The chicken was really good tonight.
6 boneless chicken breasts
3/4 cup ketchup
1/4 cup honey
1/2 cup salsa (I used mango salsa)
1 1/2 T Dijon mustard (I used ballpark, that was what I had on hand)
1 1/2 tsp chili powder
1/2 tsp cumin
1 T cornstarch
lay chicken in a baking pan
mix remaining ingredients but cornstarch and top chicken
bake at 400 degrees for 30 minutes
remove chicken and thicken sauce with cornstarch
I doubled the sauce bit did not rally need to, and added extra honey. It is a little spicy, but very good. I will use chicken thighs next time.
Another disclaimer: Buddy gave the sauce a 3 out of 10. That was because he said it was okay so I told him that I knew I would make it again since he liked it. I will anyway, Kady gave it a 10!
