Chicken (Breast) Recipes!!!!! *PLEASE*

Can everyone please post your favorite, easy, yummy chicken recipes???
We just bought alot of chicken and have it in our cheast frezzer. So I am looking for new ways to cook, whole chikens and checkin breasts!!!!

Do a search and you should find there have been several threads with lots of great recipes recently.
 
Lemon chicken:
Whole chicken
lemon
3-4 cloves garlic
EVOO
sea salt & white pepper
Season outside and place garlic and quartered lemon inside chicken
Drizzle w/EVOO
Cook in 350 degree oven for 50 mins or until until juices clear and thermometer reads done

Chicken pie:
Boil chicken parts and cube cooked chicken
can of Veg all (peas,carrots and potatoes)
can cream chicken soup
can cresent rolls
mix all except cresnt rolls in a casserole dish
cook 20 mins at 350
top with cresent rolls and cook additional 12 mins at 400

Chicken salad:
cooked diced chicken
mayo
tarragon
celery
red grapes
combine and serve on fresh bread or in an endive salad

Chicken sandwiches:
BBQ sauce,baked chicken
Pull chicken off bones w/fingers and cover w/warm BBQ sauce
Serve on a bun w/BBQ baked beans,corn on te cob and corn bread

Pollo y brocoli:
Penne (cooked al dente)
Broccoli (cooked)
chicken sauteed in olive oil and garlic and 1/4 c wine or 1/8 c vermouth
2 cups chicken broth
lemon
garlic
Mix all together

Nanas chicken:
remove bones from white meat chicken
cut into strips
dip into beaten egg or egg beaters
then dip into coating (1/2 bag crushed corn flakes,1/4 tsp white pepper,1/8 tsp tobasco,1/2 c parmesan cheese mixed-this works best kept in a large zip lok bag)
Bake on a cookie sheet 20 mins each side at 375 until brown and crunchy
serve w/orange marmalade/honey mustard/BBQ sauce /ranch dsg dips

Chicken florentine
place 1 cup minute rice and 1 and 1/2 c water (or can cream mushroom soup) in bottom 9x 13 pan
cover w/bag of baby spinach
drop few teaspoons dijon mustard on spinach
place chicken breast (bones removed) on top
bake covered in foil 350 x 20 mins then remove foil and bake additional 20 mins
 
Chicken with Mushroom Sauce (the easy way)

Ingredients
Chicken breasts (preferably boneless,skinless. If not,you'll have to debone and deskin them)
Cream of mushroom soup
1 lbs mushrooms, use your favorite kind (I like plain ol white buttons,m'self)
Spray butter or PAM
1 lbs sprial pasta (cooked, drained and cooled)

Salt and pepper chicken breasts to taste, then grill until no longer pink.
While you're doing that, wash and slice the mushrooms. Use the spray butter or PAM to sautee them. In a seperate pan, heat the soup through and add the mushrooms once they are good and sauteed. Mix with the pasta till it is combined well. Dish up the pasta and top with a chicken breast.

I like to cut a pocket in a chicken breast(boneless) stuff it with stuffing, dip it in egg and Italian breadcrumbs and bake.
Serve with mashed potatoes, gravy and veg.
It's so good!

Campbells makes a Supper Bakes--the Cheesy Chicken one is very good.

I also make chiclen parm, cut chicken into cutlets, dip in egg and Italian breadcrumbs, fry in olive oil(actually if you stop right there that is one of our favorites as well, chicken cutlets..MUST use olive oil to get it to taste so good though)...put sauce in a baking dish, lay down the cutlets, top with sauce and mozzarella, serve with angel hair.

With the bone in breasts, my family loves chicken oreganata:

chicken breasts
cover with a little olive oil (I usually use a papertowel, but my mom would dip them)
sprinkle with garlic powder and oregano
dip in seasoned bread crumbs
bake for 1 hour at 350 degrees.

something I'll be doing with cutlets this week is Chicken Paprikash

1 stick of butter
4 tbsp sweet paprika
4 onions, slivered
salt and pepper to taste
4 chicken breasts.
8 oz sour cream
Egg noodles

Melt butter in sauce pan. Stir in spices, then add onions and chicken. cook covered over medium heat until chicken is opaque then mix in sour cream and serve over egg noodles.

We just made a stir fry tonight...cut up a few boneless chicken breasts and cook them with teriyaki marinade, after it's cooked add a bag of frozen stir fry veggies...let veggies cook and them simmer for a few minutes...I eat it alone, DH puts it over rice or couscous...
 
Super easy - dip chicken breasts in ranch dressing, roll in Italian bread crumbs, bake until done.
 
Quick Chicken Cacciatore

Saute garlic, onions, peppers (red and green), and fresh mushrooms in olive oil and a pat of butter. Cut up chicken breast and season with salt and pepper. Add one can of italien style stewed tomatoes. Add 1/2 cup red wine, 1/2 can chicken broth. Cook for about 15 minutes more. Garnish with fresh mozzarella cheese and parmesan cheese.

Service with white rice cooked in vegatable stock for flavor. YUMMY!
 
I just made the chicken tetrazzini from Family Fun a month or so ago. It's good. You saute sliced chicken with mushrooms and scallions, salt pepper and paprika. Add some thawed peas, add 3 tbls flour, add 1 1/2 cups half and half and a teaspoon of lemon juice. Then add a quarter cup of parmesan and serve over noodles.
 
super easy my own salsa chicken

I make these on the grill even in winter
use foil or foil sheets to make packets one for each chicken breast
I spray a little Pam on the foil.
I salt, pepper, and garlic powder each side of the chicken breast and place the chicken on the foil. I drizzle a little olive oil over the breast and spoon 2-3 tablespoons of your favorite salsa over chicken. Fold foil so it is completely sealed. Cook ten minuties on low/med heat on grill flip for another ten minutes and dinner is served. Brown rice or yellow rice goes nice with this.
 
La Jolla Chicken (Chicken with Spinach and Sun Dried Tomatoes)
6 chicken breasts..This
1 tbsp olive oil
3 cloves garlic,minced
1 package spinach
1 cup chicken broth
1/2 Cup sun dried tomatoes
1/2 cup white wine
Parmesan cheese
1) Grill chicken in a large skillet with olive oil and garlic until it gets nice and brown on both sides
2) When the chicken is about half done add remaining ingredients and simmer for about 15 minutes..The wine can be replaced with chicken broth if need be
3) Serve chicken with spinach/sun dried tomatoes on top..Throw some parmesan cheese on top

Tips often make this with chicken tenders..Thinner chicken is better
I make an extra pan of spinach with sun dried tomatoes and wine.. Everyone likes it too much..I serve the extra spinach over orzo
