What's for Dinner Tonight? (recipe index in OP)

Hey all. Just posting quick to let ya'll know that DH's grandmother passed yesterday afternoon. The funeral will probably be Thursday to accomodate all the out of town family. The kids and I are staying here.

No cooking for me last night and Dsis (who is staying with me this weekend) is picking up sushi and wine on her way home from work!!:thumbsup2
 
Checking in...games are over, we ended up with 3 wins and 2 losses, which is MUCH better than we expected!

We had 4 boys sick yesterday, it's now up to 8 and yep, Kyle is one. Woke up with fever, aches and congestion. The worst part is that I can't take care of him. They are five miles away and have to remain with the coaches until they return to school tomorrow evening. I wouldn't be surprised if the whole team isn't sick by then.:sad2:

We're going to Poppasito's(sp?) for margaritas and dinner tonight....never been there, can't wait!

Congrats on the games!

Hope Kyle feels better soon.
 
Oh no - I got a jury summons today. :scared1: I believe someone on this thread said the best way not to get picked is not to make eye contact with the lawyers, right? I will remember that for sure. :rolleyes1

*sigh* I'm finally home. I was up until 230am last night at the retreat and got up at 7am so I could make chocolate chip pancakes for the kids. It was a great weekend, beautiful weather, but I'm tired. I'm making The Neely's BBQ Spaghetti tonight. the sauce is simmering on the stove and it smells SO good. It has gotten good reviews so I hope it's yummy!! Anyone make it before?

If you think about it, please keep our church in your thoughts and prayers tomorrow. We are taking a vote after church on an issue that the media has been reporting on for months (and they'll be there... again...) It's such a nightmare. This is the issue that was the straw that broke the camels back, though now it seems so irrelevant in comparison to the OTHER things on the table. You know? I love people on all sides so I just keep holding my head up and doing my job and that seems to keep me out of the line of fire for now.


I tried to take a picture, but my memory card was full, so you'll have to settle for a picture of Caili instead.

Checking in....We played the only undefeated team left in the tournament and Kyle pitched a helluva game!!!!:cool1: :cheer2: :woohoo: :banana: We won 8-6 and this team was one of the top ten teams in the COUNTRY!!!!! I am so proud of my boy, before the game when he was in the dugout he texted me and said he said a prayer to his "Papa", my Dad and asked for him to watch over him for this game. After the game he came up to me and I had tears in my eyes and said "Papa took care of you my boy". This has been an awesome night.:goodvibes

To say nothing of I don't know where my good friend has disappeared to. We go from e-mailing, IMing, texting, and calling every day to nothing.

Mmm, Pappasitos!!! I'm glad they had such a great time there and did so well! And that the illness held off until the tournament was over, though it always stinks to be miserable together...

Yeah!!! Another new friend, and an international one at that!!! Welcome! We love to have new people. You'll fit in really well here, since most of our recipes are tried and true, and EASY!!! Just to let you know, I could not cook much at all until 5 years ago, so I'm a relative kitchen newbie myself!!!

Hi Glynis, I live in a wee place called Bonnyrigg just out side Edinburgh. Im a mom to 1 great boy ( Matthew 7).I work part time for a leading US clothes store ;) and thats about it.


I try hard to make sure Matthew eats well but my limited cooking talent
makes it hard.
As i said in my original post i have been ill lately and it pretty much stems from my very,very bad diet.So im here to pick your guys brains and i mean about every thing.....jeez i dont know half the utensils and pots you guys talk about.:rotfl2:

Im pretty sure my only use to you guys will be to prove once and for all if you recipes really are easy...!!!:laughing:

Kat--I am so glad that it was a good weekend of ball for Kyle, but the poor thing sick and his Mama can't be there...you must be anxious for him to get home tomorrow, though the coaches might be asking for parents to help as more get sick. I must tell you that his prayer and text to you brought me to tears...what a wonderful young man he is!:goodvibes I wish we were closer as he would be a wonderful role model/big brother for Ross.

