Once more proving my theory that we are all related, I have been having similar thoughts this afternoon (instead of working, which I should be doing). I have been thinking of different coatings I could use on chicken breast tenders before I coat them with panko to bake. I have been considering teriyaki or maybe sweet & sour. Scary, isn't it?

That sounds good! Let us know how it turns out!

WFD...Plans have changed, my Mom just called and is going to drop off a big pot of homemade Chicken Soup with egg noodles! Just the medicine we need...nothing beats DM's soups.

Tonight we are going with a huge group to Outback Steakhouse. Now, I know it's a chain and I don't like to eat chains when out of town but I didn't get to pick. Plus, I love a good steak so I'll deal.

Plans changed here. My soup in a box I had for lunch didn't sit well. So I'm not cooking tonight. It'll be leftovers for DH.

Well, the flu is still with us. Katie and Leslie are still down. Leslie really feels ok, but has a fever, so I'm keeping her home. Katie is down for the count; sore throat, tummy ick, coughing, fever, etc. She's just miserable. Hopefully, she'll get some sleep and that ought to help. She hates to nap, though, so I really don't think she will.

Dinner tonight will either be spicy crockpot chicken or tortellini soup. Both sound good to me, so I'm letting the sickies decide. Got all the ingredients for either, so I'm good!

Could I ask for some good thoughts, prayers, etc? My niece, Carissa, has been in and out of the hospital for the last few days. They thought she had pneumonia, but last night discovered lung embolisms (?). They are now really concerned about her heart. Carissa is 22 years old, and has Down's Syndrome. Her parents know that she's not going to outlive them, and this really has them scared. She's such a ray of sunshine for our whole family. If you could send any good thoughts her way, I'd appreciate it!

I'm praying for her...I have had DVT's & PE (Pulmonary Embolism) and it is very dangerous. I will be closely watched and on medication the rest of my life. Sending you family good thoughts.

Here ya go:

Lemon Spaghetti

1 pound spaghetti
3 tablespoons extra-virgin olive oil, 3 turns of the pan
4 cloves garlic, finely chopped
1/2 teaspoon crushed red pepper flakes
2 lemons, zested and juiced
1/2 to 3/4 cup heavy cream
1 cup grated Parmigiano Reggiano
Handful flat-leaf parsley, finely chopped
1/2 cup (10 or 12 leaves) fresh basil, very thinly sliced

Bring a large pot of water to a boil. Salt the water and drop the spaghetti into the pot.

Heat a large deep skillet over low heat. Add extra-virgin olive oil and garlic and crushed red pepper flakes.

When the pasta has been cooking about 5 minutes, add lemon juice, a ladle of the cooking water from the pasta and the cream to the garlic and oil. Raise heat a bit to bring sauce to a bubble.

Drain pasta when it still has a good bite to it, al dente. Add lemon zest and half of the cheese to the cream sauce. Season the sauce with salt, to taste. Add pasta to pan and turn off heat. Toss the pasta with sauce a minute or 2, allowing it time to soak up the sauce.

Top the plates of pasta or platter with remaining cheese, parsley and basil.

OK, people. I just got home and I don't have any lemons! What the heck!!?? :mad: You have to understand, I usually have at least 10 lemons in the house. Curse all that middle eastern food I made the other day!

Thanks for the recipe though, I printed it off for after the next food shop.

Well, off to figure out something for dinner. Grumble.

We are having jambalaya and biscuits. Sorry I didn't think of coming on the computer earlier or we would be having pork chops too.
 
Anyone tried that, italian meatballs with ground turkey?

I've never done turkey, but I've made chicken and they are good (not AS good, but still good). You just have to season them more heavily than the beef meatballs because the meat isn't as flavorful. Also, since the poultry doesn't have as much fat, you might want to add some so they don't dry out too much. I think I just sauteed my onion and garlic in olive oil before putting it into the mix and I may have used a little more milk than I do for beef.

Glynis -- :hug: I hope your niece improves soon. Are your children feeling better?

I know I'm forgetting something, but Idol is on in 24 minutes (yup, I'm another devotee...in fact, I was the one who got Beck into it, something she has never quite forgiven me for :laughing: ) so I have to get moving here.

I couldn't decide what to make for dinner tonight, so I finally settled on cheddar-potato soup with carrots and broccoli. It was pretty tasty and easy. Here's a pic:

No chain spot afterall for me! We found a great local steak and seafood spot that we went to instead. I had fresh trout, with a yummy parsnip and carrot fried cake, and seared scallops. Everything was delicious, fresh, and beautiful.

Though I was all set for that steak... maybe tomorrow night ;)

Lindsay -- I meant to say in my earlier post, I love the new pic of you and Scott in your avatar.

Here's the recipe...please know that I made this up and I cook based on approximate measurements most of the time. I adjust seasonings and ingredients as necessary.

Cheddar-Potato Soup with Carrots and Broccoli (serves at least two)

2 tbsp butter
1 onion, finely chopped
2-3 potatoes (I used red bliss, so they were smaller, and I used three), peeled and cut into cubes
1-2 carrots, peeled and cut into slices (I used baby carrots, so more like six)
2 tbsp flour
2 c chicken stock
1 chicken bouillion cube
1/2 tsp dried oregano
1 slice bacon, cooked and cut into small pieces
1 small head broccoli cut into small florets
Milk
1-2 c cheddar cheese (depending on taste)
Worcestershire sauce
Salt and pepper

Melt the butter in your soup pot, medium heat, add onion and saute until beginning to soften. Add the potatoes and the carrots and cook for two minutes. Add the flour, and stir well for 1 minute. Add the chicken stock, bouillion and oregano. Increase the heat to med-high, and stir until liquid begins to boil and thicken. The potatoes will tend to sink to the bottom and stick, so you need to stir frequently. (Don't let it boil too hard!)

Once liquid is boiling, decrease the heat but maintain a simmer so the potatoes cook (about 20 minutes). If necessary, add more chicken stock. (This mix will be thick...only add stock if the liquid levels are so low that the vegetables aren't cooking.) Once potatoes are soft, add the broccoli and cook until bright green. (I think next time, I would precook the broccoli separately, then add to the soup at the end.)

Add milk until soup is the right consistency for you. Heat well, then add the cheddar cheese and worcestershire sauce to taste. Season with salt and pepper as desired.

I also added fresh chopped parsley to mine, and if I had chives, that would have gone in too.

It is DH's birthday tonight so it was his menu choice. Enchilada Pie, whole grain spanish rice......and homemade ice cream cake. :cool1:

Tonight I'm doing something a little different. I am making the Spaghetti and Meatball stoup I've been making forever, but tonight I am adding some chopped spinach to the meatballs, making them a little Florentine-style. I thought that would be interesting. We are having salad and bread with it.

I make that recipe often, it's a favorite in my house. I do usually substitute tortellini for the spaghetti, and last time I made it I added spinach straight to the stoup and let it wilt down. My family really liked the spinach in it!
