Well, 2 days in a row, Kathy is like a goddess in my house! The ribs were GREAT! :thumbsup2

Janice, How do you do it? You must really need the beach. I try and blow the rain your way.

Nancy, that rots about your power. I am glad Buddy was able to drive you.

Everyone that is sick, feel better!

Love the Laura Engels comment Janice!

Well, I was just in the kitchen cleaning up and remembered that I never responded to Glynis re: Valentines Day. I was also packing A's lunch and was drawing hearts on his sandwich foil:lovestruc which made me think of tomorrow.

Glynis, I am making a special dinner but do not go all out like you do. Andrew will get an Eggo for breakfast and Tom will be lucky if he gets farina (which BTW is my new thing...never liked it until now) and this is what I am making for dinner:

antipasto (nothing like Beckys): fresh mozz, roasted peppers and jalapeno stuffed olives...maybe some chunks of parmesan

tomato bread (that bread that I posted the pics and recipe for on the other thread...the spanish bread)

Kathy's Bolognese with rigatoni

Brownies ala mode for dessert

Which then made me realize, I am stalking all of Kat's recipes this week!!! :rotfl: :rotfl: :rotfl:

Did I mention how good the Saucy Beef was? :lmao: :goodvibes :lmao:

Your guys were OK with you changing the recipe???? So glad you liked them.:yay: :yay:

Yup, although they come pretty good in the crock, nothing is better than in the oven or on the grill. They came out fantastic! I guess you could do these on the grill too, right? I will never put a rib in the crock again! :worship:

:rotfl2: :rotfl2: :rotfl2: Your Valentines menu sounds great!!!! Just remember the Bolognese sauce is a very light sauce so go kinda heavy on your seasoning to give it a kick.

You surely can do the ribs on the grill as well, but we like them better in the oven!:thumbsup2

Sounds like a good Valentine's Day dinner!!! I decided to make my dad's Dill Chicken, artichokes with lemon butter, and chocolate covered strawberry cake for dessert. The cake will only happen if I feel ambitious. If not, I have a cake mix with valentine frosting, and I'll make cookies with it! (More likely than not, that's what will happen!)

Well, I knew our good weather was too good to last! We've had 4 days of sunshine and warm weather. My yard was beginning to thaw out! However, a blizzard just blew in. DH just called to let me know that he won't be home anytime soon, as the freeway has been closed due to 2 semi's jacknifing across the road! The freeway has been closed for close to 2 hours, and people are now running out of gas! Yikes!!!!!

Glynis I hope your husband gets home soon and safe. Wisconsin had that kind of weather last week they had a 52 car pile up. Some people were stuck there over 12 hours.

Ok back to being serious with the paperwork :rolleyes1

:rotfl: OK, Laura, no more online grocery shopping for you! Did you even buy any vegetables? And no, frozen french fries do not count as a vegetable! Sheesh!

I bought cauliflower. Oh and bean sprouts! And I tried to buy mushrooms, but they were out of the ones I wanted. Okay, I get it...I just need to avoid online grocery shopping. I need the actual items in front of me to visualize meals.

I really do want to do yoga but haven't taken the plunge. I'm very out of shape and worry I'll be embarassed. Maybe I can claim a spot in the back? ;)

I don't do yoga, but I have a lot of neighbors who do (and of course, they try to recruit me to the classes) but they say that the classes are completely diverse as far as age, size, fitness level, etc. I get the impression that no matter who you are or what type of body you have, you can get a lot out of the classes. So if you want to do it, go for it!

Ann, thanks for the rice recipe. It was yummy. Of course, I did need to change it a little...it is a disorder, I think ;) ...I wanted it a little spicy, so instead of two tsps of paprika, I did one paprika, one medium hot chili powder, and I left out the pepper, since I didn't have one and Liam would have protested. Before eating, I was feeling a little congested. After the spicy rice (and the salsa con queso I put in the burrito), I am feeling pretty clear.

Laura,
Glad the rice worked out okay. I have to admit I tend to wing it when I throw it together too. Glad you are breathing easy now!:rotfl:

Valentines Menu- Oven roasted whole chicken done with evoo, garlic and lemon pepper. Oven roasted red potatoes, corn, and baby spinach salad with manadarin oranges, red onion and sliced almonds.

It's official- my Pooh has the flu, and even better, I think I am getting, too. Not sure if it's the flu, but it's something.

$%^&*(%^&*()$%^&#@$%^&

I am in quite a mood and off to praise team practice, a pissy story I will tell you later.

Again, @#$%^&*()#$%^&*!!!!!!!!!!!!!!!!

Yum, that all sounds so good!

I decided to make my dad's Dill Chicken

Yum, that sounds good too!

Well, DH and I were going to just get take out tomorrow night from TGIFridays but after the meeting we all endured Monday night, a collegue of mine decided the staff needed a fun night together where we DIDN'T talk about church. Or at least the stuff going on. Our pastor went for it so we're having a Valentines party tomorrow night instead. I just need to bring a salad or vegetable. And my Valentine ;)

I hope all the bad weather folks are being safe and all the sickies get feeling better soon!

For dinner tonight I made grilled chicken breasts in my new Rachel Ray grill pan! YAY Bridal showers! LOL!

