I made chicken breast covered in cream of mushroom soup, stuffing, and corn.

Aimee depending on the chili powder it has some spice but not hot. My son likes it. The canned varieties have a strange taste to me. I also grind or pound my own cumin it tastes so much better fresh. fyi a great stress buster.

Good evening everyone! Tonights dinner was baked salmon, rice and broccoli. The salmon I actually got from Schwans and was really good. Someone mentioned Schwans the other day. We love it and I buy a ton from there. chicken breasts, vegtables, fish, ice cream and juice. As far as being expensive, some stuff is, but most of it is pretty reasonable for the amount you get.

Tomorrow we will be having meatballs and ziti in spaghetti sauce, corn and garlic bread. Quick easy and good!

We have some crazy stuff in our freezer that we get from DF's dad...there's dear, wild boar, and Bear in there at the moment. I never make any of it, it all just sits there getting freezerburned.

I don't know if I'd eat the bear. My brother hunts for a living (he guides rich men who want to bag big animals), and he says that bears are just like goats. They'll eat anything. Yuck!!!

I have no idea what is for dinner tonight. Scott is still really sick so I will probably just make him some soup. He is going to the doctor when they open.

WFD at your house?

ETA: It will probably be Friday before the index is up. I'm sorry. I've just got a ton on my plate and not much time to DIS.

Don't worry about the index. Take care of Scott and yourself.

Lindsay - The index can wait, take care of Scott & yourself.

I'm making Becky's Thai Chicken Curry with Jasmine Rice tonight!!:cool1:

Have a great day everyone!

Morning!

Yes, Lindsay, take care of Scott and whatever needs to get done and then worry about us! ;)

Its a giant slushy mess out there today. Its raining but the drops are so big...my neice was able to get out on her way to Australia...there was a 4 hour delay! :scared1: My neice is pretty friendly so she met some other girls that will be attending the University of Sydney.

We are having ribs tonight. I am going to cook them Kathy's way but I had them marinating since yesterday in teriyake. Not sure of sides but maybe sweet potato or fries with some type of veggie...

Have a great day all!

HI All!

Kathy- OMG! That was too close for comfort! I feel so badly for that poor woman :sad1:. Crazy weather!

Aimee No words for what is happening . I hope that you don't let this affect you too much. It's not the same thing really but Faith is the same. I am a Catholic and you know the heartache we have been going through the past few years. There were times that it was hard to separate what a person did with having Faith in the Church. :sad2: Very hard to accept that some of the people whom you trust implicitly were so bad and that instead of removing them they were moved. It happened in our Parish and while it was no secret that the Priest was not behaving appropriately parents still let their young adults go places with him. He was moved into another Parish. Things are better now an in my own Parish the safeguards are very good. Maybe something good will happen for your Church as well.

Sheryl- Get better soon!

Lindsay- don't worry about the index. Just get your family well and try not to get this bug too.

I'll check back later, I have a Dr appointment and cannot miss it.

The Cola chicken was not a keeper. In fact I think it was a bust and will not make it again. DH said the chicken taste was gone and for a man who loves "yard bird" that was not a good thing. DSIL ate the yucky Big Y chicken that no one liked so that means :scared:. The Princess Potatoes were wonderful though so we sure did not starve. Sheryl, please give my regards and my thanks to the young chef.

Tonight we are going to have American Chop suey that I made yesterday "just in case".

Can I just tell you how yummy Becky's sausage, white bean and tomato pasta was!!!!! Definitely a keeper!!! I used chicken sausage with apple and gouda and it was incredible!!! This is going to be a fallback recipe for me! All my kids liked it! I couldn't believe it!! Thank you, Becky!!!!!

Tonight I'm making calzones with ground turkey.

I was going to make heart shaped pizza for tomorrow, but my family is vetoing that idea. Any suggestions for something else? I'm still making berry pancakes, strawberry milk, and Valentine's snack mix for during the day, but I'd like something special for dinner. Any suggestions?

I think tonight I'm going to make either a turkey breast in the rotisserie with my famous (or at least famous to my family) glaze........or white lasagne with mushrooms and chicken. I haven't decided yet

Dinner last night was super yummy. I did take pictures as I went, so here you go! Here is the chicken in its spice paste:

Wrapped in banana leaves. Then it goes in a 400 oven for about 1 hour 20 minutes:

When it comes out, it looks like this--it's not completely cooked yet:

Back in the oven for another half hour or so--as long as it takes to get to 170 degrees on a thermometer. When it comes out cooked, it looks like this:

And here it is plated with the sides I made--mustard roasted caulilflower and chickpeas with a spicy tomato sauce:

I did not make the naan in the back--it is from the local indian grocery store.

Not sure WFD yet tonight--something less complicated for sure! :)

Becky, Wow! You did all that and you weren't feeling well...thanks for the beginning to end pics!

Can you share the glaze recipe or is it a family secret too? ;)

Not at all! i totally made it up! I'd be glad to share! I use it as a marinade and then baste with it as it's cooking.

1 Cup of white wine
3 tbs dijon mustard
1 tbs minced garlic
1 tsp low sodium soy sauce
couple shakes of dried thyme
couple shakes of dried parsley
couple shakes of italian seasoning blend
salt and pepper to taste

I kinda eyeball everything so it may be a cup of wine or a cup and a half, etc etc, but it's hard to mess it up.

You people are going to laugh at me, but here goes:

Everyone knows you shouldn't go grocery shopping when you are hungry. Well, since I can't get to the store this week because of Caili (yes, she is still sick but no worse...no better either, but I'll take no worse) so the other night, I went online grocery shopping when I was tired, stressed, and had been drinking wine. The order came today. I bought two different kinds of tortilla chips, about four pounds of cheese, five loaves of bread and most puzzling of all, four different kinds of frozen fries. What was I thinking? :confused3 Not only that, even if I really wanted some fries, I didn't buy anything to go with them! In fact, I didn't seem to buy any cohesive meals (ricotta cheese, but no lasagna noodles...:rolleyes1 ).

I did get one thing right: I did order four large containers of antibacterial hand soap and several containers of Clorox wipes. Also, when the delivery man arrived I told him not to come in because my daughter had the flu. No sooner were the words out of my mouth, then the groceries seemingly flew through my front door and the guy was back in his truck. I didn't even have time to give him a tip!

So...what shall I make for dinner tonight? Cheese, bread and French fries? Ricotta cheese in tortillas and roasted cauliflower? :headache: I'll let you know what I decide once I sort out this mess.
