What's for Dinner Tonight? (recipe index in OP)

DD & SIL are coming over for dinner this evening. We're going to have grilled ribeyes & with all the mac & cheese talk, we'll have mac & cheese with it. If I have time I might make a Jiko sytle red wine sauce to serve with those. Salad or grilled veggies too.
 
I made Corn Chowder for lunch and it was really good. Never made it before and didn't think I would like it but my husband and grandaughter do so I made it for them. Surprise, I loved it. Had potatoes, green pepper, onions and cream corn in it. It disappeared at lunch...no leftovers.

Deluxe Mac and Cheese

2 cups small-curd cottage cheese
l cup sour cream
l egg, lightly beaten
3/4 t. salt
Garlic salt and pepper to taste
2 cups shredded cheddar cheese
l small pk of elbow macaroni, cooked and drained

In large bowl, combine the cottage cheese, sour cream, egg, salt, garlic salt and pepper. Add chedder cheese and mix well.
Stir in macaroni and stir until coated.

Transfer to a greased 2 1/2 qt. baking dish.

Baked uncovered at 350 degrees for 30-45 minutes until brown on top.

Sprinkle with paprika if desired.

My grandchildren want this at family dinners...even Christmas.:santa:

Aimee, I understand about church having problems. I go to New Life and you probably heard all the troubles it has gone through for the last year and a half. The last was the shooting that killed two girls....

My prayes are with you...may God give you the peace that surpasses all understanding.
 
Aimee, Prayers said for you and your Church community. We became parishoners of a new church last year and we just experienced our first congregational meeting and it got a little ugly...not bad but a little uncomfortable...stay strong and positive.

Sheryl, I will def keep you posted on the fireplace. I think that is next on the list to be completed. I think we also found what we want to reface it with...we also ripped the 70s style mantle out today...how different it looks already. I should take a pic.

Thanks for all the pixie dust for Andrew. Parents did not go in with the kids so I have no real idea of how he did. He says he did well. Of course he came home with an injury...a ball hit him in the shin...he is a bit of a wimp. My poor baby.

That mac and cheese recipe just posted looks awesome!!! Thanks!

Becky and Sheryl, Pics are great! I wish I cound make eggs like you guys...They either come undercooked or hard when I poach or fry...:confused3

I'll be back later...Tom is calling. He mopped the floor downstairs and wants me to go look...makes me want to point out everything I clean in a day. Oh well, I am glad that he's been good at cleaning up with all the construction...how can i get him to clean his night stand now??? ;)

SPICY COLE SLAW

1 lb. cabbage, shredded
1 onion, shredded
2 small dill pickles, shredded
8 oz. carrots, shredded
3/4 cup mayonaisse
1-2 tbsp. horseradish
1 tbsp. distilled white vinegar
1 tbsp sugar
1/2 tsp. paprika
1 tsp. kosher salt
1/2 tsp black pepper
1/2 tsp celery seed

Shred all the vegetables in your food processor, Mix together the mayo, vinegar, and spices. Pour over the veggies and mix well. Let rest in fridge at leat one hour. Eat.

OMG! Lindsay, I'm with you, I am seriously freaking out about our thread! We have to have our list with all our recipes! I saved some of my favs but not all. And all of your time you've spent to keep it up & running.:sad1:

Could I bother you for the Arroz con Pollo recipe? It went poof with the original thread! I dated a cuban man in college and his Mom would make this for us when we came home for the weekends. I've seen recipes before but this looks exactly like what she made!! :cloud9:

This sounds like a great idea. Aimee, I am sorry things are so difficult at your church right now, especially coming right after your special night Wednesday. I wish you the strength to work toward a peaceful resolution.

Nancy -- Sorry I missed Buddy's birthday. It sounds like he had a good day. I think birthday parties are the hardest times for kids with allergies. I'm sure you already gave Kady a hug, but give her one from me too.

Sheryl -- Waking up to coffee spilled everywhere definitely would have been enough to send me back to bed. I hope you had a better day today.

I made the kids pancakes and bacon for dinner tonight. Beck wanted me to take a picture, but they ate it before I had a chance to grab the camera. :laughing:

PS. Stephanie -- I hope your daughter feels better. There is a stomach bug making the rounds around here. I hope the rest of you don't get it!

