What's for Dinner Tonight? (recipe index in OP)

That rutabaga sounds really good! I like rutabaga--Laura and I usually puree it and top it with fried shallots.

I was planning on making a California BLT for dinner tonight since I'll be vegging in front of the TV (Yes, I watch American Idol. It is my most terrible vice.). But, everyone's been cooking that lemon spaghetti and raving about it, so I think I'll make that. Probably. I'm thinking about stirring some arugula into it. Those of you who have cooked it, do you think that would taste good?

Off to the old office grind!

Becky, The lemon spaghetti really tastes like a zesty lemon alfredo sauce, arugula would probably be very good with it. As discussed before I would thin the sauce a bit.

Well, the flu is still with us. Katie and Leslie are still down. Leslie really feels ok, but has a fever, so I'm keeping her home. Katie is down for the count; sore throat, tummy ick, coughing, fever, etc. She's just miserable. Hopefully, she'll get some sleep and that ought to help. She hates to nap, though, so I really don't think she will.

Dinner tonight will either be spicy crockpot chicken or tortellini soup. Both sound good to me, so I'm letting the sickies decide. Got all the ingredients for either, so I'm good!

Could I ask for some good thoughts, prayers, etc? My niece, Carissa, has been in and out of the hospital for the last few days. They thought she had pneumonia, but last night discovered lung embolisms (?). They are now really concerned about her heart. Carissa is 22 years old, and has Down's Syndrome. Her parents know that she's not going to outlive them, and this really has them scared. She's such a ray of sunshine for our whole family. If you could send any good thoughts her way, I'd appreciate it!

That lemon pasta does look sooo darn good..i might need to try it next week..we had our big pasta dinner last night ( and some for lunch today..)

Tonight I am going to marinate and grill some chicken along wtih some roasted taters. We got one of those Aerogarden things and Last night we used some of the basil and tonight I will use some of the chives to season the potatoes with...its so convenient, and nothing like using fresh ingredients :thumbsup2 ..i will serve a salad alongside as well.

So I take the Aerogarden really works? How do you like it?

Even way down here I can't keep my herbs going all winter long. A couple of weeks ago, I went out & bought my herbs for spring planting, put them on the patio & we got hit with a freak freeze again & now they're dead. I have a hard time adjusting every winter to not have the herbs right outside the back door. And you can bet if I run out to the grocery for a certain one, they won't have it. I've been planting sweet basil, chives, thyme, sage, oregano & rosemary every year. When I can find the Thai basil I loved that too.

I guess I'll be in good company, stuck in front of the tv watching Idol tonight!:goodvibes

And on WFDT, I've taken out ground turkey. Can't decide if I'm doing the greek patties a la Becky or maybe trying to make some Italian meatballs & spaghetti with it.

Anyone tried that, italian meatballs with ground turkey?
 
Hey NOLA girls I need your help. I just watched Chef Tory McPhail of Commander's Palace, make Shrimp and Andouille Jambalaya. Now I want to make jambalaya for dinner. Is andouille spicy? I'm ok with mild to medium heat, but anything beyond that I can't do. I don't think I'm going to make his recipe because it makes a huge amount and I don't have (nor plan to buy) oysters or shrimp stock.

Anyone have an easy recipe for a jambalaya newbie? I'd like to make it with shrimp and I'm flexible on the type of sausage.

Kathy, No coat or tie for the PFTS! Both times I've worn a casual skirt & dressy-T, Bob wears his docker's pants & a short sleeve polo or button down shirt. The pairing are usually during the day & thus pretty much park wear. We won't be doing the PFTS this year. So I'm hoping for a Signature Dinner or Exquisite Evening. I'll have to go find out the dress code for those. Bob would not be pleased to wear a coat, but I think he could be persuaded.;)

Kathy, We drove through Port Orleans this last trip. (That was only 2 weeks ago & it feels like forever already!) It's really pretty, SIL stayed there her last trip & loved it!

Gretchen, I wish I had kept my original ressie's for OKW. SSR was nice, but way too large & spread out. We drove through OKW again, just to compare & wish we had just gone with that. This F&W trip coming, we'll be back at BCV though, which for me is better than Home! :laughing:

I'm so glad to hear that about PFTS. I would LOOOOVVEEE to do a signature dinner, but I think I would have to start Kenny with small steps.

We've never stayed at SSR, but OKW is pretty spread out too. We usually have our car, so it isn't a problem, but we've stayed at the far reaches of the property and you can be pretty far from everything else. Honestly though, that is one of the things I really like about it. Way out in the far reaches, it is so quiet and peaceful. And most of the time, the kids will have one of the quiet pools almost to themselves.

We haven't stayed at BCV, but I'd love to try it. I'm hoping that maybe I can convince Kenny to give it a whirl on our spring '09 trip. I think the kids would love the pool.

