Laura- How is Cailli today?

She finally made it through the day fever-free, but as I told her skating coach, she is still a paler shade than ghost. She ate every crumb off her plate tonight, though, so I think she is on the mend. Thanks so much for asking!

Beck posted the spicy slaw recipe. The original recipe is from Jasper White's Summer Shack...the food there is SO yummy.

I made the gnocchi Beck pictured and served it with a sauce of olive oil, shallots, red pepper flakes, chicken stock and butter. I served it over a bed of arugula and topped with parmesan cheese. It was so good!
 
Laura - I'm glad to hear Caili is doing better but she's not ready to get back to normal activities soon. I don't know why I'm saying this, you know that, I'm just rambling tonight.:guilty:

You're not rambling. You are totally right! I am hoping that Caili is ready to return to the world on Tuesday, when she is supposed to participate in an Annie production workshop (really low-key stuff), but I will pull her from that if necessary. She has a skating competition next weekend, but again, I will scratch her if she isn't strong enough to compete. I just want her to get better!! And I would like to leave my house. I like my house, maybe I even love my house, but after seven days with my house, I would like a little break...even if it is just to go to the grocery store. ;)

I'll just say this: I've never had a pot luck where my dishes came back empty, UNTIL TONIGHT!!! The pork was so incredible!!! That was such an amazing recipe (and so easy, too!)! It is definitely a keeper. I took your advice, and doubled the amount of garlic butter. So good!!!

And the corn casserole was the first thing gone! Everyone wanted the recipe. No one could believe how easy it was.

Another vote against the cod I posted earlier...I had to make a big thing of nachos to fill my empty tummy.

Gone Baby Gone: good movie. Disturbing, though. I had read the book, but John was very freaked out by the plot.
 
Laura & Becky did you read the Boston Globe on Sunday? There was a one pot recipe contest, this was the winner....it looks great!

ESCAROLE WITH CHICKEN SAUSAGE
SERVES 6

3 tablespoons olive oil
2 pounds sweet Italian chicken sausage, cut into 1-inch pieces
Crushed red pepper (optional)
10 cloves garlic, chopped
4 heads escarole, cut crosswise into 3-inch lengths
1 cup pitted Kalamata olives, halved
2 cans (15 ounces each) cannellini beans, drained and rinsed
1 cup pine nuts, toasted
1/2 cup small capers
1/2 cup Parmesan or Romano cheese, grated
Salt and black pepper, to taste
1/2 cup Italian-flavored bread crumbs, toasted

In a large, deep, ovenproof saute pan over medium heat, heat the olive oil. Add the sausage and red pepper, if using, and cook until sausage is light brown on all sides and almost cooked through, 8 to 10 minutes. Add the garlic and the escarole and continue cooking over medium heat, stirring, until escarole begins to cook through and is reduced in volume but remains green and crunchy, about 10 minutes (do this in batches if the pan is too small). Add the olives, beans, pine nuts, and capers. Stir them in and heat through, about 2 minutes. Turn on the broiler. Remove the pan from the heat, stir in the cheese, and season with salt and black pepper. Sprinkle the mixture with bread crumbs and heat under the broiler until crumbs are golden brown, about 2 minutes. Serve immediately.


This recipe also reminded me of what you were making for dinner last night...it sounded similar! Sorry you were not please with the final results.

COD WITH SWISS CHARD AND POTATOES
SERVES 6

2 1 1/2-pound skinless cod fillets
Salt and pepper, to taste
1/4 lemon
2 tablespoons olive oil
1 large onion, cut in half and thinly sliced
1 bulb fennel, cored and thinly sliced
1 can (28 ounces) diced tomatoes, drained
3 medium Yukon Gold potatoes, thinly sliced and set aside in a bowl of water
3 cups low-sodium chicken broth
6 cups coarsely chopped Swiss chard
2 tablespoons unsalted butter
2 cups chopped fresh basil (optional)

Rinse the cod, pat dry, and sprinkle with salt and pepper. Squeeze the lemon over the fillets and set the fish aside.

