Where do you eat snacks?

We have a summer trip coming up, and are planning on snacking around the world in Epcot and enjoying some churros and dole whips and our other favorite Disney snacks. I understand that you can't walk and eat for safety reasons. Is it allowed to sit on a bench and eat and then mask back up? I wouldn't want to take up a table at a QS unless that is specifically what we are supposed to do. Sorry if I missed a sticky on this. There is so much new and changed and I'm trying to catch up!

Yes. If you're stationary and distanced you can eat and drink.
 
Or you can find a garbage can to use for a table top. That happens a lot in Epcot with all the festivals.
 

So is it acceptable to just stop and lean against a railing or fence and eat or do we have to find a place to sit, as there is not nearly enough benches in my opinion. As long as we are stationary, we don’t have to be at an eating place correct?

As long as you are leaning against a railing that is out of the way not in a busy area you should be good. Its kind of common sense, don’t stop in the middle of a busy bottle neck area and try to eat, move over off to a quieter side area away from others to eat. Mask rest areas are also great places to sit and eat a snack.

Oh, is this allowed even now? I am so unsure of what is allowed and what isn't with covid regulations.

This made me laugh, because WHERE, besides WDW, would people stop and use the top of a trash can as a table? LOL, we’ve done it before also, but would never do it anywhere else!

I've been going to the festivals for years and I can honestly say I've never once eaten on the top of a trash can. I see people doing it all the time but I usually can find a bench or if push comes to shove, cop a squat on a curb (which might be just as bad). The good thing about Epcot is there are so many little out of the way spots you can go to, although I'll admit if it's crowded getting to them while carrying a plate and something to drink can be a challenge.
 
There are many walls, etc that are marked for sitting with distancing markers (not that anyone was really paying attention to them) but there were a fair number of places to duck out and eat something. I hoovered down a bunch of dole whips on our recent trip.
 
I don't know if the DVC booths are still not being used, but when were there in November we had our snack from the Canada Festival booth under the cover of the DVC booth to get out of the rain since it wasn't in use at that time. We also ducked into the DVC sales booth in HS during our July trip. Many of the Flower and Garden outdoor kitchens have areas of tall standing tables near them as well. We never had trouble finding a spot to pull over for a snack. A few of our other spots were the picnic tables near the water at the exit of Big Thunder in MK and the benches as you enter Liberty Square from the Hub.
