Sheryl- I have got to agree with Janice. I am hooked on your little mini Chef's blue eyes and that smile! You are one special Nana to foster her love of cooking and to bolster her confidence lake that.

You must be getting ready to head out for the 500 soon. I am so jealous. I really wanted to go this year, I have never been, but we just could not justify the expense. Buddy has seats in the Petty Tower, right bumped up to the Nextel Tower so they are about $1400 right there. Add on airfare and lodging and then food and the price skyrockets. So I plan on sulking Sunday.

Nancy, Not so special. As I told Laura, I get to send her home to do the hard stuff! ;)

I will be washing & packing this weekend! I wish I could just focus on just the race & start getting excited. I've been aching a lot, so the drive as me worried. And my Mom is coming along! While I feel bad about this, I am totally stressed out about it! With Bob's disabilities, our traveling is soo not normal, we have so much equipment to fit in the car & I'm thinking Mom is not going to be very comfortable either. And she's a Mom so she has this way of telling you it's fine but letting you know that it's not! ;)

I've got Jerk Chicken marinating and will be grilled later today. I ordered some PepperJack Risotto Rice Cakes from Omaha Steaks and I think we'll try them tonight and I'm making Becky's Spicy Cole Slaw. Can't wait!!!

WFD- I am heading out to the grocery store shortly. I am in the mood for fish. I am thinking :woohoo: poached salmon with bernaise sauce! Hopefully they have some nice looking salmon or that plan may change.

I am so excited DH just made some changes to our upcoming WDW trip. I can't believe we will be there in just 11 days!!! We decided to do a split stay at AKL (savannah view for DS) and Poly (lagoon view for us). We are such foodies I am so excited about our ADRs too. Thanks for letting me share my excitement.

Mmm, we had a great evening last night.

Started with wine at the bar, then escargot and chicken dip, then a spinach/walnut/blue cheese/cranberry salad, then a teriyaki sirloin (I passed on my fave blue cheese filet to save us $15). Then we went to a dueling piano bar and had more drinks/shots (buttery nipple, anyone?) until they had to get back to their babysitter around midnight.

We rarely go out but after a fun night, I always wonder why.

The place wasn't that expensive either, which was good!

ETA: No idea on dinner.

Aimee, That sure sounds delicious! Glad y'all had a good time! What was the name of that place again?
 
I can defnitely vouch for Laura's sewing ability. She makes amazing costumes. I have some photos of ones she has made for past halloweens, and they are really great. She also makes clothes for grown ups. Speaking of which, Laura, where are those pants you said you were making me?? :laughing:

Here is a photo of dinner last night. It is a simple pasta with chicken sausage, white beans, spinach, onions, garlic, red pepper flakes, and cherry tomatoes. Yes, there are two different shapes--I was using up the ends of boxes:

Both my husband and I are sick with yucky colds. It stinks. I am planning on getting back into PJs in about oh, say, an hour or so!

Dinner tonight is going to be lamb shanks (for DH only), polenta, and roasted brussel sprouts. I might make some chicken for me, I have not decided.

I am sick and feeling whiny, so I am going to whine to all of you! This morning I took my Mom over to the kitchen appliance store because her oven broke. I was walking around and looking at all of the gorgeous kitchen equipment and I just got so mad! I really want a nice kitchen with lots of high powered appliances, but my kitchen is just this rinky little closet with cheapo crummy stuff. I know so many people that have awesome kitchens and they don't even cook! GRR! Oh well....next house, I guess. I can't do a remodel here the way I would want it because it would be WAY out of proportion to the rest of the house. That, and I would not have a vacation budget anymore. Whine, whine, whine!

Sheryl, did you post the pesto pasta recipe? It looks really good. Sorry if I missed it...there is so much to keep up with on this thread lately!

