this BBQ chicken every few weeks. I love the zing the red pepper flakes adds. Although my chicken never looks like that - it's so tender I end up pulling it.

That sounds delicious! How do you make the country cabbage bowls?


Tonight we're having company as my sister-in-law brings her crush over to impress him with a homecooked meal (:lmao: not HER cooking or she'd bring him by her place). We're going to have the following:

Ham and Chicken Pot Pie (great way to use up leftovers ;) )
Hidden Vegetable Tomato Soup (pretty much all the veggies I had on hand, simmered down with homemade tomato soup and pureed so the kids eat their spinach without realizing it and kicking up a fuss)
Green Beans
Cherry Tomatoes
Salad
Homemade Treacle Pudding (aside from the treacle, it's all pantry ingredients and cooks up in 8 minutes in the microwave, but it's so homey/old fashioned everyone seems to go nuts over it!)
 
We are most likely going to have the salmon, roasted asparagus, and a salad. Especially the salad since i just pulled some lettuce and radishes from the garden this morning. Now what to do with the handful of green beans I also got?

My cucumbers and squash are growing and flowering as well. Had to go out and make sure they were following their fences so they don't take up the whole bed. Tomatoes and peppers are also looking really nice. Have mini fruits on each and the tomatoes had to be tied to the stakes again. Looks like this year is going pretty well so far!
 
That sounds delicious! How do you make the country cabbage bowls?

They are just an easier way to make cabbage rolls, basically. Take outer leaves of the head of cabbage and steam them in micro til tender. You make your "stuffing" about the same as cabbage rolls: ground meat (turkey, sausage, beef, etc. I am using ground venison), rice, chopped bell pepper, italian stewed tomatoes, tomato sauce, seasonings. You cook all that in a skillet. Then you also add the rest of the cabbage chopped up and cook it till the cabbage is tender. Serve the stuffing in the steamed cabbage bowls. It's really yummy and pretty low cal too.

Mon - Sloppy Joes, Roasted Broccoli, Blueberries
Tues - Orzo w/ Tomato Sausage Sauce and Strawberries
Wed - Garlic Pepper Pork, Roasted Asparagus, Rolls
Thurs - Cheeseburgers, Salad, Blueberries
Fri - Homemade Pizza, Apple Slices
Sat - Out

We were going to have macaroni and cheese tonight until I went to the grocery. I was there to pick up some stuff for my work lunches when I noticed they had nice organic sirloin steaks on markdown for 50% off. They were beautiful looking, so I also picked up some fresh corn on the cob and salad mix.
 
Saturday - Burger and hot dogs on the grill, corn on the cob, and pasta salad
Sunday - Panini sandwiches with veggie kabobs.
Monday - Grilled chicken over strawberry/spinach salad.
Tuesday - Falafel on flat bread with cucumber sauce & pineapple slices
Wednesday - Chicken salad and raw veggies with dip
Thursday - Mickey Waffles topped with Nutella, blueberries and sliced strawberries. (Who says you can't have dessert for dinner once in a while?? :rolleyes1)
Friday - My birthday - so we are going out for dinner! ;)
 
Tonight was spaghetti pie.

Tomorrow is a bear of a day and I will not feel like cooking in the least. So unless dh is up to it when we are both done we will throw together a salad and order a pizza with the coupon we have.
If we can resist ordering out I can use that part of the budget out for breakfast this weekend or just not spend it at all and in to the trip fund it would go.
Maybe I'll try to put something together in the morning and not waste the money.
 
We ended up doing pancakes with chicken sausage. Yum!

I really need to work on my menu for the next week or so. My mom is going out of town tomorrow through Wednesday and will be bringing my Grandmother back with her. So, it's cooking for 3 with a few more restrictions (my grandma isn't as much of an adventurous eater as my mom and I are).
