All right...I bought a Costco rotisserie chicken yesterday with the thought of having chicken and dumplings for supper. I also thought I had chicken broth at home:rolleyes1 So help me decide what to make for supper with chicken and what I have at home as I am not going out in this nasty cold weather!!

I have stuffing, rice, noodles, cream of mushroom soup, veggies....just no chicken broth!:lmao:
 
Grab some pasta. Cook. Pour into oven-proof dish.

Shred chicken. Chuck in to pasta.

Add mushroom soup. Stir.

Bake for 15 minutes.

Do you have boullion? If so you can just use that instead of your chicken broth.

I was thinking of doing a cheesy chicken with rice....but while I usually do very well coming up with recipes on my own (or by the seat of my pants) I just can't think how I would make one. Do you have an ingredient list you use??
 
I actually use the rotisserie chicken for the chicken and dumpling broth. Remove all the meat and boil up the rest (including the drippings in the container). It makes a delicious broth, way better than canned or boxed broth.
 
My favorite chicken recipe is "breaded" in falafel or chickpea flour!!:worship:

Coat the chicken in egg yolk & then coat both sides in falafel or chickpea flour & fry in olive oil.

It's actually sort of healthy as well!
