Your TACO Salad recipe?

I have 2 kinds, one with beef and one with fajita chicken.

Southwest Chicken Salad
8 cups of Romaine Lettuce - washed and chopped
1/2 of a purple onion - diced
1 can of Black beans - rinsed
1 cup of frozen corn - thawed (roasted is even better)
1 package tortilla strips
2 avocados - diced in to chunks
1 cup ranch dressing + 1 package low sodium taco seasoning
4 fajita chicken breasts (or smoked chicken breast) - diced into chunks (warm or cold)
2 cups shredded cheddar or Mexican cheese

Toss and enjoy, add dressing to taste.


Traditional Taco Salad
8 cups of Romaine Lettuce - washed and chopped
1/2 of a purple onion - diced
1 can kidney beans, rinsed
2 cups of little fritos
2 avocados - diced in to chunks
1 cup Catalina Salad Dressing
2 cups shredded cheddar or Mexican cheese
2 lbs ground beef, cooked and mixed with 1 package of Taco Seasoning (warm)

Toss and enjoy, add dressing to taste.

Honestly, mixed up dorito stuff or cold taco meat doesn't sound appealing. It might be great, and I would try it if it were served, but I don't think I would make it myself.
If I were going to bring this to party, the meat would be on the side and heated when we got there. It would never be mixed, even when hot. People would add it when they were going to eat it. it

I didn't want to like it... Especially because I really don't even care for Doritos but I did! (No one specified what flavor they use but I use Cool Ranch)

I agree - it sounds weird to have the doritos and the cold meat, but it is so, so, so good. My BFF growing up was the child of a very hard working, very little money to show for it, single man. This was a salad he made a HUGE quantity of on Sundays and they ate through the week. It's very cheap to make. I came to love it because I was always eating it over there. It makes an amazing breakfast, too, ha!

Thank you, all, for your recipes! Got to the store last night and husband looks at me and says "I am just going to grab a bread bowl and spinach dip instead". Um...so, thanks? The salad I had originally intended to make (a cauliflower/bacon thing) - my recipe was on my computer..at work.

So, being instantly jealous of his laziness, I went with 2 bags of the pre-made salad from Taylor Farms. It's a Southwest salad with cabbage, cilantro, jalapeno, tortilla strips, and a yummy lime/cilantro/ranch dressing. I browned up some hamburger (forgot to get the chicken) and sliced up tomatoes. I will mix it all before we eat...and cross my fingers that it passes muster :) I just now realized I left the corn at home. Damn. Oh well..
