Since they're so behind schedule with RoL, which should have been ready earlier this year, and Pandora opening some time next year, I don't think anyone has any idea what will be happening in AK 11 months from now.

Ha! That makes a big difference...almost! RoL is rumored to be opening this month. There's the tree awakening, but I think that's about it that's official right now.

not a special activity, but have seen posts that riding Expedition Everest is amazing after dark. We have FP+ for 5PM (latest we could get), and plan to ride closer to 6PM when it should be dark.

They do have different performers around the park in the evening. They also have the Discovery Island Carnivale. We love just being in the park in the evenings. Riding EE at night is a must. Don't forget to catch the Harambe Village Acrobats also. They start doing shows in the afternoon. You could always save that to see for the early evening also.
