What's for Dinner Tonight? (recipe index in OP)

I've always wanted to attempt these at home because they're pushing $20 a rack :scared1: at our favorite spot here in town, but I didn't want to babysit them on the grill. This looks (ahem...) Easy!
Kathy - Couple of questions on the Baby Backs.....
What creole seasoning are you using? DH is growing tired of Tony's (heretical, I know) and I was wondering if you're using something different.

How much liquid smoke? Just enough to coat?
These will end up on the menu as soon as I can find them for a good price!

You bet they're easy or I wouldnt be doing them.:laughing: I use Tony's seasoning and I'm pretty liberal with the liquid smoke and the garlic. Be sure and rub your meat well.......;)

I buy them at Sam's.
 
Last night I just made sandwiches. I made the spanglish sandwich, if any of you have seen that movie. It's basically a BLT but with the addition of a fried egg. Here's a picture:

You'll probably hear a lot of baseball talk in the very near future. My DH is Johnny who probably has no clue that it's Valentines Day, hence, no big day for me.:rolleyes1

hahahaha. Julius knows its Valentine's day but he hates it and hates shopping. I'm fairly sure we're going to dinner but thats about it.
 
I'm really kicking myself for not taking a picture of our plates last night. I was so proud of the way they looked. We had boneless skinless chicken breasts marinated and grilled in mojo criollo sauce (in my new Rachel ray grill pan) Hooray bridal showers! LOL! Then I topped it with a homemade avocado/mango/jalapeno sauce. On the side we had a mixed salad with homemade raspberry vinagrette, and pan roasted mixed veggies.

I keep thinking "What am I going to make tonight? And then I remember I don't have to make anything!

Still snowing and blowing here, but the forecast says this storm should start moving out by noon.

Alan made it home by 10:30 last night. He was supposed to be home at 6:30, but there were so many accidents he just kept getting sent on stories. The latest on the schools is not too good. There were about 350 students still at schools as of 9:30 last night. By 10:30 all but 165 had been picked up by parents. Those 165 live in far out areas, and parents couldn't get in to get their kids. They were all taken to one school, where the principal and several teachers volunteered to stay, and they had a massive "sleep over" in the library. As of 7:00 this morning, they are all still there, but the school is closed for the day. The hope is that the parents will be able to pick these kids up sometime before noon. They have the kitchen open, and the kids have been fed, and entertained.

What a Valentine's day, huh?

Aw, those poor kids!! I bet some of them were scared and missing their parents last night. =(

Well I'm Jessie (but my friends call me Angel hence the screen name) (29) and my DF is Julius (35) no kids. We're getting married in 23 days!!! I love to cook, and am currently unemployed. Julius is a Computer Programmer. We're both somewhat foodies. I am a Disney NUT and he used to work there. We have annual passes and go every couple months or so, and we're going on a aDisney Cruise for our honeymoon.

Nice to meet you Angel! Congrats on your upcoming wedding!


Introducing myself... I am 29, DH is 30, we don't have kids (yet - though I am begging on a daily basis now). We have 3 dogs that are our kids. I work as a minister at a church, our church is dealing with some major stuff right now so I'm in survival state at this point. DH works FT doing something with loans. :confused3

My momma works for the Mouse so we head down to visit her since it's a cheap trip with CM discounts and admission.

Sorry about your church issues. When I was in high school we attended a church that had a group of people who had been members their since like the beginning of time. They pretty much felt like they owned the place. Well Our pastor, much like many pastors, wanted to grow our congregation. Or at least be open to new folks. He really tried to reach out to the kind of people that most don't want around all the time...dirty, nearly homeless, trouble with the law...etc etc. Anyhoo, this family who felt like they owned the place, hated this concept and felt like it was taking away from their power and they wanted the church to remain the same way it always had. So they had this big vote and kicked our pastor out. We followed him tot he next church but things were never the same after that.

1 1/2 pounds boneless skinless chicken breasts
3 Tbs. lime juice
1 Tbs. chili powder
1 C. frozen corn
1 C. chunky salsa
12 flour tortillas, warmed
Sour cream, shredded lettuce, shredded cheese, optional

Place chicken in slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender. Remove chicken; cool slightly. Shred and return to slow cooker. Stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through. Serve in tortillas (or over chips) with toppings.

Sadly, it's a reality in many churches... we are hiring professionals now. Did you know there are professional church mediators? That's how common this is. That's PATHETIC if you ask me.

I just don't get it. It really is sad. And definitely sad how much politics are involved.

It is just plain sad :sad2:. I thought those days were over but I think that whenever there are people involved there will be issues with people.

When my Mom and Dad got married there were 5 Catholic Churches in town, one for each ethnic group. Now my Mom was French and my Dad was Irish, well my Mom needed to get "permission" top attend Mass at St Patrick's.
I don't know how true that was but they really did have issues with the two churches.
I think that there are still some of those old kinds of compartmentalizations in every organization.

Hi! Quickly checking in...I have 2 guys here today installing an ADT security system. Tom is paranoid someone will take me when he is not here! In his defense it is desolate (sp) here. No street lights, 150 feet from the road and pitch black at night.

I think I torture these guys when they are here. I started the bolognese sauce and one guys said "whatever you are cooking, sure smells good!"

It does Kat! Tastes good already too. I think I will simmer it all day and add the milk later. Is that OK??? I will add more wine and tomatoes if needed.

OK, so about me. My name is Lauren I am a SAHM to a 9 year old boy soon to be 10 and 2 cats, a dog and multiple fish. We also have a million outside cats that the neighborhood feeds.

We live in NJ. Grew up 5 miles from Times Square and now in the country.

Tom and I just got married this past June. He is a wonderful (step) father to Andrew.

I am addicted to the DIS and especially this wonderful thread. Everyone here is just great!

Funny you should mention this today. There's a recipe in today's newspaper for Emeril's Creole seasoning (makes 2/3 cup):

2 1/2 Tbsp. paprika
2 Tbsp. salt
2 Tbsp. garlic powder
1 Tbsp. black pepper
1 Tbsp. onion powder
1 Tbsp. cayenne pepper
1 Tbsp. dried oregano
1 Tbsp. dried thyme

It does Kat! Tastes good already too. I think I will simmer it all day and add the milk later. Is that OK??? I will add more wine and tomatoes if needed.

That's exactly what I do, the longer it simmers the better, you shouldn't need to add more tomatoes or wine.
