What's for dinner? Was it "budget"?

Hi all...
I have been absent from the boards for a few days... gotta love end-of-school-year craziness!! Last night I had a band concert AND a graduation/awards ceremony to attend!:faint: NOTHING going on tonight, soo looking forward to a night to veg out. It is SO cold and nasty though... rain, wind, 53°.. ICK. Gotta love Montana. We are having the CHILLIEST spring!

Tonight sounds like a good night for breakfast-for-dinner.... warm, easy comfort food. I think I will open up a couple of cans of corned beef hash and brown it up nice and crispy. Some over-easy (or over-medium, depending on preference) eggs to go with it, some toast, some fresh fruit, and some cocoa or coffee. Works for me! :thumbsup2
 
Well, we're in an early heatwave. It was 106 the other day 103 yesterday and 102 today. Hot, hot, hot!

Dinner tonight is going to be Kielbasa and potatoes!
 
Just took my two kids to Bennigan's to celebrate the last day of school (they had a half day today). I had a coupon....with tip, our bill was $18. Oldest DS and I brought home 1/2 of our sandwiches. So that's lunch for tomorrow.

Dinner tonight will be light. Not sure what yet, but nothing big!
 

Tonight we're having stuffed potatos (weight watchers core plan friendly)

Bake a whole russet potato
then load it with:
Can of black beans (we don't use the whole thing)
Chopped onion
Salsa
Sour Cream
Garlic Powder, salt, pepper

I'm not sure how much it costs to make, but it SURE IS FILLING!! My DH can't always finish his (we eat the skin and all) YUM!!! :hyper:
We use the leftover beans the next night and make taco salads--- with many of the same ingrediants- just add lettuce and veggies and cook some chicken ::yes::
 
Well.... we are having chicken thighs. I'm trying a new recipe I found in a magazine (I am usually a non-recipe user). It is some sort of lemon-garlic chicken that sounded reasonably easy. Anyhow.... I got almost a 5 lb. package of the thighs that I bought when they were $1/lb. We will probably only use half. I will boil the other half without the skin and debone it and put it aside for a curried chicken recipe I want to use later in the week or next week. Not sure what for sides... we had brown rice last night so maybe potatoes tonight. Greens will be a garden salad and broccoli. The broccoli was $.99/lb at Market Basket yesterday. We will probably eat a pound. Water for everyone except DS, who will have milk.

Chicken thighs - $2.50
lemon, garlic, oil etc. -??$1
potatoes - ?? $1 (large bag and I will only cook 3)
green salad (1 head of romaine, 2 large handfuls of baby spinach, bulk purchased carrots, dsg.) - $2
Broccoli - $1
DS's fish sticks (he is allergic to chicken, but will eat the potatoes and broccoli) - $1

So $8.50 for 4 people.... but I definitely rounded up with the salad prices and such. I didn't include a potato for myself, but if I am really hungry near dinner time, I will make myself a sweet potato. We will probably eat most all of it. I am usually a good planner as to how much to make, but if there are any leftovers DD will take it for school lunch tomorrow. ..........P
 
Clean out the fridge night... (Going grocery shopping tonight)

Leftovers include - pulled pork, 2 hotdogs, chicken alfredo, homemade apple sauce, steamed brocolli, and green beans. I have watermelon, strawberries, and cantelope - cut and ready to scoop. I also had extra bread left over from last weeks lunches so grilled cheese is also offered...

Cost $.50 for cheese slices. All others have been budgeted and or accounted for.

We're having a broccoli and ham casserole, using up some of the leftover ham last night. Veggies cost about $1.50, hashbrowns about $1.25, and ham probably about $2.00. I'm hoping there will be enough to feed all four of us with leftovers for lunch. Not likely if DH likes it!
 
We're having Suddenly Pasta Salad (Ranch and Bacon). I added: tomatoes, chopped black olives, pepperoni, sweet peas. Tastes great. It's chilling. We'll have it over a bed of lettuce.

For dessert I made yellow cake and it'll be topped with Cool Whip (no sugar) and fresh strawberries. :)

Well... I made waaaaay more potatoes last night than I had planned. When I started peeling them I realized that they were getting a bit old so I thought it best to just use the rest. I figured I would make potato pancakes tonight with the rest of the mashed taters from last night, along with scrambled eggs. It is a swim night, so we don't usually get home to eat until very late (8pm if we leave practice early.... 9 pm if we stay for all of practice). I will make the potato pancakes after school today on the griddle and just warm them up tonight while the eggs are cooking. No veggies for the rest of the folks (not that they would care..:rotfl: ), but I will probably cook myself some carrots.

1 doz. eggs $1.19 (will probably use them all, since I will put one or two in the potato pancakes)

leftover mashed taters $1 (I didn't budget for all of the potatoes last night because I didn't plan on cooking them all)

carrots for me .50

Milk for DS, water for DH and DD, seltzer for me..... $.50?

$3.19 for dinner for four. ..................................P
 
Tonight is rice and beans.

I just finished getting it in the crock pot. Usually I do that at 8, but I forgot.. and did it at 11. I think it should still be fine.

Anway.. it costs around $1.50 for a batch.

We do add cheese, which is probably another 1.00

It's filling, but I do get tired of it.. and try not to make it more than once a week.

Yesterday I put a roast in the crock pot (unearthed from the freezer that I bought on sale months ago.). So we fed 3 roast, mashed potatoes, carrots. 2 leftover lunches today. Tonight I have three chicken breasts that I grilled out weekend before last and froze for a later meal. 2 or three will have that for dinner and one lunch tomorrow. Probably do leftover veggies and maybe corn.
 
Tonight is petite sirloin steaks on the grill (about $7 for a family-pack of steaks), a boxed "herb and butter" pasta side dish ($1.50) and artichokes ($2). So about $10.50 to feed a family of 5. Not too bad! There will be steak left over, but probably not much else.

The photo was taken just a couple days after Christmas in Galveston. We went from freezing cold Kansas, to playing in the Gulf with the other tourists. (Because the water was way too cold!)

DH took the dandelion photo. No filter. It's just the sun shining through it.
 
i am having mac n cheese tonight and hubby is making lemon pepper chicken with green beans for the rest of the family, i will also have green beans. i just don't eat chicken. not really A nutritious MEAL FOR ME but it was the day from (heck) and i have a headache after dealing with nuts at the office (they messed up my paycheck and underpaid me by $100). OOPS CAPS LOCK LOL But yes, I would say it's budget, the chicken was cheap, marinade was free, beans cheap, and we drink water 99% of the time. and mac n cheese is relatively cheap (i don't get kraft so it's more expensive than that but still cheap).