Dinner tonight was taco's for the boys....and I had (with buddy in mind:rotfl: ) a tuna sandwich.......I have a wicked migraine that my meds aren't touching, and the thought of spicy food was not a good idea tonight......I did make Glynis' warm winter lemon cake (I think that is the whole name, lol) but used strawberry cake and vanilla pudding.....the boys said it was sooo sweet and gooooood:cutie:

Scottlass- are you feeling better now? I don't know how people cook when they are not well, I just cannot make myself do it, although have to wonder if I did when the kids were young. I cannot remember that far back anymore :confused3 Anyway, just keep popping in and join in the chatter. The meals come when you have others to share shortcuts and tips with.

Gretchen- can you lock the 12 YO up somewhere for 8 years?????? I have to tell you that my MIL told me she has no idea how she and her DH managed while her own were teenagers and when my own were going through it I used to remember her lament.

My DD was 12 when she decided that I had no life so she enlisted her GF's to help her get her MOM in shape. I came home to find my bed loaded with clothing that they all contributed to the cause.....yup their best go get um outfits complete with shoes and spiffy leggings :rotfl2::rotfl2:To this day I wonder what their parents thought when they cleaned their clothes out to donate to me :lmao::lmao: Definitely when I bumped up my wine consumption:drinking1

I know I am behind and that I forgot a lot, I'm sorry. The shower was very nice, the food was very good, and I ate a lot. I cannot eat dinner but my goodness the best Mac and cheese I ever had is not my recipe quest!

It's funny how the kids will ask for divine help from those special people in their lives only when it really matters to them. I think that Kyle knew his Papa knew how much this meant and trusted that he would be there, just like Marisa did when she asked for a special favor from my Mom. They know before us that they have special Angels all their own :grouphug: .
 
Okay, here is the BBQ Spaghetti recipe. I made a lot of changes (used what I had on hand...) and I did get frustrated because there was too little sauce and way too much pasta, but I just improvised. We were happy with the end result, though I didn't taste a huge difference between their homemade BBQ sauce and a store bought brand as long as it was thick, tangy, and sweet. I used part of a rot chicken from Costco.

BBQ Spaghetti Recipe
you can use leftover pork, beef, or chicken. Recipe courtesy The Neelys.

1 tablespoon olive oil

1 small green bell pepper, chopped

1/2 yellow onion

1 tablespoon garlic salt

1 lb pork or beef or chicken, cooked and chopped into bite-size pieces

1 lb spaghetti

BBQ Sauce(use 3 and a half cups)
2 cups ketchup

1 cup water

1/2 cup apple cider vinegar

5 tablespoons light brown sugar

5 tablespoons sugar

1/2 tablespoon fresh ground black pepper

1/2 tablespoon onion powder

1/2 tablespoon ground mustard

1 tablespoon lemon juice

1 tablespoon worcestershire sauce

1.In a large skillet, heat olive oil over medium heat. Saute the pepper and onion, until softened for 1 to 2 minutes. Stir in the garlic salt. Add the premade BBQ sauce and bring to a boil. Reduce the heat to a low simmer and add the chopped meat.
2.Meanwhile, fill a large pot with water and bring to boil. Season liberally with salt and add spaghetti. Cook for 7 minutes, until al dente (firm but not hard) and drain. Toss spaghetti with sauce.
3.Neely's BBQ Sauce: In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cooked uncovered, stirring frequently, for 2 hours.
4.Yield: 3 1/2 cups.
 
I had spaghetti, a nice salad, garlic bread and iced tea for dinner.

I hope you feel better soon. I had a nasty headache yesterday that wouldn't go away. I'm sure it was nothing like a migraine though. :hug:

We having Salmon maybe grilled someone didn't have the tank filled yesterday so couldn't grill then. I hope to get myself in gear and get out today then back to tackle the mount everest of paperwork.

Johnny & I are home now, Kyle is due in around 6 or 7. I spoke with him earlier and he said he's feeling much better, they're probably sleeping on the bus all the way home so he should be well rested.
