Good evening everyone! I know a lot of us struggle with sweets, so I wanted to share a great simple recipe I found that is portioned controlled and only about 100-150 calories. Its called 3-2-1 Cake, some of you may of heard of it, but I was just told about it a week ago.
3-2-1 Cake
Ingrediants
1 Box Angel Food cake mix
1 Box Cake mix ANY flavor
2 Tbsp Water
Directions
In a ziploc bag, combine the two cake mixes together and mix well. For each individual cake serving, take out 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. Microwave on high for 1 minute, and you have your own instant individual little cake! Keep remaining cake mixture stored in the ziploc bag and use whenever you feel like a treat! You can top each cake with a dollop of fat free whipped topping and/or some fresh fruit.
**I store my mix in a tupperware container with the directions taped to the outside, for my "forgetful" DH
Interesting. Got any calorie count or Points for this??? ETA: DUH.... just re-read your post. Guess I would presume the higher count, just to be sure. I'm sure some wonderful math geek could do the figuring and figure out how many calories in each box of mix, add those numbers together, figure out how many Tb. total, divide by that number, etc. But it won't be me!

I believe that I am prepared to reach my goal.... in fact, I believe I've been "in orbit" for a few years now, as I "launched" this journey in 2008. I need to tweak some of my habits, as a few things have been let to slide lately, but I haven't totally fallen out of orbit and crashed to earth!
I took the quiz and this time, I am prepared! I have my support system in place and am losing weight for myself. The latter is key. I am no longer trying to lose weight because my mother keeps nagging me. I'm doing this for myself and my health.

This is a great QOTD! Here are some HH suggestions for today. Are your measuring cups and spoons ready? Buffy had a great idea! Organize the drawer you found them in-it's a good head start for an upcoming mini-challenge. Did you find a good-sized water bottle or glass? Lots of us talk about how important it is to drink water. I keep a water with me at all times now. It's all about being prepared!
Love this! I bought several sets of measuring spoons a few years ago because I was constantly having to stop and wash a Tablespoon measure (salad dressing and peanut butter mostly). Then I got tired of having SO MANY measuring spoons in the drawer.... so I got rid of a bunch of the smaller ones and just kept the Tablespoons. I have two or three complete sets, plus 2 or 3 extra Tablespoons. I also have 3 sets of measuring cups. It bothers me that they don't all match, but I'm too cheap to dump them all and start fresh. Maybe someday if I find a good sale or a set I really love.
This is a tempting month. My husband is a HUGE basketball fan and our team - the Celtics are in the playoffs. I'm not sure how much you all know about New England and sports but we are crazy! Extremely loyal fans, so every game is a party, with junk food. So hard to say no, but I'm trying hard to change my thinking that you don't need to celebrate with food, but it's gonna be a tough lesson to learn!

It is incredibly easy to underestimate the number of calories that you consume and overestimate the number of calories you burn when exercising. It is a real eye opener when you first start tracking.

For those of you who know me from previous challenges, you probably remember that I am VERY faithful to my food journal. I've got 4+ years of notebooks to prove it! I think it has been a HUGE KEY to my success this time around. Use whatever excuse you want to tell me why you don't NEED to keep a journal or why it is too much bother, etc, etc, but I will stand strong in my belief that you will have more success, longer-term success if you keep a food journal/food diary. Combine a HONEST food journal with accurate food measuring/weighing, and there is NO REASON why you shouldn't have success.
Whew finally made it through all the chit-chat
I have made a PLAN for this challenge
1. Lose 12 lbs
2. Exercise at least 20 minutes 5xweek
3. Eat 5 portions of fruit and veg daily
I took the quiz and am prepared for sucess
Dreading today as it is cemetary Sunday here and I dont normally go but it's the 1st since my dad died and my mum needs the support! I find it hard without my dad but it's so much harder for her so I will suck it up, fight the tears and go! Wish me luck. Sorry I know that this isnt weight related other than I am typing this so that I'm not eating junk (thanks Pamela for the advice last challenge)

First of all....

for your difficult day. Is cemetary Sunday like our Memorial Day? Is it for remembering loved ones and visiting the cemetary and bringing flowers and the like?? Good of you to be there for your Mom when she really needs it. Supporting OTHERS during their difficult times makes us stronger people in the long run.
Second... you're welcome. Funny you should mention this. DD and I were just talking yesterday or the day before and reflecting about times when we have made better/worse food choices and how we feel about those choices now, in hindsight. When DH had his accident a few years ago it would have been so easy for me to give into a big CALORIC pity party in the ICU waiting room. I was exhausted and stressed and worried and there was a bakery one floor down! Do you know how easy it would have been to just sit in that waiting room and cry and eat??? But I didn't. And I don't have a moment of regret. It wouldn't have helped DH get better any faster..... and in the long run it wouldn't have helped me deal with the stress any better. I would have ended up piling food guilt on TOP of the other stress. So I came on here to visit my friends/support system whenever I could, I took walks around the medical center, kept family members informed of the details, visited with DH when I could, etc. Having this group to talk with and "visit" with really helped. Can't eat and type at the same time, right??

Okay.... did some reading and a bit of catching up. Lots of new friends to meet and lots of "old" friends to say hi to!!! Looking forward to the days coming up when I can stay caught up here and not just do these "drive-by" postings!
We are off to a GREAT start with CC's HH, Lisa's QOTD, and Buffy's quotes! I think we are setting ourselves up for a GREAT summer challenge. I'm excited to get back to my fighting weight and fit in my shorts from last May (just a few pounds away!).
Need to wake DD. Surprised she is still sleeping, but not sure how late she stayed up last night. We need to leave here about 11 am again. Rain seems to be holding off for now. TTYL.....................P
