Does anyone know what the busiest days in a giving week are for each park? Ex. what days I should try to avoid each...

I'm no expert, but I do know that this depends on what time of year you visit. A Monday at MK during spring break will be nothing like a Monday at MK in mid-January. The Unofficial Guide to Disney World prints a chart of expected crowd levels at each park for every day of the year. Consulting that would give you a much better idea about how to plan your visit for whatever time of year you are going.