I marinated it and grilled in a mojo criollo sauce. Then I topped it with a homemade mango, avocado, jalapeno sauce. On the side we had a mixed salad with homemade raspberry vinagrette, and pan roadsted mixed veggies. Now I'm kicking myself for not taking a picture of the finished plates.

I do have a picture of the mango avocado sauce! I wish the picture was a better dipiction of how vibrant the green color is!

I meant to add before but forgot (seems to be the theme of my life lately), Lindsay, I hope you and Scott do not have the flu! Caili has it and she has been so sick. We are going on day four of constant fever, and she is only six. It is way worse for adults...probably because they try to do too much too soon. If you do think you have the flu, stay home! You shouldn't go out or have visitors for at least 5-7 days. Drink lots of fluids and make sure you have plenty of Motrin or Tylenol in store to fight the fever. Symptoms of the flu are: high fever (102 or higher) that does not go away (even with analgesics, although the medicines should be able to lower it), and usually includes most of these: headache, fatigue, loss of appetite, sore throat, dry cough, runny nose. The flu is a respiratory illness, not an intestinal illness, although lack of appetite is common with the flu. If you have a sore throat and high fever, you should be tested for strep, as that is another nasty bug that you don't want to have!

Okay, that is my not-so-expert medical advice, but my mom is a nurse, and I am pretty confident she would corroborate all of what I said. Get better soon!

Recipe, please? I LOVE LOVE LOVE dill.

Sure. This is one of my dad's recipes.

Dill Chicken

7 to 10 boneless skinless chicken breasts
flour
salt
pepper
1 can cream of mushroom soup
1 pkg. onion soup mix
1 carton (8 oz) sour cream
1 Tbsp lemon juice
1 tsp. dill weed

Roll chicken in flour, salt and pepper. Place in 9 X 13 pan. Mix remaining ingredients. Spoon over chicken. Bake at 350 degrees for 1 1/2 hours. Cover with foil for part of the cooking time.

It has turned WICKED here! White out conditions with wind blowing so strongly! The freeway is still closed, and we are now getting word that 3 of the elementary schools in our area had kids on school buses from 3:30-7:30 this evening. At this point, all the kids are now off the buses and are waiting at schools for parents to be able to pick them up. School kitchens have been opened, so the kids have been fed, and they are bedding them down in libraries and classrooms until they hear from parents. I'm so glad that my kids made it home from school today!!!

Glynis Those poor kids, they must be scared. Last fall when we had that tornado that kept Mr Alex at school, he said a lot of kids were scared. That was middle school. I hope your husband made it home safe.
You just made our news this morniing.

Not sure what we are having. I'll have to figure that out soon huh ;)

HAPPY VALENTINE'S DAY, Y'ALL!!!!

Hope everyone has a great day & weekend!

I busted my bootie getting packed yesterday! Still have to load the car this morning. We aren't taking off until after the morning rush, I'm just awake cus I'm like that before a trip! My stomach is doing better, still had a headache & felt dizzy and out of it yesterday. Hopefully today will be a little better.

We will do a little DW during the trip! Not too much, Mom is not a fan. :sad2: But she hasn't seen AK, MGM or a finished WS. So we will try to fit those in. And RR & Jiko of course! Probably take off for the big race around 6AM. ugh. Anyway, Y'all take care while I'm gone!:goodvibes

Lindsay, Sorry to hear you & Scott are sick!

Laura, Sorry that Caili's not much better & that online grocery shopping didn't go so well!

Becky, That chicken looked awesome!:worship:

Janice, Thanks for the quick enchilada sauce recipe, I saved that one right away!

Glynis, Be careful and stay warm! Glad the kids came home safe!

Sheryl

Happy Valentine's Day everyone

I was planning on making stuffed pepper stoup for dinner tonight, now I'm not sure. If Scott doesn't have much of an appetite, it will be soup out of a can instead. He is feeling a LOT better. That Tami-flu works so good it's kinda scary. Me, on the other hand, meh..... I just have a cough. I think it's just a cold.

WFD at your house?

Sheryl, have a great trip!

 Happy Valentine's everyone!!!:lovestruc

I am getting caught up finally. I unplugged the computer yesterday but I did not know that Jeff unplugged the power cord from the CPU so I used the laptop. I hate the laptop I get dizzy! I was not even a little embarrassed when Jeff checked it this morning.....they all know I have no idea where anything connects!

Glynis! :scared1: Don't go out! Marisa told me the Agawam just delayed school yesterday and then canceled it while kids were on buses and parents were on their way to work. She said she heard that the buses were turning around. I sincerely hope that was not the case.

Sheryl- Have fun, stay safe and enjoy the race. It is the 50th running and the manager who helped me said that there are special things planned.

Aimee- Enjoy the party this evening!

Laura- Poor Cailli . This is way too long for a little one to be ill.

Lindsay- I'm glad that you just have a cold.

Tonight we are going to have a roast pork with baked potato, curried sweet potato and gravy, broccoli and salad. I want to make jello jigglers for Kady and a dessert for the rest of us.

Kady finally got to bring cupcakes for everyone to school I used a WW recipe, chocolate cake mix, 3/4 cup of water and one can of pumpkin. They are yummy! She can have the vanilla whipped canned frosting so DD and Kady sprayed them pink and then added pink sprinkled sugar. She was so cute when she brought one the first time to school. The kids are all concerned with her allergy so they also check out her food, she said she had so many kids talking about her cupcake!
