The tentative menu plan for the week is

Tonight- Pork chops with rice pilaf and zucchini
Tuesday- Ginger peanut chicken stir fry with rice
Wednesday- Waffles with sausage and fruit salad
Thursday- Spaghetti and meatballs with garlic bread
Friday- Chicken salad on croissants with chips and fruit
Saturday- Not sure yet. I work until 6:30 so I need something quick and easy
 
Last night was takeout chinese

Monday - Roast pork, baked potatoes, summer squash, tossed salad
Tuesday - Sweet Italian sausage sub sandwiches with pepper & onions, potatoe salad, tossed salad
Wednesday - Oven fried chicken, rice, fresh green beans
Thursday - Grilled salmon, broccoli and rice
Friday - Burgers, dogs, pasta salad, tossed salad
Saturday - Probably take out pizza as I'll be getting ready for DS' graduation/Father's Day party the next day
 
Mon - dinner out for DD11's birthday (have leftovers for all of us that we'll use for lunches)
Tues - chicken cutlets, broccoli and brown rice
Wed - leftover meatballs and pasta, watermelon
Thurs - spaghetti pie
Fri - pepperoni rolls
Sat - leftover spaghetti pie
Sun - chicken marsala
 
Last night was the Veggie Lasagna and it was amazing! I used zucchini, eggplant, red bell pepper, mushrooms, and spinach. So good!

Tonight is the Jalapeno Popper Baked Stuffed Chicken and Southwestern Black Bean Salad.
 

Not sure if this been suggested yet: The recipes I use are from kraftfoods.com and pillsbury.com. I like pillsbury the most because it allows you to look up recipes just for 2 people and use a main ingredient finder so if you want something with chicken, type in chicken in the finder and it will bring up hundreds of recipes. Plus you can put your own recipes on there as well to share to everyone.
 
I want to get back on track with this thread!! Both our daughters have had surgery in the last two weeks, and the weeks before that were lots of traveling and dinners out. Dd2 had her wisdom teeth out today, so everything this week has to have at least one soft element.

Monday- shredded barbecued chicken on rolls, sweet potato fries, apple slices
Tuesday- salmon, mashed potatoes, zuchini (dd had potatoes and soup!)
Wednesday-Blueberry pancakes, bacon (fresh berries picked Monday! Yum!)
Thursday-Chicken and dumplings
Friday-Black bean quesadillas, applesauce (leftover soup for dd)
Saturday- Dh and I are hoping to go out for our anniversary!
Sunday- Steaks and sweet corn on cob on grill, baked potatoes (hoping dd can eat this for Father's Day!)
 
My husband's favorite antipasto: roasted stewed tomatoes (comes out like juicy sundried tomatoes) on crostini with tomato soup and salad with chicken. Basically a leftovers night.
 
Making a Shrimp Red Curry with rice for tonight. I am going to be adding a bunch of fresh vegetables into it as well to bulk it up for few calories.
 
I had to share this with you guys because you have all been SO supportive of me. I have now officially lost 30 lbs since December! I still have 40-50 lbs to go, but it is so nice to see such a big number gone! So, thank you all for your support, kind words, recipes, and friendship. :flower3:

I'm making a sauteed squash/zucchini/onion medley with black beans and then sweet potatoes on the side.
 
tonight we had grilled chicken and pineapple quesadillas from pioneerwoman.com....soooo good!!

then I have planned:

-taco soup (already made and frozen in freezer) with cheddar cheese, sour cream, tortilla chips

-homemade chicken noodle soup (already made and frozen in freezer) with grilled cheese

-pasta with tomato-blue cheese sauce/kids can have raviolis

-grilled chicken with lemon basil pasta

-cheese burgers with pasta salad

-pot roast with potatoes and carrots

-creamy thai sweet potatoes and lentils

also going to make mexican bean salad, not sure it will be an actual meal, but will make it to eat as a side?

Had chicken salad(used left over costco chicken) last night.Tonight is meatball heroes and salad.Will be eatting out on friday because we will be on the road going to NJ for the weekend(Red Robin french fries:love:) Dh is making ribs for Saturday for the bbq, the men are competing to see whos are the best.By the way just have to tell you I can see the bottom of my freezer:banana: Will have to go grocery shopping on Monday.