I agree going out to kitchen stores is frustrating! Even though we remodeled the kitchen 6 years ago, I wasn't as into cooking then. So we put in cheap appliances not knowing any better. I've replaced the dishwasher twice already. And this week the knob on my oven cracked, I'm turning it on & off with a pliers right now. Can't tell what the tempurature is, so no baking until I can get it fixed. I also don't have the room or backup equipment to put the kinds of appliances I would like to have. The oven is only a 24" wide one & not much room for bigger. I'd like a high powered stovetop but then that would mean ripping out the advantium with the vent that is above it. And since we are still working on the rest of the house, I just keep seeing all the really great kitchens they have out now! Ugh.

The recipe for the Spinach Pesto was in my DD's new cookbook from Giada. It was just like this one that I found on the web.

Grilled Chicken with Spinach and Pine Nut Pesto
Recipe courtesy Giada De Laurentiis
Ingredients
2 boneless chicken breasts
2 cups lightly packed baby spinach leaves (about 2 ounces)
1/4 cup pine nuts, toasted
2 tablespoons fresh lemon juice
1 to 2 teaspoons grated lemon peel
1/3 cup plus 2 teaspoons olive oil
Salt and freshly ground black pepper
1/3 cup freshly grated Parmesan

Instructions
Heat a grill pan on medium high heat. Lightly oil the grill pan.
Sprinkle the chicken with salt and pepper. Grill the chicken until cooked through, about 5 minutes
per side.

Combine the spinach, pine nuts, lemon juice, and lemon peel in a processor. Lightly pulse. With the machine running, gradually add 1/3 cup of the oil, blending until the mixture is creamy. Add salt
and pulse. Put half of the pesto into ice cube trays and store in the freezer for future use.

Transfer the rest of the spinach mixture to a medium bowl. Stir in the Parmesan. Season the pesto
with salt and pepper, to taste.

Spread the pesto over each piece of chicken and serve.

Tonight, my parents are bringing over tacos from Del Taco, and I am making spanish rice to go along with them. We're just having a "hanging out" night tonight!

That looks great Sheryl, but I am stuffed full of crawfish!!!! The baseball Dads were working on our field at school and got some boiled crawfish. Johnny brought some home and had to head back to school. He should know better than to leave me home alone with crawfish....:rotfl:

I am so glad that you had a good time. You have been stressed lately and needed to just relax and have fun! We almost never go out either and I also wonder why.

It really must be going around. The dr had run out of flu swabs this morning so he gave Kenny Tamaflu as a preventative. The dr said he got his flu vaccine 3 days ago and that another dr was sick with the flu even though he had the vaccine. I hope we aren't about to do a run with the flu here.
I hope the flu doesn't hit bad either. I did not ask Gail how thin=ings were at work, she just told me the kids that come in are really sick.

Don't kid yourself Sheryl. The time you spend with that little Princess is going to give her memories that are priceless. I love my MIL but she never really had time for the kids when they were little. They needed her and their Gramps as well but they were always pretty busy or distracted. She honestly does not understand why they are pretty busy bow but that they all but rolled over and played dead for my Mom.

I can understand why you are a little stress about your Mom joining you. My BIL's brother is confined to a wheelchair and requires a lot of care. My BIL and my sister understand and make sure that they can accommodate him as well as his roommate whenever there are gatherings, but his SIL is a obtuse. You know that it takes time to assist someone into a wheelchair van, navigate whatever obstacles are in the way, and it is inevitable that there will be obstacles, assist the guys out of the van and then get inside. If they are a tad late she acts as though they interrupted the second coming. Most of the family would prefer that he stay home but they had never tangled with my sister ;).

Becky- I am always amazed that you cook when you are sick. I think I am the only one on this thread who lets them all fens alone when I am feeling yucky.

I know how you feel about your kitchen. I cannot even describe mine before we renovated. When we made plans Buddy said he thought that we should put the old stuff back until we saved more money. :headache: I wanted to shoot him and I would have gotten off if I was arrested! I whined to his brother and all he did was laugh. It seems he knew him better than me but I was one grouchy woman for a while! Then I wanted a professional duel fuel range and DH did as well.......right until he learned that the burners were gas. Oh well, I could have gotten him to acquiesce but then he would have spent every waking moment checking it so I gave in. It took over twelve years for a decent kitchen.

