What's for dinner? Was it "budget"?

I've posted this recipe before in the crockpot thread. It is a windy, stormy day here and this sounds good. Probably cost me around $10 and we will get dinner, lunch and more out of it.

Crockpot Layered Cabbage Rolls (I layer the ingredients instead of rolling them to get it going fast)

1-1.5 lbs lean ground beef (raw)
medium cabbage, sliced
1 onion finely chopped
1 cup uncooked minute rice
1 large can tomato sauce
2 Tbl. worchestershire
Cavender's Greek Seasoning (or Salt and pepper)

I mix the beef, rice, onion and Greek Seasoning. In separate bowl, mix tomato sauce and worchestershire. I don't measure any of it, just do what looks good. Repeating layers of cabbage and meat with tomato sauce and Greek Seasoning on each layer. Cook all day on low, or if I get it on later in the am, I do on high for an hour then down to low.

We're having oven fried flounder tonight. It was on sale, a pound for $3 and change. :) I'm going to saute onions in butter, dip the flounder in that, dredge them in fish fry, cover them in the remaining butter and onions and bake them. We'll also have steamed cauliflower and cheese, and leftover seasoned green beans from the other night. I might make my super easy french vanilla pudding pie for tonight. It's only 4 ingredients, low cal, and really good!
 
I have a pork tenderloin thawing for tonight. I bought the "club pack" which was 2.99/lb for three nice sized tenderloins. I marinated each one in a different marinade, and froze them in ziploc bags. Tonight is honey dijon. Yum! One tenderloin will feed my family of four with no leftovers. I'll make some sort of veggie with it, and a starch of some kind. Not sure which yet....lots of choices in my cupboard and fridge!
 
Well, lets see... yesterday, DH made a really yummy sauce/gravy that we had over some meat at dinner. However (as often happens when he is "creating" in the kitchen) his portion sizes got away from him and we ended up with a LOT of leftover sauce. ;) Its yummy, with a beef broth base, and mushrooms and sour cream and herbs, very stroganoff-like.
So, tonight I have some hamburger that I have to use up... I am going to make either meatballs or patties with it, and serve it with the leftover sauce. I will make some sour cream mashed potatoes to serve with it, and a veggie. I also may serve a relish plate; some olives, pickles, pickled beets, etc... the kids love to eat the pickled bits and pieces. :)
 
I think tonight will be half a chicken and potatoes and gravy (youngest has been kind of pestering me for white gravy)

which means tommorrow night will be chicken enchiladas:goodvibes

Tomorrow is chicken empanadas: chicken breast $3, package of pie crust $2, jalapeno .10 cents, red bell pepper .75 cents, package of cream cheese $1, sour cream .75 cents: $7.60

Wednesday is hamburgers: 1 pound ground sirloin $2.25, 1/2 bag hamburger buns .75 cents, cheese .50, chips $1: $5

Thursday is chicken parmigiana: `chicken breast $4.50, 2 jars of marinara $1.50, spaghetti noodles $1, mozzeralla $2, parmigiana $.50 cents, garlic bread $1: 10.50, but split for 2 nights: $5.25

Friday is leftovers: $5.25

Add fruit to all meals is about $1.50 more a meal

I would love the recipe for empenadas....I have never had a home made one and I think my family would love it!!
 
I signed up to make a soup for a church gathering on Tuesday. . . so when I saw the Taco Soup recipe, I decided to do that. I made a double batch, enough for DH and my dinner today, his lunch tomorrow AND a Crockpot full to take to church tomorrow.

I wish I knew where you all were shopping! My grocery stores never have bargains like that! LOL!

mine comes from shopping only sales and adding coupons to the mix.

If I have to pay full price for meat I get it from Costco...better quality. Otherwise the cheapest is what wins in my house:goodvibes
 
Well my family likes beans and franks so.....

1/2 package of all beef hot dogs (I just cant eat the cheap weiners...) 1.50
1 large can pork n beans 1.39

Add a few slices of white bread and some stuff for strawberry shortcake that my parents just brought over (thanx Mom and Dad) and we are set!

Another cheap-o meal that we like is soup and sandwiches (although I dont know how much we can have these in the heat if the summer in South Louisiana........)

2 cans tomato soup 1.00 (family of 3)
6 pieces white bread .60
3 pieces of cheese maybe .50?

So both of those meals can be made for less than $3 for all of us.

Tomorrow its Salsa chicken in the crock.....

2 chicken breasts (I got a huge pack of 6 breasts for .99 a pound - total cost for the package was about $5 - a few weeks ago, split them and froze them. I actually butterflied the breasts cause they were so thick so I got enough for 12 breasts or 6 meals - DD7 and I usually split a breast) less than 1.00

1 jar salsa 1.29
Onions, garlic - nominal
1 pack of Mexican rice - .99

I will serve with some shredded cheddar on top but I have that in the fridge already from the weekend.
Total cost for this meal (AND I did ntot have to actually cook it:banana: - 3.28
 
Tonight it's Italian Shells Hamburger Helper (50¢ for the HH) 2.00 for the burger!

Gotta use up the HH from the pantry shelf!

Today we had meatloaf, mashed potatoes and steamed broccoli.
 
I know the discussion got overly heated on the previous thread - but I'm not seeing a lot of vegetables in some of these meals...

Anyway, today we had homemade pizza and salad. I made whole wheat pizza dough in my bread machine (hard to calculate the cost, I buy the flour cheaply in large bags), topped it with some onion and garlic spaghetti sauce, sliced mushrooms and red and yellow peppers. After it came out of the oven, I sprinkled on some vegan parmesan. Made a salad with mixed greens, cucumbers, cut-up cold cooked asparagus (left over from lunch) and some more mushrooms. Very good!

My problem isn't the veggies so much, as that many aren't that lo-cal. I am trying to do WW, and need recipes the whole family will eat. I recognize th Taco Soup as a WW recipe, but otherwise, many are too calorie heavy for me.
 
Okay, heres one with a lot of veggies........going to make it Friday.

Same chicken breasts (I should have bought 2 packages while they were that cheap)......1.00

1 package Ramen noodles .30
1/2 package each of baby carrots and sugar snap peas (frozen) 1.50

Another meal for less than $3. Maybe I will buy some egg rolls as a treat!

Everyone decided they wanted spaghetti instead, so we made the hamburger into homemade spaghetti sauce. Served it over angel hair pasta, with garlic toast. Also had the relish plate (mentioned above) and carrot sticks with ranch for dipping. Was really good, but I will pay for it! Tomato products at night always gives me heartburn... oh well... bring on the Tums! :thumbsup2

I totally admit it... I know we don't eat enough veggies... but we do our best, and I always try to sqeeze some in where people won't notice them. ;)
Truth be told... and I mean absolutely NO offense, so please don't take any... but if I tried to feed my family the meals you make, they would all move out... and I might just join them! The kids don't LIKE veggies, so to get them to even eat one serving per meal I am doing well! Tofu makes Dh and eldest DD wanna YAK! I can't abide mushrooms or peppers, and Dh hates onions. We are all waaaayyy too fond of our meat and our cheese and our animal fat based products. It may not be the healthiest, but I LIKE how we eat, and I also am realistic enough to know that I have to cook in ways my family will eat. I just do my best to make it as healthy as I can.

Definately budget here. Found these dogs hiding in the freezer and the rolls look a bit short don't ya think? :rotfl2:
