Sandy, The Portuguese Chicken was SO GOOD!!! We REALLY liked it! Bob said it tasted a lot like the chicken we had at a brazilian rest., only better!

We did Roasted Potatoes that was totally Alexis's recipe! She has decided to call them "Princess Potatoes"! She told her Uncle Bob that she made them all by herself, although her Nana did help her by cutting up the potatoes! :confused3  Here's her instructions/recipe:

Princess Potatoes- Iron Chef Alexis

Peel and cut up some potatoes
Put some EVOO on them
Put on some salt & pepper
Also some fresh chopped up stuff that looks like a shamrock (parsley)
and some herbs in a bottle
Then sprinkle on lots of sprinkle cheese
Cook in the oven until they are good

Sprinkle cheese is what she calls grated parmesan. We actually used basil, oregano and greek seasoning. Because she likes using the pepper grinder, these potatoes were very peppery! They really were very good!

Instead of spinach, I made threw a bunch extras in bagged coleslaw & will call that Portuguese Coleslaw. (Onion, tomatoes, cucumber, parsley, pickled jalapeno peppers, pimento stuffed olives with red wine vinegar, salt, pepper & a bit of sugar.)

Here's the pic of dinner:

Sandy, Thanks for this recipe! It will be a regular in our house too! :thumbsup2
I'm glad you liked the chicken! Tell Alexis I'm going to make her Princess Potatoes next week. She's too cute!

Gretchen ~ I hope you like the teriyaki thighs. I never use a broiler pan because it's such a pain to clean. I put the chicken in a 9x13 metal pan lined with foil and discard the accumulated liquid half way through cooking, when you turn them. It made clean-up so much easier. I love to cook, but I hate washing dishes.

WFD? Grilled boneless NY strip steaks, salt crusted baked potatoes and broccoli.

Sandy, Thanks for the tip. I'll do it that way for sure. I wasn't even sure where my broiler pan was. I'll let you know what my family thinks tomorrow. They're VERY opinionated and very vocal about it. But it sure smells good.

You're welcome.

Kathy ~ I forgot to tell you... the Velvet Chicken last night turned out just as good as the shrimp, awesome! I could just drink that sauce.

I just noticed this thread....

I am so bummed if the other thread is gone. I didn't save anything :( I just relied on Lindsay and her wonderful upkeep of the thread. :( *cry cry cry*

I've got some of the recipes saved. I can help you out with some of them. Just let me know!

Dh is going out of town this weekend, so we are taking the kids to the dollar theater to see Mr. Magorium's Magic Emporium. Hope it's worth it! We'll probably catch dinner somewhere out (Wendy's probably).

The stuffed shells were fabuloso last night!!! DH and I loved them, Katie and Mary liked them, and Jacob and Leslie were ok with them (which from my 2 pickiest eaters is high praise indeed!) Next time I'm going to double the cheese, though. I like things dripping with cheese!!!

Hi all just a quick check in. We are having Pigs in a blanket (stuffed hotdod in biscuit) and tater tots and salad.

Nancy I hope your cousin wise's up. I saw something like this in my family My greataunt cheated people then Karma paid her a visit and her brother cheated her when she got ill.

Thanks for the recipe Sheryl! I'll let you know what we think next weekend.

Still have not decided wfd...

Becky, I forgot to tell you the Vindaloo is really spicey! We like it that way, super spicey, but you really need the Raita with it, to cool it down. So you might want to adjust the red pepper to your taste. That sauce has been my go-to recipe anytime I get a craving for a spicy curry since the 1st time I made it.

Gretchen, Hope you enjoy the Princess Potatoes! :)

Oh how I wish you'd gotten a pic of that!:lmao:

Kathy, You should have guessed that I couldn't pass up getting a pic of that!:goodvibes

I still smile about the "Boyfriend" stories but I bet that as these cuties get older Mom and Dad will not be smiling as much. "Boys" will become a four letter word :rotfl:

This is why Greg is planning to answer the door in full-dress uniform once Caili hits puberty.

Becky, This was Stephanie's Pork Vindaloo Recipe.

Sheryl and Stephanie, thanks for the recipe! It looks delicious. I love Indian food. I think Beck and I will make this next weekend.

With some of that fresh made store-bought dough I suppose. (sigh). The only dough they sell in the stores here is the Pillsbury in the can or the Boboli or whatever it is you call it. Yucky, yucky, yucky. I guess I could learn to make my own, but I've never been good with any type of pastry.

Do you let the kids top their own?

Gretchen, it sounds like you are doing much better. Yes, I did use the fresh store made dough. I've made the dough from scratch before, but it really isn't an improvement on the premade kind, so I get three hours of my life back by buying store-bought. I wonder if there is a way I could send you some?? I have let the kids top their own pizzas, but it depends on what kind of time I have. Today, I spent four hours helping Caili make her handmade Valentines for her class, so I wasn't in the mood for kitchen "helpers" when it came to dinner.

Great news on the Wii. Beck has one, and I am not a fan of videogames (see below) but the Wii is really fun. I would buy one myself, although I am not sure how it would work on my very small, really cheap, out-of-business bargain store TV. Our house is in major need of technological improvement.