It's funny how you get to know people by the meals that they make. Keep reading and posting and you'll see. Last year my DGD was having an endoscopy and I was home waiting to hear so I decided it was a good time to start saving some recipes from this thread. I started from the beginning and as I was going through each page I found that just by the meals I "knew" these people. Somehow it happened as we shared our meals and a little bit of our lives. They have become dear friends for me.

Aimee- I am so sorry that you are in the middle of a struggle in Church. Stay positive and strong, prayers on the way.

LuvMickey- I love corn chowder. I make it with a bacon base and it is so good. Bad for you but soooooooooooooooooo good!

Lauren- I know that Andrew did well.

We had the vegetable soup that I made Friday for dinner tonight. It was good. Poor Buddy ate it but even telling him how good the barley was for him did not make him like it :rotfl:. My Mom always made soups or stews for dinner. He would eat a soup for a starter but cannot believe that I think it is enough for dinner, even with the meatballs I added. He'll be rummaging around in the fridge for something to make a sandwich with.

Same with Tom...whenever I make a soup he is never satisfied...whatever I serve with it. I did, however, get him to try barley and he liked it...I don't think loved but he said he would eat it again. Tuna anyone? ;)
 
Seems like it was just a 24hr bug with DD--she was back to her old self this morning; the pink back in her cheeks. She even requested me pick up pizza on my way home from work today :eek: It's still in her tummy:yay:

Okay, I hope it works for you, I had to hunt & adapt several different ones because I couldn't find my "easy" version I had worked on for a long time!
For years, I've been trying to imitate one we had from a Guatemalan highschool friend of my DD's. I combined several different recipes to get it as close to what I remembered having, that was so delicious. This was the 1st time I added chorizo & it was really wonderful. Maybe not the traditional ingredient but the taste was spot on. This one I fixed with boneless chicken breast but the chicken comes out moister & more flavorful if you use chicken thighs.

Arroz con Pollo

Marinade: Marinate chicken for several hours with one packet of Sazon Goya mix, 3 tbsp. with chopped garlic, olive oil & juice of 2 small limes.

Notes: I used the white wine & a bottle of light beer (saw this in other recipes) instead of chicken broth to cut down on the salt. Cooked the whole dish on the stove top allowing the rice to get browned on the bottom, which made it even better. Finish with chopped parsley.

serves 6-8people

10 boneless Chicken thighs skins removed, cut in 2 inch pieces
4 pieces chorizo sausage removed from casing
½ cup extra virgin olive oil
1 large Spanish onion chopped coarse
1 green pepper chopped coarse
3 stalks celery chopped in 1/4 inch pieces
3 cloves garlic chopped fine
1 cup of white wine such as a Pinot Grigio
1 bottle light beer
12oz jar drained, stuffed green olives along with half a cup of the olive “juice”
1 29 oz can diced tomatoes with juice
Add two extra cup waters
1 cup of frozen peas or one can pigeon peas (available at latin markets)
3 cups “Vigo yellow rice” or any pre-seasoned yellow rice

1. In a 12” 5 quart skillet or a deep pot cook chorizo for 3-5 minutes. Add the chicken cook on medium heat for 4-6 minutes per side.
2. Drain half the oil.
3. Add the onions, green peppers and celery & cook for 5 minutes or until soft. (add garlic for the last 2 minutes).
4. Add the wine & beer to deglaze pan.
5. Add chorizo, chicken, tomatoes, pimentos, olives, olive juice, peas and water and bring to a simmer.
6. Cover and cook on low heat. After one hour spoon out a small amount of rice to check if it's finished. If the rice is still a little hard than recover and check in 10 minute intervals.
 
Today I am making crockpot chicken noodle soup. Mmmmmm!

Good morning All!

Today is a busy day for me, I was a slug yesterday. I need to go to work for a little while, then I am parent helper in Kady's classroom, then DD is trying to get her into the Dr. She had a cold last week, seemed to be fine, was fine for a birthday party she attended yesterday and then had an earache all evening long. Some kids get bronchitis with a cold, hers goes straight to her ears :sick:. I would just keep her home but I was canceled last week as PH and she cried so DD wants to let her go in and then come home with me.

I'll figure out dinner with maybe chicken, my soup was left out all night so I am sulking.