Sandy, this is the one that was posted by Lori4013 on the old thread. It is kind of jambalaya light. No heat unless you add some. My children eat it and they kick up a fuss if anything is remotely spicy.

Chris Daigle’s Jambalaya (Lori4013)

1 lb smoked sausage
1 to 2 lbs shrimp or chicken
2 cups uncooked Uncle Bens converted rice
1 can beef broth
1 can french onion soup
1 stick of butter or margarine
1 small can tomato sauce
1 bunch shallots/green onions
1 large onion
½ cup celery
(for the above 3 ingredients, I used the mixed seasoning in the veggie section, about 1 and ½ cups of it)
thyme, salt and pepper (to taste)

Put all ingredients in a large pan
Bake at 350 for an hour and 15 minutes.
Stir every 15-30 minutes
Serves 6-8

Sandy, Some brands of andouille are really spicy & others are not. Andouille has a VERY smoky flavor & I usually only use a little bit (1/2 a link)to season foods & then add whatever brand smoke sausage that you like.

How easy of a recipe do you want? My BIL does a super easy one in the rice cooker that's good!

That sounds like a Paula Deen recipe - light 'cuz there's only one stick of butter. :rotfl: Just kidding. Thanks for the recipe. I'll try that sometime when it's not so hot out. I kinda don't want to use my oven today.

I'm sure my Publix won't have the selection of andouille that you have, but if you can remember any brands that aren't spicy, please let me know. The recipe doesn't have to be super easy. I just don't want to have a hard time finding the ingredients. BTW, I don't have a rice cooker.

Sorry I've been MIA again--spent the weekend volunteering for the Little Rock marathon, so no time for anything else. Last night was baked spaghetti; tonight will by Glynis' pot roast, if I can ever get it in the crockpot!

The Aerogarden looks so cool. I want one, but my cat would probably eat all the herbs. I can't have any live plants in the house because of her.

I really do like our Aerogarden...it is SOOO super easy and so far the results have been wonderful. The dill they sent us was a dud though, and never sprouted so they sent us another free of charge...Right now we have Basil, purple basil, mint parsely chives and thyme i believe...its so cool...we also bought the veggie one to plant when these herbs are harvested...
I have a cat and so far she hasn't touched it! i was worried about that too..but hey there are worse things than having a cat with basil breath!
 
[I]LaurieG - The pork chops are kind of a throw together thing too. Even figuring the time it took to trim and slice the pork tenderloin, it was in the oven in less than 20 minutes. If you bought pork loin chops already sliced, I'd bet you could shave another 5 minutes from the prep time. The whole dinner was ready in less than 45 minutes. [/I]

OkWMom- Thanks I think I am going to have to try and make these real soon. They sound so yummy!!! Boyfriend is going out with family tomorrow night so possibly Thursday. Will let you know

Laura and Glynis- I am loving the Tudor Talk! It has been so many years since I read about this merry clan that my memory is fuzzy. The movie depicted Henry as a very charismatic man who was attractive in a diabolical way. I remember him a a huge man with gout:confused3

I know that there is so much I have missed and am sorry. We are trying to help out but the girls are very private and really have not had to manage a funeral before. It is hard because the balance between the wishes of their Mom is not helping the rest of her family. Aunt Joan will be buried tomorrow afternoon and because there is no graveside service we will go after. I am going to make a big Shepard's Pie and a salad for dinner after. The Memorial Mass is Saturday Morning with a light breakfast to follow. The family will come her after for a late lunch.

Tonight is pork chops with Oven Fry. I planned on using Dijon mustard to hold the coating. I had planned on a pineapple chutney as well but the store did not have fresh pineapple so I will try that one another time.

Funny you should mention Oven fry. I just bought a box by Zatarains - Bake-n-Crisp and I was thinking about doing it tomorrow. Never thought of using Dijon to coat, great idea!:idea:

Once more proving my theory that we are all related, I have been having similar thoughts this afternoon (instead of working, which I should be doing). I have been thinking of different coatings I could use on chicken breast tenders before I coat them with panko to bake. I have been considering teriyaki or maybe sweet & sour. Scary, isn't it?

Funny how we all seem to have the same food ready to go. I was vetoed about the Dijon, I used a honey mustard instead. I have yellow rice and snow peas as well with a chopped salad. DD is going to steam some green beans I am heading to my Aunts so I will eat when I get home.
 
WFD...Plans have changed, my Mom just called and is going to drop off a big pot of homemade Chicken Soup with egg noodles! Just the medicine we need...nothing beats DM's soups.

Tonight we are going with a huge group to Outback Steakhouse. Now, I know it's a chain and I don't like to eat chains when out of town but I didn't get to pick. Plus, I love a good steak so I'll deal.