Now that Kyle is on the outside of the relationship he realizes how one-sided it had been for months. He also now sees how immature she was, funny how blind love makes you.:rolleyes1 He's matured and grown so much in the last few weeks, I'm very proud of the young man he's become.

It is so great that Kyle is using the experience to grow stronger. As painful as it is, a bad breakup can help you realize that you don't need the relationship to define yourself, and I think that helps you see your own strengths more clearly.

BTW I hope you weren't offended by what I said about the girls coming over to watch Kyle workout. I think it is great Kyle has so many admirers. I was thinking in context of when I was in high school. Asking to watch a guy workout was pretty much the equivalent of asking to watch him study. However, just tonight I realized things are different today. Liam told me that during game time in his class, one person gets to use the computer, and the rest of the class, instead of playing one of the hundreds of other games in the class that don't happen to be videogames, stand around and watch the one kid play the computer game. When I suggested that this seemed a little lame, Liam rolled his eyes. I guess I am officially old.

I will take you up on that! ;)

Absolutely! I think Beck can confirm that I make pretty good costumes. Right now, I am working on three for Caili's skating.

Not offended at all....I thought it was pathetic too, but kids today are so different from us it's amazing.......it's a whole different world out there. Just think what it will be like when Liam & Caili are dating.....Full dress uniform is a brilliant idea.:rotfl2:

From Webmaster Alex:
http://www.disboards.com/showthread.php?t=1715217

"We have started to cut up the former long threads and return them to the boards. Webmaster Doc is doing a lot of work creating indexes so they can be found. He is going to post them on a sticky thread on the community board and we will leave it there for a couple of weeks. You can add it to your current thread and after that it will be your responsibility to move it from the old thread to the new one as each one is locked. The first 5 threads are done and we should have more shortly. I do need to shut the boards down to cut them up but rest assured they are on the way."

I leave for a few hours and I have pages to catch up on! You all are chatty tonight :thumbsup2

Kathy- It sounds like once Kyle was able to step back he saw things differently. Good for him, that is so hard at any age, but very difficult with your first love.

Sheryl- I have got to agree with Janice. I am hooked on your little mini Chef's blue eyes and that smile! You are one special Nana to foster her love of cooking and to bolster her confidence lake that.

You must be getting ready to head out for the 500 soon. I am so jealous. I really wanted to go this year, I have never been, but we just could not justify the expense. Buddy has seats in the Petty Tower, right bumped up to the Nextel Tower so they are about $1400 right there. Add on airfare and lodging and then food and the price skyrockets. So I plan on sulking Sunday.

Janice- I agree with you about my cousin. She is one bitter woman, always angry at people and always begrudging people anything. Then she goes to church. I figure Karma will bite her in the butt someday. I will always remember her telling her two stepsons that they were not college material. :sad2: Instead of encouraging them to aspire to more she crushed them, and her husband stood by. But what do you expect from a man who leaves two 11 year old boys and a 14 YO girl with a alcoholic drug addicted mother to move to another state because he did not think the new wife would want his children? Her Mother, another Aunt of mine said I did not understand and she was right. I did not. They had all forgotten that my children were not always Buddy's.

Laura- I think that you could hire Greg out :thumbsup2 Now about those costumes.........where were you when I paid a coworker of Donny's $100 to sew a blue Aurora dress for Kady? I bought all of the fabric and notions. The dress was two sizes too big when she showed up for a fitting. She just zipped it on the sides and up the front, added straps that were two different sizes and two different lengths. And worst of all, my son had asked her not to smoke when she was sewing for Kady. It smelled so bad! I had to Febreeze it, toss it in the dryer with a dryer sheet and leave it outside all night long :headache:. That was when I pledged to learn to sew again.

Gretchen- I would say stay strong but I would give in like an ice cream cone in July

Kathy- I just wanted to add that the thought of letting my Mom's house go was awful. We all put it off, dilly dallied and then finally gave in. My poor brother got to handle that and it was hard for him and for Gail. They both disliked the guy who wanted to buy it an took it very personally.

Well anyway, I told my brother that I would respect any decision he made, but that he really needed to step back (this is the man who kept my father's care in tech back yard for ten years. My Mom finally called a junk man and had it towed out when he was at work).

The sale went through I December and I truly feel better. I thought I would just never drive by again and that would be that, but it's funny. My sister told me it was good to see people there so I drove by and she was right. It was like somehow that house was happy again. I know it sounds silly but it looked so lonely before and now it is lived in. I hope that you find that same peace. I did not believe it would happen and was so scared but now I am glad that we did this. It was the right thing.

Maybe I should get into the costume business afterall. Greg has always said I should. $100 just for the sewing and you bought all the fabric?? That is one expensive costume! For that, I would add 100s of sparkly rhinestones to a princess costume.

I think, and I know this sounds a little silly, that houses have spirits too, especially ones that are older and have seen a lot of life in them. Our house is older, and the minute the kids and I walked in, I felt like the house was happy. Walking into this house was sort of like the first time I met Greg, I felt like we would spend the rest of our lives together.

I hope everything works out happily with your parents' house, Kathy.
