What's for Dinner Tonight? (recipe index in OP)

Good Morning,

Dinner last night ended up being chopped ham (cooked 30 minutes in Maple Syrup), chopped cooked Asparagus,low sodium Chicken Rice a roni, mixed with 1/2 can cream of celery soup, 3/4 can cream of Chicken soup, (both healthy request) Cheddar and Montery Jack Cheese. Quick and easy as I had to work late.
Tonight I am on my own for dinner as everyone else in the house will be out. Sounds like PB&J to me!

Tonight we are having Grilled Moraccan-Spiced Turkey burgers in pita bread with Mango Chutney Slaw. It is from a Rachel Ray cookbook.

Your potatoes reminded me that I had a question on the Ohana Potatoes...you liked them right? Did you peel the potatoes or leave the skin on. TIA! I may make them for Easter.
 

Tonight I am making soft tofu with a cilantro-scallion-chile topping, and egg drop soup.

that sounds good..I think we are doing something very similar tommorow night..although we might be having corn and/or some stuffing instead of the beans...

WFD: Well, i have class tonight and greg is at the fire station..so perhaps a quick grab of some sort on the way to school or some cereal..HIGHLY interesting choices! ;)

I am running to see my Mom today so I wanted something easy. I am making another of Kathy's famous recipes...Saucy Beef, egg noodles and green beans.

I lost another 3.8 #s! :cool1:

Things are slowly returning to normal around here. Leslie went back to school this morning, but Katie is still home with a high fever, sore throat, cough, earache, etc. Just general ickiness! Luckily, her teacher is great to work with, so I'm not too worried about how far behind she'll get!

Things with Carissa are not so good. She's still in the hospital with severe breathing problems, and a fever of 103. Good news is that her heart is in fabulous shape, so that's one less worry. One of the biggest problems, is that she's always so cheerful, she won't tell anyone when she can't breathe, or if something hurts. Her parents are really worried. I sure hope that they can figure out what's wrong as quickly as possible! With all the flu at our house, there's no way I'm going to the hospital to visit, but I am making dinner for the other kids. I'm making spicy crockpot chicken for both of our families and I'll take it over later, with a bag of salad and a bottle of ranch dressing.

My family will have the chicken, steamed broccoli, and possibly some spanish rice.

OK, everybody, I just finshed getting all the index updates! I'm sending them to Lindsay now, but I just wanted to give you a heads up because:

1. Since we did not have an index, some recipes were posted multiple times. I only noted the recipe once in the index--the first time it was posted.

2. Some recipes are reprints from the old thread that people saved onto their computers and reposted on this thread. In those cases, the recipe, even if you posted it originally on the old thread, is credited to whoever posted here on the new thread. For example, Laura posted my curried sweet potato recipe from the old thread here, so on the index I just did, her name is after the recipe. I did this to make it easier for people scrolling through the thread to identify the post where the recipe is located. I hope this is OK with everybody! :) If not, well...sorry!! :duck:

Glynis - continued prayers for your family.

Kenny remembered to turn on the crock pot yesterday morning, so we had the roast last night.

Tonight I am trying the baked chicken strips with some sort of oriental base and panko, fried rice and maybe egg rolls.
 
If anyone already copied my soup recipe from last night, I edited it because I forgot a couple of things. Shocking, I know.

I have leftover turkey and leftover soup, so I am going to combine them to make a small potpie.

I'm thinking of trying something different tonight. Cooking Light mag had some interesting Malaysian recipes this month. But it will require a run to the Asian Market for me. I have to get up & get going. My back/neck, fibromyalgia stuff has really been flaring up lately. So will see if I manage that, if not it will be something with ground turkey. :confused:

Ohana Potatoes



Ingredients

1 pound Russet potatoes (washed and sliced)

1 cup heavy cream

1/4 cup cheddar cheese

2 tbsp parmesan cheese

1/4 cup thinly sliced sweet onions

1 tsp kosher salt

1/4 tsp black pepper




Combine all ingredients in a greased baking pan. Bake for 1 hour at 350 degrees. Let stand five minutes before serving.

Have you ever found fresh galangal in the market? Appparently it looks similar to ginger root but has a different & distinct taste. It used in the Malaysian cooking along with ginger.

I have a little tiny Asian market near me, & a much larger Asian "super-market" further away. But I don't want to bother going on a hunt, if Beck/Laura hasn't found it in thier great markets!

Kathy, That big Asian Market on Berhman Hwy is still open, isn't it???
