Whew! I made it through all the pages finally to get caught up!

It's been a spaghetti kick here for us. With sausage sauce today and veggie marinara yesterday.

Whatever I can rustle up tomorrow and an open house on Tuesday for Mardi Gras.

Wendie- :flower3: I hope you'll join us again soon. I'm thinking of you and the guys. I downloaded the pics from Christmas and I'll send them to you.

Gretchen- I looked at your recipe list post and laughed out loud when I saw how the stuffing recipe was listed. It was cute.

This afternoon after church we were starving & in a hurry so I improvised. I coated a pork tenderloin with a packet of Hidden Valley Ranch (the dry mix) and some freshly ground black pepper then tossed it into my Pampered Chef roaster. Cooked at 375 til it was done to temp (about 35 min? I think), and served with mashed potatoes, gravy & corn. It was a hit!

Yum. I have a tenderloin in the freezer and want to try this - does your PC roaster cook any different than any other pan?

Can you share the recipe for this? We had some incredible stuffed date things at a local restaurant late last year and they look similar to these - I'd love to try them!



DH picked out sweet and spicy boneless chicken wings, bagel bites, and taquitos for dinner. All frozen-throw in the oven- stuff which was good because I was wiped out with all my party preps for tomorrow night.

I am loving the new Rachael Ray cookbook (Just in Time!). Tonight I am making the chicken tortilla soup I found. I hope it's good. I will post the recipe if it is :)

Thanks for the link. I agree. Every recipe I want to keep/try later/etc. will be saved in Word. I am looking into making a blog for the recipes and keeping it in my signature. That way the recipes can be accessed by everyone quickly.

Does that sound like an idea?

I came here ready to whine that my house exploded somehow yesterday but after reading about Glynis House, I am not saying one word! Oh Glynis! :scared1:

Becky- I am not kidding, we need to submit your name for the next TV cooking show. You and Laura would take it, hands down!



We ended up having a lot of food yesterday. DD and I went to BJ's for soy milk for Kady and ended up picking up frozen snack, you know....just in case...ran to Big Y after adn when we got home my neighbors were here. Well we decided to consolidate our foods and ended up with way too much.

She made chili with stew beef and black beans and a killer artichoke dip
I had
chicken nachos, which we never got to
BBQ little smokies
Chips and onion dip
buffalo wings
honey BBQ chicken bites
fried chicken and cole slaw.

I bought the chicken from Big Y and it was terrible. I have a lot but tried one piece and tossed teh rest. I think that the oil was gone by but that they continued to fry and it burned the chicken and the crust.

Chocolate chip cookies for dessert. I think we had more food but I cannot remember...I am drowning in a mess here and cannot think straight :confused3

Tonight we are going to have the chicken nachos for dinner. They were amazing!
 
WFD- not real sure yet, we may just eat leftovers. DSS says I always make to much food.

OK, I am missing the photo but here is the recipe for the Chicken and Dumplings that I made last week. The Dumpling recipe is actually my Mothers and I made a chicken soup to go along with it...

Chicken Soup
(I didn't measure so these are approximate amounts)
4 boneless chicken breast (or what ever parts you have on hand)
6 cups water
2 tbs extra virgin olive oil
1 large onion, diced
4 celery stalks, diced
3 cups carrots, sliced or diced (I like alot of carrots)
3 chicken bullion cubes
6 cups stock or broth
handful dried parsley
1 bay leaf
1 cup frozen peas, partially cooked (optional)
salt and pepper to taste
2 heaping tbs of cornstarch mixed with water (to thicken broth a bit)

Place chicken and 6 cups cold water in a pot and bring to a boil, simmer 20 minutes. Remove chicken (cool and shred, cut up...however you like it) and reserve liquid (also separate 1 1/2 cup for dumplings).

In a large pot, heat evoo and saute carrots, celery and onion for about 2 minutes. Add stock, reserved liquid (except what is reserved for dumplings), bullion, bay leaf, salt and pepper. Simmer for about 20 -30 minutes until vegetables are tender. Add parsley and remove bay leaf.

While this is cooking, mix dumplings and set aside.

Stir cornstarch mixture into soup and stir for about 5 minutes. Add chicken and peas, bring to boil. Add dumplings as stated below and serve.

Drop Dumplings (I halved this recipe)
3 cups flour
1 tsp salt
5 tsp baking powder
2 tbs melted butter
Approx. 1 cup reserved liquid (broth or water can also be used)
***I added black pepper and parsley

Sift dry ingredients together. Add butter and liquid. Batter should be moist but stiff (add more liquid if needed).

Drop by teaspoonful to boiling liquid. Cover pot and lower heat and simmer 20 minutes.

Serve...Yummy!

Glynis - All I can say is WOW! I'd be sick of the snow too. I hope it melts soon for you and spring arrives in your neck of the woods.

I didn't really cook much this weekend. I've caught some sort of sinus type infection and spent most of yesterday in the bed. I'm feeling marginally human today, and I'm hoping with enough medication I can make it through the work day.

Anyway, tonight's dinner is going to be quick and easy. I'm using Wendie's onion ranch pork chop recipe and making chicken with it instead. I'm serving it with rice and gravy and either field peas or garden peas.

I finally found you guys!!! I hadn't posted on the other thread in a while and realized it wasn't showing up in my new subscribed threads anymore so I had to hunt you all down. :laughing:

WFD? Hamburgers, if DH gets propane, if not I'm not cookin'. He's been promising to get it for weeks. I use the grill 3-4 times a week so it's been really hard figuring out what to make for dinner lately.

Sorry I hadn't checked in a few days. When DH is home he hogs the computer. And there are so many pages to try to catch up on!

Glynis, I'm so sorry to hear about your living room! That's awful!:hug:

We had a small family SuperBowl party here! No fancy cooking, we just made some hummus, cream cheese with pepper jelly on top & put out jarred salsas & cheese dips . We picked up our fav local pizza & muffalettas too.

Lauren, You know we were pulling for your boys! Having a Manning win is almost as good as if the Saints were there! ( But not quite. )

Becky & Laura, Sorry about your Pats. It sure was a hard tough game until the very very end! Becky, That was some SuperBowl Spread you put out! At least everyone ate really really well!!

We've booked our F&W vacation for Oct 26th!! But guess who's coming along on our F&W trip? Yep my girl & her parents! They wanted to go around Halloween & we wanted to do F&W! We'll just head our separate ways & get together to catch some of her cuteness! We booked separate studio rooms this time, so that should make it more enjoyable for all!

Lindsay, I think a blog would be great. But someone will have to teach us not so computer savvy people how all that works!
