Good Morning! Hope everyone is feeling better today!

We are having the Food and Wine recipe for Chilaquiles and a tossed salad tonight.

Ann, It's 8 degrees here today too...the coldest day of the season. We have been lucky this year...knock on wood.


Or maybe the company made him ill. ;) In any event, I hope he gets to feeling better soon.

How do you make yours? I actually put some red beans to soak yesterday thinking I would make this dish, but all the recipes I have found call for ham hocks and I don't want to use that.

I did end up staying home today. My stomach feels a little better but still not normal.

Not sure wfd yet--don't have much of an appetite.

I use a piece of pickled pork or just some chunks of ham, brown them up and add onions, celery, bell pepper, garlic & parsley. Add the beans and seasonings - I use thyme, bay leaves, creole seasoning and cayenne pepper. Cover with water, bring to a boil, reduce heat and let them simmer for 3-4 hours. During the last hour I throw in some sliced smoked or andouille sausage.

I'm glad that Hailey is on the mend. This bug seems to be nasty.

Is this the same thing as a Boston Butt? We use those for crock pot BBQ. If so Nancy, you can cook it, then remove it and drain the fatty liquid and separate the meat from the fat. That's what I do and then I put the meat back in the crock pot and add the sauce. Would that work for your recipe?

And BTW, It took me a while to figure what you must have typed for the censor to have ******ed out your typing. At least I assumed it's a typo. ;)

I think the Boston Butt is what it is. I just got "slow cooker" cookbook ;) and a lot of recipes call for this. I know that when I have bought the BBN it sure was good!

Evenin' all. Well, I scrapped the chicken recipe tonight. DH was going to be the only one eating it. My appetite still hasn't returned. And then DH decided he'd rather have tomato soup and grilled cheese. Not fancy for Sunday dinner, but the kids loved it!

It is 12 degrees outside with a windchill of -6. My bones are aching for the Florida sunshine.

Ann, I don't blame you for looking for warmer weather. It is wicked cold here as well. My truck is a diesel and usually if it is plugged in for two hours it starts right up. Not today. We had to pile in DH old monstrosity to bring Kady to school and that was not a pretty sight! WE had all of her paraphernalia for projects, snow gear he backpack and her lunch box, me and my stuff all trying to crawl over his treasures!

Will you let me know how AKL is? I love that place and would like to stay again but I am not sure how it is now that construction has change at some. Last time we were able to get a Deluxe Savannah room but I understand that is not available now.

Well I have no idea about dinner tonight. I am not good with changes and had thawed out a nice bone in pork roast but now I am going to my aunts, Marisa is off to a WW meeting and will probably take Kady with her. DH is useless in the kitchen. I have thighs and drumsticks so I might try something with them and will try to keep Marisa points down to a healthy amount. I'll check back later.
 
Tonight we are having what I call our power dinner. :laughing: I am making baked salmon, roasted broccoli and to drink POM Wonderful pomegranate juice.

It's like a cuban sandwich but in a pie form!

Sure! OMG it sounds sooooooo good! I hope it turns out as good as it sounds. The recipe was from Guy Fierri......let me find it..........

here it is! Oddly enugh I have EVERYTHING I need from the ingredient list, except pie crust. I've never been a great crust maker so I think I'll run out and buy one today.

Guy Fieri's Cuban Pie alla Munee Recipe courtesy Paula Deen, 2007
Show: Paula's Party

For the pie crust:
3 cups all-purpose flour
1 teaspoon salt
1 1/4 cups shortening
8 to 10 teaspoons cold water
For the Sofrito:
1/2 cup yellow onions, diced
1/2 cup green bell peppers, diced
1/4 cup garlic, minced, plus 1 tablespoon
1/2 cup Roma tomatoes, diced

8 ounces Swiss cheese, shredded
7 ounces pulled pork
5 ounces deli-style ham, sliced
1/2 cup heavy cream
4 tablespoons mustard, your preference
4 tablespoons Parmesan, freshly shredded or grated
2 dill pickles, thin sliced
1 tomato, thin sliced
Mojo Sour cream (Alla Munee), recipe follows



For the pie crust:
Sift together flour and salt into medium bowl. Gently blend shortening into flour until mixture is crumbly. Stir in just enough cold water to keep it all together. Kneed or process until smooth ball is formed, as little work as possible.
Roll in a ball and refrigerate for 1 hour. Remove, divide into 2 equal balls and roll out to 9-inches.

