I echo others' sentiments, everyone has their own opinion on what to skip. I don't mind Stitch but I agree it can be skipped. Carousel of Progress is a nostalgia type ride for people who either used to ride it years ago or lived in a previous generation featured on the ride. It's one of my Dad's favorites.
I honesty don't think I've ever done the Swiss Family treehouse in my 15+ trips to Disney and I don't think I'm missing out. The carousel is like any other and can be skipped - unless you are on the hunt for Cinderella's favorite horse.
the Tiki room is "meh" too. At Epcot I'm not a fan of Ellen's Energy Adventure or Captain EO. I love Figment though! (Mostly for sentimental reasons and the original ride was much better than the one currently running.)
I would try them at least once if you never did though...
