Your TACO Salad recipe?

2 potlucks tomorrow, and I am tired of my standard taco salad (Doritos, cheese, veggies, Catalina, beef).

Anything fun or new spin on taco salad you do?

We do the Dorito one too but we use ranch, beef, lettuce, tomatoes, pickled jalapenos and black olives.

What about a taco PASTA salad. I've seen some recipes for that.
 
We are doing the potluck due to various "new" healthy eating that people are all the sudden embracing. One had weight loss surgery, one has cut out all white sugars (pasta, included), one eats no gluten, one is just picky.

Gets challenging to hold a potluck, to be honest. And frustrates me so much. I would rather we go out to eat and all pick what we can/want to eat. But, whatever, I guess.
 
I do 2 packages of cream cheese, 1 large jar of salsa, mix that together, top with shredded lettuce and shredded cheddar cheese.

Does it HAVE to be taco salad? I make a really delicious Greek-ish salad that is healthy.
3 cans Garbanzo beans(drained and thoroughly rinsed)
diced red onion, colored bell peppers(I buy whatever is on sale)
halved cherry tomatoes
Feta(which I hate so I leave it out for MYSELF, but add it for parties)
lemon juice/GOOD olive oil/salt/pepper

mine is similar to the doritos one but uses-ground beef seasoned w/salt/pepper/garlic powder, iceberg lettuce, tomatoes, red onion, cheese, chopped up avocado.

dressing is made from a combo of sour cream, mayo and green taco sauce (we prefer the mild)-sounds strange but people really seem to like it.


p.s. I don't mix in the doritos b/c I don't like them to get soggy-people put their own (prebroken) into the bowl, top w/salad and mix.

can black beans
can Ro-tel tomatoes or petite-diced tomatoes with jalapenos
3/4 package frozen corn
1/4 to 1/2 chopped red onion
juice from 1/2 lime
1/4 teaspoon cumin
cilantro to taste

serve with corn chips.
 
It doesn’t HAVE to be a taco salad, but husband has a potluck tomorrow, too…and they want taco salad. I would rather we do a huge batch of one thing and split it between us than make 2 separate things….cheaper that way, too.

The greek one sounds really good…but I know it wouldn’t get eaten by my work crew. I would down it, though…
 
While mine is almost identical to yours, I use Italian dressing.

But, I HATE cold salads. So, the spin on my taco salad is the meat is always taken in a separate container and just before we eat, I warm up the meat, then add it to the lettuce, cheese, Doritos and veggies. Pour on the Italian dressing, then mix. Over the years, I have always get thanked for bringing something warm/hot, but not heavy to eat.

I'm the opposite. Warm/hot meat on crisp veggies is icky to me.

I did this for our annual cookout last year and it was a huge hit.

This is the BEST STUFF EVER!! I could eat it all day long...with LOTS of cilantro :)
 
1lb ground beef
Pkg taco seasoning mix
Head of iceberg lettuce
2 med tomatoes, seeded and chopped
1 jar of med chunky salsa
2 cups shredded Mexican blend cheese
Bag of Tostitos

Make taco meat according to package directions. Chop lettuce and tomatoes together. Add cheese. If serving immediately mix in cooked beef and salsa. If bringing to a function, wait until right before service to mix in meat and salsa or it gets too soggy. Serve with Tostitos on the side. Can work either warm or cold.
 
Maybe doing a bbq chicken salad, it's one of our faves (no onions for us)

But it's your basic salad, lettuce tomato Avacado, shredded cheese, can each of rinsed black beans and corn, grilled chicken , and an equal mix of bbq sauce and ranch drizzled on top. Top with tortilla strips
 
I didn't realize there were different ways to make taco salad...never heard of the one with cream cheese but that sounds more like a dip to me. LOL

I apologize in advance because my comma key stopped working so I'll use a period instead of a comma. :) In a skillet I brown ground beef/turkey/chicken (whichever) with homemade taco seasoning and then add black beans. corn (if I have any). cilantro. small amount of onion. I also pour in a small amount of pico de gallo or salsa to add moisture and flavor. If I don't have pico de gallo or salsa I'll add canned Rotel tomatoes with green chiles. I let that simmer together to heat through. Aside from lettuce I grate cheddar and pepperjack cheese and dice some tomatoes. For dressing I usually mix ranch dressing with salsa. We rarely have tortilla chips or anything crunchy like that but if we do I'll crumble some on top of our salads right before serving. We like the meat mixture to be hot...I wouldn't eat it cold.

Tortilla chips (not doritos) for scooping

Honestly, mixed up dorito stuff or cold taco meat doesn't sound appealing. It might be great, and I would try it if it were served, but I don't think I would make it myself.
If I were going to bring this to party, the meat would be on the side and heated when we got there. It would never be mixed, even when hot. People would add it when they were going to eat it. it

I didn't want to like it... Especially because I really don't even care for Doritos but I did! (No one specified what flavor they use but I use Cool Ranch)