Preheat oven to 450 degrees F.

Drape crust into pie tin, poke with a fork and cover with waxed paper. Fill bottom with dried beans and bake pie shell for 10 minutes or until crust lightly browns. Remove and cool before filling.

For the sofrito:
Add oil to a medium saute pan over medium heat. Add onions, peppers, and garlic, cook until translucent, but do not brown. Add tomatoes, cook for 3 to 5 minutes. Remove pan from heat and hold to add to pork.

For the pie filling:
Preheat oven to 350 degrees F.

Add 2 ounces of the Swiss cheese to pre-cooked pie shell, add pulled pork on top of Swiss cheese. Top pulled pork with sofrito mixture. Add remaining Swiss on top of pork. Lay sliced ham on top of Swiss cheese. Mix together the heavy cream and mustard and pour on top of ham and then top with Parmesan. Add pie crust to top, wrap aluminum foil around edges of pie crust, and bake for 25 minutes.

Remove pie from oven, let cool and set for 5 minutes. Add sliced pickles to the center of the pie, starting at the center and fanning the pickles in the middle. Add sliced tomatoes to the outside ring of the edge of the pie, overlapping the pickles in the center.

Cut pie and serve with dollop of Mojo Sour cream.

Mojo Sour cream (Alla Munee):
1 1/2 cups sour cream
1 tablespoons garlic, minced
4 tablespoons lime juice
4 tablespoons orange juice
1 teaspoon dried oregano
Mix in bowl and refrigerate for 1 hour.
 
Did anyone see the Rosa Regale on the Today show? They were pairing it with salty sweet and showed it with Dale and Thomas popcorn...guess that is what we will indulge in on Valentine's Day since I have both on hand!

Dale and Thomas popcorn is really good if you have never tried it. :thumbsup2

I had chicken broth for breakfast, but still feel yucky. And I have to go buy a new suitcase today. The little feet on the old one are coming off.:sad1:

Sheryl, I hope you feel better...nothing like getting ready for a trip and not feeling well.

I have driven to Daytona from DW...its about an hour...but are you going right to the race? I really do not know too much about NASCAR but when I worked at some NHRA races, the traffic on race days was horrible.

You are going to have so much fun! Get better and we want a full report when you get back! ;)

Tonight I'm eating whatever the kitchen is cooking for the big meeting tonight at church/work. It's going to be a horrible one, y'all. Hundreds are coming and I'm just dreading it. My biggest fear is that a shot will be taken at me :sad1:

Yeah, That's what we've heard but have no idea what to expect. We don't have a clue as to what time we should get going that morning. We have tickets for both the Busch race on Saturday & the big one on Sunday. So I guess we'll see how bad the traffic is on Saturday.

Lauren, That looks like a huge overhaul you two are doing on the fireplace! Y'all are brave to attempt such a big job! Maybe I can just hire you two instead of Mario! I'll feed ya!;) So you're going to cover the bricks? With what?

Sheryl -- Get better quickly. That is about the only good thing about the stomach bug...it's quick.

I hope this thread doesn't spread germs because Caili has the flu. She is not quite as sick as she was yesterday, but she is in bed and asleep. When we were waiting to be seen at the doctor's office, I could see all the parents looking at Caili and making sure their kids didn't go anywhere near her.

My dad is bringing me some supplies since I can't get to the store (he asked if he could just leave it on the front steps :laughing: ) so I am making a roast chicken tonight. I didn't want to give my dad anything too complicated on the list. I think I will also make eggplant sticks and asparagus since I have those.

I went and got the couple of things that I needed.

I also just watered my garden and it looks like I need to make some recipes with a LOT of basil in them because its taking over everything!
