Can you freeze sauerkraut?

My local grocery store has had pork dirt cheap recently. In the past couple weeks I have made shredded bbq pork, grilled boneless pork loin chops, and carnitas. Today, I filled up the crockpot with pork and sauerkraut only to find out that I will be the only one home for dinner tonight :scared1: Tomorrow is Parent Night at band camp so we'll be having dinner with DS. We'll never finish this much pork and sauerkraut in the next couple of days! Can I freeze it? I usually freeze crockpot leftovers like black beans and rice or soups but I have never tried to freeze sauerkraut before!

Any other ideas? Thanks for your help!
 
My husband and his family do. They make a TON of it in the fall and then freeze it.
 
Not OP, but I have a couple decent sauerkraut recipes. I am only beginning to like sauerkraut. I have the following two crockpot recipes. The soup I love. The other one, I've made, it was good, but pork roast is not my favorite and well...it was still pork roast. Hope this helps.

Crockpot Potato Sauerkraut soup (modified from the Fix it and Forget it cookbook)

Combine all ingredients in crockpot. Cook Low 8 to 10 hours.

49 oz. can chicken broth
10 3/4 oz. can cream of mushroom soup
16 oz. can sauerkraut, rinsed and drained
1 lb. turkey sausage, cut up
1 medium potato, cubed
2 carrots, peeled and sliced
1 can mushrooms, pieces and stems with liquid
2 Tbsp. vinegar (apple cider)
1 1/2 tsp pepper

Sauerkraut stuffed pork (crockpot)

Thanks! I guess I don't have much to lose by trying it. I'm going to end up throwing half of this out otherwise. My recipe isn't much of a recipe! I just brown a pork roast, put in in the crock pot with thinly sliced onions on top and then top it with canned sauerkraut! Today, I have canned potatoes in it also. Sometimes I use fresh potatoes and sometimes none at all if I am making mashed potatoes to go with it.

My mom would do it all the time - she'd make a HUGE pot of pork ribs and kraut ... She and Dad would have it for dinner, then she'd freeze in smaller containers to pull out and eat later. It was just the two of them for so long .. but she always laughed how she couldn't get the hang of cooking for two .. so her freezer stayed FULL ...
 
This is what I am making for dinner tonight, too!

I freeze the leftovers also, although in my house they usually are't leftovers LOL

My recipe is just pork roast into crockpot with bagged(refrigerated) sauerkraut with garlic, onion and black pepper.
 
i'm sure you can freeze it. i always wondered why anyone would eat it...lol
 
I guess, but why would you want to? LOL

My mom loves it. My dad and I used to hold our noses. Yuck.
