Glynis, Was it you that just tried fish tacos? Was the fish fried or grilled?

The fish was fried. I had a fish taco at Taco Time. I really liked it!

Go to the WW website, you can sign up for e-mails from them without having to actually sign up. I started out that way, I now belong. They would send me weekly e-mails with advice, tips, and recipes. :thumbsup2

I do get those e-mails and used to print the recipes out, but got out of the habit. Thanks for reminding me. It's just so much easier for me to go out on a limb and try a recipe posted in this thread vs. WW-- I trust you guys much more than I trust WW corporate... :rotfl:

There is a slightly different version of these patties/burgers already posted but here is the WW version. I've made these a few times & they are delicious.
Greek turkey burgers (6 points) Weight Watcher

Yield: 6 servings
¾ cup Fat-free yogurt; plain
2 Cloves garlic; minced
3 tbsp Fresh mint; chopped
¾ tsp Salt; divided
¼ tsp Pepper
1 ½ lbs Extra lean ground turkey breast meat
½ cup Feta cheese; crumbled
8 Olives; Kalamata, pitted and chopped
3 large Pita breads; cut in half, whole-wheat
1 large Tomato; sliced
1 small Onion; red, sliced


I also added a Mediterranean Blend seasoning mix, Paul Prudommes Poultry Seasoning, ½ finely chopped onion, chopped fresh basil and dried Mediterranean Oregano.

Line a sieve with a paper towel. Pour yogurt into sieve set over bowl. Let drain 30 minutes. In bowl combine garlic, mint and 1/4 tsp. salt. Stir drained yogurt into garlic mixture; chill until ready to serve.

Preheat grill or broiler.

In bowl combine turkey, cheese, olive, remaining 1/2 teaspoon salt and pepper. Form into 6 patties. Grill or broil until cooked through, 6-7 minutes, turning once. Serve burgers in pita bread with tomato, onions and yogurt sauce.

Makes 6 servings. WW Points per burger = 6 Per Burger: Calories 286, Fat 7g,
Fiber 1g

I have to admit, though, you almost lost me at draining the yogurt...I'm a very unsophisticated cook... four of those ingredients I've never even bought at a store, though I have eaten them...:blush: You guys are so inspirational that I'm determined to show myself I can do this. Sorry I'm late getting on here today. Mary began throwing up yesterday, and so I've been keeping an eye on her. I know she's feeling better, as she wants to be up and running around. I kind of like it when all she does is want to nap!

Dinner last night was ok. I think the orange beef and broccoli stir fry would have been better with more orange juice. Next time, I'll add more!

Dinner tonight will be baked barbecue pork chops. Yum! I haven't had pork chops for a while, and I'm craving them! Of course, I'll have to eat quickly as it's also book group tonight. We're discussing "Water for Elephants." I need to put together some questions to take to group! At least I'm not hosting!

I hope Mary is better. Have fun at book club. :)
 

Here's another recipe. (Can you tell I'm bored with waiting for the babysitter to get to my work with my kids and have lost all focus for work...) This was the pound cake my mother always made. Andrew, who rarely eats cake, loves this, and so does my DH.


Aunt Lucy’s Pound Cake
2 c. sugar
2 c. flour
½ lb butter
6 eggs
1 T. vanilla, lemon or orange flavoring

Cream sugar and butter. Add flour and eggs (a little at a time) until all the flour is used. Add your flavoring. Bake in a tube pan at 350 degrees for one hour.

Lauren, That is an Italian Sauce like I have never seen!! Wow girl, a lot of stuff goes in there! Is this an old family recipe?

So the Italian, mixed with the Creole & the Cajun, a lot of people here start their Red Gravy with a brown roux! We have a lot of little family run "Creole Italian" restaurants here, it's much harder to find "true" Italian food here.

Not many Italian Grandma's and Mom's have actual recipes so I adapted mine (which I never had a recipe either but I wrote how I made it for Kathy and that is what is posted here...:) ) from just talking to people about their sauce. The 2 real things that make my sauce is the salt pork and the spare ribs...I took this idea from a dear girlfriend of mine. Her parents are right from Italy...but they use fat back instead of salt pork...I just found fat back a little blech...

I think I would love Creole Italian!

I've tried many, many sauce recipes in my life and this one by far is the BEST!!!! It makes a ton and freezes very well.:thumbsup2

I have to give my opinion on the neti pot and similiar items....

My mother made the best sauce from scratch, she wasn't a very good cook, but this was outstanding. My dad just found 2 dishes of it in the back of the freezer. He is going to saver every bite of it. He will be able to get 3 meals from each dish. (the man loves pasta so he won't mind eating it every day, lol) He was so excited and emotional at the same time. I am sure he will be in tears eating it due to the memories, happy and sad. My poor Daddy..:sad1:

Slice up a few potatoes and layer in the bottom of a crock-pot along with one sliced medium onion. Top with pork roast and pour 1 cup of Goya Mojo marinade (found in the ethnic section of the grocery store). Add water depending on how much gravy you want - I add about a cup or so - the potatoes soak up a lot of the juice, so just check it now and then and keep adding water as needed. Cook on high for 2 hours, then on low for 4-5 hours. During the last hour top with 1 sliced mango.

If so, I have used it on chicken, pork chops and steak...its really good! I just bought a hug pork roast to cut up so I will have to try this...I never used it on a roast....It's also great for wings...let those suckers marinate overnight and slowly grill...Yum!

I think tonight I am just going to grab something on the way home. I have a darn headache and my mother is having a colanoscopy tomorrow and I am sure if I am in the kitchen for any length of time lots of whining will commence! :headache:

On top of that it is raining and I have to go to the library and grocery store. Have to return A LOT of books before I incure fines the size of the national debt and they have ground turkey on sale at the grocery store until today.

Anyone have a good recipe for homemade breakfast sausage patties? I found a few on All Recipes but they just don't seem spicy enough for me.

I love cuban food especially ropa vieja!!! I think I had one on the old thread & so did Jenny. But I can post it, if you want one.

The draining of the yogurt, just makes it thicker. You can find feta cheese in almost every deli/cheese dept., if you can't find calamata olives just use black! Being on this thread has really helped me expand my cooking horizons! I just cooked with fennel for the 1st time this past week & I'd had arugula in rests. but never bought it. It's yummy!
I've done WW & I go back to it every now & then. I've found that keeping foods flavorful, new & different really helps with portion control. When I first got on WW, I was cooking the same old thing all the time, blech, it got old fast. Then I hit the comp. & starting grabbing recipes from everywhere, it helped a lot!

Johnny just called me from Kyle's baseball game. I was too nervous to go. The coach told me yesterday a scout from the college Kyle is planning on attending in the fall would be at today's game. So far through 5 innings he's pitching a no-hitter.:hyper:

I wonder what he would think of Fish Tacos! I'm sure if I fried the fish he'd eat it up, but gosh I ate frying.

I hate frying too because of how my house smells after it, but it tastes SO good and my kids love it, so I fried fish again tonight...plain for them, a little spicy for me for my fish tacos. Here's a pic:

As you can see from above, I had fish tacos tonight. I used Janice's creamy chipotle sauce (YUM) but I didn't have yogurt, so I substituted sour cream. I also had the spicy slaw Beck posted. The picture was really blurry, so I didn't post it, but the slaw was great.
 
It ended with him indeed getting his first no-hitter of his career. The local newspaper interviewed him after the game and there should be an article in the sports section tomorrow!!!!! We beat a team that had 12 wins and only 1 loss!!:goodvibes
