White squash - any suggestions?

Somehow ended up with a garden full of these things;

We didn't plant them - it was a volunteer crop and the only thing I can think is the seeds ended up in my compost bin and into the garden when I spread out the compost before I planted. I have dozens of them. We shredded one and put them in oatmeal chocolate chip cookies - not bad! Not really sure it enhanced the flavor, but we ate them.

So that took advantage of about 1/3 of one of these things. Anybody have any experience with these? I tried some by itself and they don't have a lot of flavor - about like a carrot and it is certainly edible all on its own. Thinking I'll just dice them up to snack on if nothing else.
 
Could you thinly slice and "pickle" some? I've done it with zucchini instead of cucumbers for a pickle/salad before. Thinly slice 2 medium cucumbers and a small white onion. Mix 1/3 cup white vinegar with 2-3 Tbs. of sugar (I use few drops of a sugar-free liquid sweetner), I also add a few shakes of salt, and make my vinegar mix to taste. Pour vinegar mixture over veggies and refrigerate for several hours.

I've also used zucchini instead of pasta in an Italian pasta salad. Spiralize the squash, and mix with diced onion and bell pepper, sliced black olives, halved cherry or diced tomatoes, pepperoni slices. Coat with Italian dressing, and sprinkle with Parmesan cheese.

Shred some to put on salads, like you would carrots.

Maybe try stuffing and baking one like you would a zucchini? Or slice/dice and sautee/air fry some as a side dish.
 
I have been loving thick slices of veggies on the grill.

Have you ever made Baba Ghanouji? It is one of my all time favorite things, it can be made with chick peas too so I imagine this would be equally good.

Could you roast them or air fry them, like you do with summer squash? Maybe add some Parmesan cheese after for some added flavor?
 
If the texture is more like…butternut than yellow squash or zuchinni, I’d make a puréed soup. Watery vegetable like summer squash? A ratatouille or caponata type dish could work. Cut in planks and bake with tomato sauce and Parmesan cheese, is another idea.