Let me know how Ragland Road is please. I just asked DH to help me post a pics of dinner. I am not to computer savvy sometimes, he is the official photographer around here...I wear to many other hats!!;)

I have been dying to try the duck, thanks for the feedback! I have never done O'Hana for breakfast, I like that it is family style. DH & I try to avoid buffets.

I set out ground beef. It's going to be spaghetti unless I can come up with something better. I want to try baked spaghetti but don't have a recipe for it. Maybe I'll google ;)

Just an update on my church situation: it's gotten much worse and it feels like an all-out war. There are meetings all over the place, on both sides, but I can't put myself out there and attend any of them. Tonight is a HUGE one but we will be staying home. I hate being left out but for the sake of my job and ministry I just have to. ARGH!!!

I received the list of people involved in bribing the pastor and I'm saddened and shocked by a few on the list. This group also did a mass mailing with their agenda to the entire church (we got our letter yesterday!) and have a website. So discouraging.

I'm telling you the stuff that comes out of your "rinky little closet with cheapo crummy stuff" is worthy of any gourmet food magazine cover. I can't even imagine what you could do with a high-tech kitchen.:worship:

Nancy, Since Alexis doesn't really have any other grandparent figures, I do try hard to make the time with her special. ( She has her father's Mom who almost thankful that she's not interested. Too use Lauren's slang very whiskey tango. And his grandparent's who's health is very poor. ) But being able to get a break, sure makes it easier!

I am stressed about my Mom coming with us. She just doesn't seem to get it when it comes to what I do every day to make our lives run. As you know, she seems to expect a lot from me around holidays & such. And we haven't been on a vacation with her in almost 20 years either.

Nancy, On the kitchen remodel, I almost would have been better off leaving the old ugly gold appliances in. At least they worked properly. Unless you spend the big bucks, the newer stuff is just junk.:confused3

I set out ground beef. It's going to be spaghetti unless I can come up with something better. I want to try baked spaghetti but don't have a recipe for it. Maybe I'll google ;)

Just an update on my church situation: it's gotten much worse and it feels like an all-out war. There are meetings all over the place, on both sides, but I can't put myself out there and attend any of them. Tonight is a HUGE one but we will be staying home. I hate being left out but for the sake of my job and ministry I just have to. ARGH!!!

I received the list of people involved in bribing the pastor and I'm saddened and shocked by a few on the list. This group also did a mass mailing with their agenda to the entire church (we got our letter yesterday!) and have a website. So discouraging.

2 cups canned diced tomatoes
2 cups tomato sauce
1 cup water
1/2 cup diced onion
1/2 cup diced green bell pepper
2 cloves garlic, chopped
1/4 cup chopped fresh parsley leaves
1 1/2 teaspoons Italian seasoning
1 1/2 teaspoons House Seasoning, recipe follows
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons sugar
2 small bay leaves
1 1/2 pounds ground beef
8 ounces uncooked angel hair pasta
1 cup grated cheddar
1 cup grated Monterey Jack Preheat the oven to 350 degrees F. In a stockpot, combine the tomatoes, tomato sauce, water, onions, peppers, garlic, parsley, seasoning mixtures, sugar, and bay leaves. Bring to a boil over high heat, and then reduce the heat and let simmer, covered, for 1 hour. Crumble the ground beef in a large skillet. Cook over medium-high heat until fully cooked, with no pink color remaining. Drain the fat from the meat, and then add the ground beef to the stockpot. Simmer for 20 more minutes. Cook the pasta according to the package directions. Cover the bottom of a 13 by 9 by 2-inch pan with sauce. Add a layer of pasta and then a little less than 1/2 of each cheese; repeat the layers, ending with the sauce. Bake in the oven for 30 minutes. Top the casserole with the remaining cheese, return it to the oven, and continue to cook until the cheese is melted and bubbly, about 5 more minutes. Cut into squares before serving.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
As to the issues at Church, I think that it is just sad. You are best to stay home and avoid as much as you can. If you let yourself get drawn in you may lose some of that joy that has been radiating from you and that would be a shame.

What you said! I am in awe of those meals and it goes to show it ain't the stove that does the cookin'!
