You're welcome! I realized I used the word "lightly" three times in typing the recipe, but that is the key to these. If you coat them too heavily, the eggplant mysteriously disappears and all you're left with is an empty crust. Not exactly sure how that happens. :confused3

I'm making the gnocchi Beck pictured tonight. I'm thinking about serving it on top of arugula, but I can't decide if that would be good or not. I'll make regular noodles for the kids, since neither of them can come up with any better ideas.

Kathy -- It sounds like Kyle has an exciting week. I wish him lots of luck!

John and I watched the WEIRDEST movie last night: Across the Universe. It was very :confused3 . Not recommended.

:scared1: Are you kidding?! It's my FAVORITE movie right. I've already bought the soundtrack (have it memorized) and am buying the movie this week so I can watch it over and over again. I recommend it to anyone I see. I LOVE it. I even posted a thread about it and talked to several others on here who loved it! You're the first person I've heard didn't like it. How strange!

But, I love Julie Taymor's film style and adore the Beatles. Guess different strokes for different folks? :confused3



Tonight we're having lime chicken soft tacos! Can't wait to taste it!

Laura - You are so right about the eggplant. The first time I made them they were mostly crust, I thought I cut them to thin, but I went "lighter" on the coating next time.....much better!

Kyle is very excited to just be playing, much less in Houston!! They've been practicing since Jan 2 and they are so ready to play someone other than themselves.:bored: They have a game at school scheduled for tomorrow but it's been raining all day so I'm sure it'll be canceled.
 

Shrimp, Crawfish, Crab or Oysters Monica

1 lb. crawfish tails, boiled and peeled; OR

1 lb. shrimp, peeled; OR
1 lb. lump crabmeat; OR
1 lb. oysters, drained and quartered.

1 stick butter (Do not use margarine.)
1 pint half-and-half (Look, relax. Just don't eat this every day..)
1 good-sized bunch green onions, chopped (tops, too)
3 - 10 cloves garlic, chopped (to your taste)
1-2 tbs Creole Seasoning
1 lb. cooked fresh pasta (Dry pasta is all right if fresh is
not available. Rotelli is preferred, use your favorite shape.)


Cook pasta according to the directions on the package. Drain,
then rinse under cool water. Drain again, thoroughly.

Melt the butter in a large pot and saute onions and garlic for
3 minutes. Add the seafood and saute for 2 minutes. Add the
half-and-half, then add several big pinches of Creole seasoning,
tasting before the next pinch until you think it's right.

Cook for 5 - 10 minutes over medium heat until the sauce thickens.
Add the pasta and toss well. Let it sit for 10 minutes or so over very
low heat, stirring often. Serve immediately, with lots of French bread
and a nice dry white wine.
 
Not sure if anyone is still posting recipes, but I got this one out of the Sunday coupons. Both the picky eaters in my family liked it, so thought I'd share.

Hearty Chicken & Noodle Casserole

1 can cream of chicken soup
1/2 cup milk
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese
1 cup frozen vegetables
2 cups cubed cooked chicken
2 cups medium egg noodles
1/2 cup shredded cheddar cheese

1. Stir soup, milk, pepper, Parmesan cheese, vegetables, chicken, and noodles in 1 1/2 quart casserole.
2. Bake at 400ºF. for 25 minutes for until hot. Stir.
3. Top with cheddar cheese.

Makes 4 servings. I didn't add the cheddar cheese, didn't want to push my luck with the picky ones.

Thanks. :worship: I'd have never figured that out! My brain naturally wanted to go with evaporated milk, but that didn't make sense in some of the recipes!! Enquiring minds wanted to know...and now we do!!

Not makiing the eggplant tonight. I'm too tired from working yesterday and today to go back out to the store.

So leftover pork chop and roasted brussel sprout for me.

Alex is bonding with his Dad ;) He can be a grumpy teenager with him.:idea:

It is! And it's also good in other flavors. I've tried chocolate cake with chocolate pudding, strawberry cake with cheesecake pudding, and spice cake with pumpkin pudding. All were good!

No, I'm not kidding. I grew up on the Beatles. I have all my Dad's vintage albums. I even have a numbered white album from him with the poster still inside! I LOVE the Beatles. I love Julie Taymor too. I just did not like this movie. I thought the main actor's voices were weak. I did love Bono though! :love: Both in the movie (KOO KOO KA CHOO!) and in the end credits when he sang Lucy in the Sky with Diamonds.

BTW, I loved Moulon Rouge, which is the movie I thought closest to the style of this film--and I love musicals. I don't know why this movie rubbed me the wrong way, but it did.

Tonight we're going to a family pot luck. We all make a main dish and a side, and then we all share. I've made Kathy's Cajun pork loin with garlic butter sauce, and my side is Aimee's creamy corn casserole. Both of them smell so good! I can't wait to try them!!!
 
Here's the eggplant recipe, Ann. I leave the egg out of mine because Liam is allergic and substitute 2 tbsp oil. The coating comes out better if you use the egg though.

Mom's Famous Eggplant Sticks

1 eggplant, preferably long and thin (less seeds than the fat, round ones)
2 eggs
2 c water
flour
Italian seasoned breadcrumbs
vegetable oil for the pan

Peel and cut the eggplant into sticks about a 1/2 inch thick (I usually end up with 32).
Lightly beat the eggs in the water.
Lightly dredge the eggplant sticks first in flour (shake off excess), then in egg, then in breadcrumbs.
Place on a lightly oiled baking sheet.
Bake at 375 for 40 minutes, turning once halfway.

If you want you can salt them when they come out of the oven.

Mine usually do not take 40 minutes, so I usually turn them after 15 minutes and then bake for however much longer they take to get browned on the other side.

I'm not sure about freezing these, but you can prepare them in the morning, refrigerate and then bake them when you are ready.

I hope it turns out for you! I'll tell you - I doubled it and made it in a 9x13, took it to a party, and the whole dish was gone. One of my collegues ate a huge bowl of it instead of dessert :confused3


We had the fantastic lime chicken soft tacos in the crockpot - DH said it was good and had great flavor. He's big on everything being really flavored so that is two :thumbsup2 :thumbsup2 YUMMY!!!!!!

Tonight we had my DH request: hot dogs cooked in sauerkraut ( as close to his Mom's as I have been able to come) fried onions and peppers and Becky or Laura's amazing spicy slaw. I cannot remember which Liam's sister it is from, but my whole family is thanking you :worship:. We had mozzarella sticks to hold us until after the race and then we ate.