In a large saute pan over medium heat, heat the olive oil. Add the onion and fennel, season with salt and pepper, and cook until vegetables are soft, about 5 minutes. Mix in the tomatoes and simmer the mixture for about 5 minutes. Remove the potato slices from the water, dry them on paper towels, and arrange them on top of the tomato mixture. Season with more salt and pepper, add the chicken broth, cover, and simmer until the potatoes are tender, about 10 minutes.

Lay the cod fillets on top of the potatoes and put the Swiss chard on top of the fish. Cover again and cook until the chard is wilted and the fish is cooked through, about 10 minutes. Take the pan off the heat and divide the chard among 6 plates. Divide the fish into portions and place on top of the chard, then divide and arrange the potatoes around the fish. Put the pan back on the heat, add the butter to the sauce, and stir to mix. Reduce for about 2 minutes, then adjust seasoning with salt and pepper. Add basil, if using, to the sauce, stir to mix, and spoon over the fish. Serve immediately.

WFD- I won't be making anymore gourmet meals before we go away. Ron is working two double shifts in a row, so basically we won't see much of him till vacation. I am just going to be whipping up some quick meals for me to clean up what is in the house. The next wonderful meal we experience will be at LeCellier!

- I'm feeling better today. I overdid it yesterday and had a fever last night. I slept VERY good last night and have a 98.2 temp. today, lol! I'm going back to the doctor though.

Mrs. Disney Ron, I did see those recipes. I am going to make a variation on the chicken-escarole sometime this week. Personally I think 1/2 cup of cpaers would be overpowering, and I don't get the need for all those pinenuts, so i am going to change it up a bit.

Tonight I am making a chicken that I have injected with cajun butter sauce and coated with zatarains creole seasoning. I am also making some cornbread and am going to attempt to make collard greens for the first time...I have some spinach on standby if I can't stand the greens.

I am also making some cornbread and am going to attempt to make collard greens for the first time...I have some spinach on standby if I can't stand the greens.

I always put a little honey in my greens, it cuts the bitterness.:goodvibes


WFD - I got some huge (thick) pork chops on sale this weekend. They're marinating and will go on the grill and I'll top them with a green peppercorn sauce. We'll have PepperJack Risotto cakes and a salad with them.
 
My MIL taught me to put a little apple cider vinegar in with the greens and smoked turkey wing. OK now I'm hungry.

I don't think I am going to cook this evening. We have errands this morning and then if Kady want to go to a movie Buddy and I will take her. Then I need to go to my Aunts and help her with dinner and bed. I think I'll call and see if she wants a fish sandwich, my cousin said that they called and asked her on Friday and she ate one even though she had just finished lunch. No wonder she would not eat any dinner for me. If I do that I'll bring some home for us, I am truly a junk food fast food junkie :lmao:
 
Good morning, everyone! The kids are home from school today, so I'm not sure what we'll do. I think cleaning out the playroom is in order, but I know I'll be outvoted!

Dinner tonight will be chicken dumpling soup. It's actually from a Disney cookbook, and the recipe is actually called "Snow Day Soup". It's a version of chicken dumplings that kids as young as my kids can help make, and so they want to try it. We'll see if it's any good. I'll be making a cherry pie to celebrate President's day. It's a tradition my mother started when I was in kindergarten, and I like to carry it on. Of course, until recently, I would just buy a premade cherry pie, but I've found a recipe that I like and that is easy, so I make it myself now.

Well, it's not that my pot luck food is bad, it's just that in a family of 11 siblings (several with married children), there's always a TON of food at these gatherings. Everyone takes home leftovers. This was different, though. People just kept going back for the pork and the casserole. I was hoping there'd be enough pork left over for my lunch today, but no such luck!

Here's the pork recipe, complete with Kathy's instructions:

Cajun Pork Tenderloin with Garlic Butter

I normally grill the pork, but you can sear it in a skillet and finish off in the oven too!

Dry rub:
1 tsp. salt
1/2 tsp. cayenne pepper
4 tsp. paprika
1 tsp. black pepper
1 tsp. garlic powder


2 pork tenderloins
2 Tbsp butter
1/2 tsp. garlic powder

In a small bowl combine dry rub ingredients. Rub thoroughly into the pork and let sit for 30 minutes. Grill or pan sear/oven finish until done - 170 degrees internal temp. Melt butter and stir in garlic powder (I usually double the sauce). Slice tenderloin on the bias and pour garlic butter over.
