What's for Dinner Tonight? (recipe index in OP)

The chicken was really good tonight.
6 boneless chicken breasts
3/4 cup ketchup
1/4 cup honey
1/2 cup salsa (I used mango salsa)
1 1/2 T Dijon mustard (I used ballpark, that was what I had on hand)
1 1/2 tsp chili powder
1/2 tsp cumin
1 T cornstarch

lay chicken in a baking pan
mix remaining ingredients but cornstarch and top chicken
bake at 400 degrees for 30 minutes
remove chicken and thicken sauce with cornstarch


I doubled the sauce bit did not rally need to, and added extra honey. It is a little spicy, but very good. I will use chicken thighs next time.

Another disclaimer: Buddy gave the sauce a 3 out of 10. That was because he said it was okay so I told him that I knew I would make it again since he liked it :lmao::lmao::lmao:. I will anyway, Kady gave it a 10!

Here's the coconut jasmine rice recipe. Enjoy. It's really yummy!

1-cup chicken stock or broth
1/4-cup coconut milk (the kind in the Asian food section-I like Thai Kitchen)
1 cup jasmine rice

IN a saucepot combine the chicken stock, coconut milk and the jasmine rice. Bring to a simmer, cover and cook for 15-18 minutes.

Ok so I'm so bad at posting early I'll have to learn to add it to my morning routine! I just had left over burrito bake tonight because the Hub wanted boxed mac and cheese. I swear the guy could live on this stuff, at least he makes it himself.
 
Today was an unexpectedly busy day. I offered to be the parent volunteer in Caili's class because the mom scheduled had a sick child at home, and then we had skating. This means my house is a disaster; I have loads of laundry to do, and I am out of milk, bread, and who knows what other staples. Monday is just not a good day to have unanticipated plans.

For dinner, I had pasta and the leftover sausage from yesterday. At least that was easy.
 

Hi! New here! I have checked you out before but I don't cook- I order or drive through. HOwever, I am attempting to eat at home more and cook for my family! So guess what?! I cooked tonight. Homemade meatloaf and it tasted good. Below is the recipe I used. Tomorrow we will eat out because we won't be home but Wednesday I might attempt something else. If you smell something burning on Wednesday, you will know where it is coming from!

Meatloaf
Ingredients
· Tomato Relish:
· 1 onion, finely diced
· 2 garlic cloves, minced
· 2 bay leaves
· 2 red bell peppers, cored, seeded and finely diced
· 2 tomatoes, halved, seeded and finely diced
· 1/4 cup chopped fresh flat-leaf parsley
· 1 (12-ounce) bottle ketchup
· 1 tablespoon Worcestershire sauce
· Kosher salt and freshly ground black pepper
· Extra-virgin olive oil
·
· Meatloaf:
· 1 pound ground beef
· 1 pound ground pork
· 3 eggs
· Leaves from 2 fresh thyme sprigs
· 3 slices white bread, crusts removed and torn into pieces
· 1/2 cup whole milk
· Sea salt and freshly ground black pepper

I have the next two nights off from cooking dinner!!!! DH is working both jobs so DS & I will be having dinner at my Dparents.

I did make a batch of my grandmother's banana bread already this morning, it is in the oven...delicious!

I am new to this thread, & I am happy to have found all you gourmets!

The Smokin' Mac & Cheese was my contribution. I know the Back-a-Town Chicken was Kathy's. IIRC, the Cajun pork tenderloin w/ garlic butter was hers as well.

WFD? Haven't the foggiest idea at this point. The fridge is still too full of leftovers, so I'll probably end up freezing most of what I won't eat for lunch the next few days. If the rain showers hold off, it might be hamburgers on the grill.

I have chicken thawing out for dinner.. It will probably be roasted with roasted potatoes, stuffing and a veggie. salad on the side.

Ladies, I am not an organized person. I hate bookkeeping and am really lousy at it. However I am better than my DH so it is my job by default. I have to get the bulk of my filing done today so that I can get my taxes in order and so that I can complete the agricultural census that we are mandated to return by Feb. 4th :scared:. This week is not going to be pretty :headache: and I have my bottles out of the cabinet and on the counter already!

I have to get the bulk of my filing done today so that I can get my taxes in order and so that I can complete the agricultural census that we are mandated to return by Feb. 4th :scared:. This week is not going to be pretty :headache: and I have my bottles out of the cabinet and on the counter already!


Ugh, Nancy I don't envy you on that! During my early years I did bookkeeping for a living. So by default it became my job at home too! Luckily with the innovation of the computer & DH's computer geek skills, he has since taken all of it over!! The monthly stuff & the taxes! :banana: If something ever happens to that man, I will miss him most for his computer/bookkeeping skills! ;)


Don't know what's for dinner yet. I have all kinds of stuff in the freezer & can't make a decision. But I have to get to the grocery too, no onions, no bell peppers, no potatoes in the house. :confused3 So we could have just meat!

I ended up making pizza last night using up some of the leftovers from Sunday's italian food feast. Here is one with sausage, fresh mozzarella, and basil:

Nancy -- It doesn't sound like a fun week for you. I hope it goes smoothly and quickly. (Are those wine bottles you are lining up? In my experience, it is better to do accounting before drinking. ;) :laughing: )

I think I am making roast chicken for dinner tonight. I'll make gravy, mashed potatoes, mashed turnips and cauliflower to go with it. Liam recently decided that he likes green beans (as long as they are the French green beans, haricots vertes. That's my boy! ;) ) so I might make those too.

Are you making your pizza dough from scratch? If so, can you post your recipe? If not what purchased product are you using? Because it sure looks like homemade if it's not!

I'm with you Nancy. Really I am. On top of my regular job, I'm trying to get the info together for the year-ends for my Dad's company as well as Kenny's. And both of them are driving me crazy. :mad: I hate this time of year. I really do.

Yes, but it's certainly more fun to do the drinking first. :laughing: And in my case, it might keep me from killing my husband who insists on watching over my shoulder and asking tons of questions while I'm working.


Hello my WFD family...I see we have some new members.....I have no clue why we have moved and what has happened, but glad I was able to find you all!!! Where are the recipes, did they follow us as well?

I'm not really sure, but the old thread was removed because it was too long. We are hoping to get back the old recipes, but aren't sure.

I've been thinking about you a lot this week. Hang in there sweetie. You know you have friends here. Lean on us if you need to.


ETA: In a nutshell, the issue we are having is that a group of (filthy rich) church members have drawn up legal documents and offered our pastor $$$ to leave quietly. If he refused that, then they would throw him out. The entire church is in an uproar over it, obviously, because people are on all sides. As a minister, it's really hard for me to continue to minister to such hateful people but I have to do it. I put on my game face yesterday but cried all the way home. This is only the beginning so there will be many more painful Sundays and meetings to endure.

I'm so sorry Aimee. I hope things get better quickly.
