Gina- I've been cooking for the girls and they have been doing well but I have not really been trying to follow the plan with them. Marisa thought that the CORE plan would work with me so I'm going to try. Lauren is on WW too and she seems to be losing weight consistently. I just have to make sure that I keep enough food on hand to cook with. I'll let you know how the chicken comes out.

Does anyone know if you need to salt eggplant if you are using it in a casserole? I have a turkey and eggplant recipe but I am not sure if i need to prepare the eggplant to get rid of the bitterness. I also know of a veggie lasagna recipe that sounds good but have not gotten it yet. I need to pester my niece more I think.

Risa- if you are checking in and see Jennifer......stalk her to get that recipe.....do not let her get away :woohoo:

ETA: I thought I'd share a bit of good news with you guys. I now officially own a pair of "fat pants." :lmao: I bought a pair of brown dress paints for Easter to go with a very pretty top. Well, I put them on yesterday and they darn things were HUGE!!!!!!!!!!!! They fit comfortably when I wore them 2 weeks ago, but not anymore! Seriously, I was glad I sit all day long. If I had been standing, they would have fallen to the floor!

I had no idea I had already lost an inch or so from working out, but I'm not complaining!

I think we'll have Chicken Sausalito. We are out of meat so DH is picking up chicken on his way home from Sams so I can't start anything until he gets home and that looks fairly quick and easy.

I am looking forward to April 15th being over with, I think we will have Gretchen back then!!! I miss her!!!

I went up to school for a bit this morning to help out in Ross g/t reading class and will be going back up after school to help again. Tonight is the big presentation with the 3-5th graders. Every year they do a big country project, each student doing a different country, with a report, displey boards, trivia, games, language and they dress up as someone from their country, (the reason we bought muslin for Ross) and also do a food from it. We will go up at 6pm for the dinner and then the kids will talk, after we walk around and look at all of their displays, etc. This is huge and has taken them a month to prepare for, their whole 3rd quat. grade is based on this project.
It is always interesting as to what food we will be eating. There are always one or two things that are good, and others that are very strange, lol.

I hope everyones Monday is going well....I see we are still waiting for some to check in...hope those we haven't heard from yet are doing ok...

I'm really beat, we were in the ER with Alexis again last night. She had continued to run an on & off low fever, intermittent complaints of stomach pain. Chris talked to dr. on Friday, said they thought it was virus. Last night her fever shot up all of a sudden to 102.5 & she was crying with pain.

We took her in, after 2 hours in the waiting room, her fever went back down to 100 without any medicines. Then she started getting really upset about being in the RE as she called it, was starting to get a bit hysterical about the idea of them putting in a catheter on her again. By then it's past midnght her fever is down & we still had a long wait before she'd see a dr. Chris decided to take her home & bring her to the dr. this morning. Whe has an appt at 11:00, I'll be going with them.

Please say some prayers that they will figure out what is going on with our girl!

Gotta run & check in later & let y'all know how it goes with the dr.

Oh that poor little peanut :grouphug:. She has been through a lot lately. Please let us know what the Dr says, and you know she is in my prayers. More said for Mom, Dad Nana and Uncle Bob, you all need some Divine strength, I think. It is easier to be ill yourself than to know your little one is in pain.

I was thinking they probably had a child's help in putting together the bags and they just threw it in there. Most of the door prizes are just random things that people donate, last year I got a nice woven bag.

Oh Good! So nice to have WW comrades here! I know i can be successful with WW ( i have about 40 lbs i would like to lose altogether..but i will be very happy with 20!)...but i do end up running out of dinner ideas that Greg will eat too. I am happy to share my meals, because i am sure i will get some great ideas from you ladies as well!
I do have a wonderful food find...Breakfast was 2 slices of Fiber One's new cinn. raisin toast...140 cals, 1.5 grams fat and 8 grams fiber! 2 points! and let me tell you..it was GOOD!

I am another WW person. :thumbsup2 I really need to start getting more creative in the food area, I keep eating the same dishes over and over it seems and I am bored!

Dinner tonight is Talapia, a veggie and a carb of some sort. I have to go to shopping on the way home and pick up some fruits and veggies.

I am not a very creative cook either, I need inspiration from others or I will cook the same thing again and again. Even with the cooks on this thread posting awesome meal after awesome meal I still tend to fall back on the same stuff. I found some recipe boards and am trying to find menus that my family will eat and still accommodate Buddy. Poor guy wants to know why when we are all going on a diet he has to go too :lmao::lmao:. I told him he is along for the ride :woohoo:

Eggplant....no, I don't think you would have to salt it if you are putting it in a casserole. I usually do salt mine if I have time, but I don't think it is completely necessary.

So, dinner at my inlaws yesterday was the dreaded Chinese food. We offered to stop and pick it up at a semi-decent place, but they always want to go to the same mediocre spot. It's a little annoying because we have to drive 90 minutes to their house, and the restaurant is another 20 minutes away--so 40 more minutes in the car for John since he always picks it up and pays for it. Oh well.

The one great thing about going out there, though, is that I get to stop and shop at my all time favorite farm. They have the best stuff! I bought a LOT of food. The man checking me out said "Geez, did you buy one of everything??" :laughing: But, now I have lots of vegetables to cook.

John emailed me and said that he wants belt sandwiches with avocado for dinner so that is what we will be having.

Hi everyone! :wave2: I thought I'd drop in for a minute and let you know what I'm having for dinner. I know you're probably all dying to know. :laughing: I'm making French toast because I have a lot of bread nobody's eating. We're also having sausage AND bacon :rolleyes: men! OJ for DH and me, pineapple juice for DS because he only drinks fresh squeezed OJ :snooty: and applesauce.

Well, Alexis saw a diff. pediatrician today, who didn't dismiss it has a virus. We're glad she ran a battery of test even though putting her through it was awful. When they took blood, she was crying "Nana, help me!" I felt soo bad!

She had x-rays, blood & urine taken. They found high white blood cell count again . The Dr. just called Chris with the rest of the results, her blood sed. rate was also high, which also indicates infection somewhere. Even though the preliminary urine test looked ok, she is running cultures on her urine, looking (& hoping) for a bladder infection. We won't have the results on that until tom. afternoon.

If that doesn't come back positive for infection, she'll have to have ultrasounds/cat scans, looking for either appendicitis or something worse. We are really praying that it's just a bladder infection.

We're also more than P.O.'d that when she was in the ER 2 weeks ago & put the poor child through being catheterized that they didn't send it for cultures!
 
Sheryl Give that poor baby a hug for me. I used to hate watching Alex get blood drawn or shots. He would give me the dirtiest looks.

It leftover Monday here, someone will get leftover steak and the other sausage/spaghetti.

hey all. Been MIA again, with no good excuse this time. Except that maybe I haven't been cooking. It hits Friday noon and I go on "vacation". And then last night I decided to grill some hamburgers, and ran out of propane halfway through cooking. :headache: Maybe I should just quit while ahead! Tonight is going to be quick pasta and meat sauce. I still need to run to the grocery store tonight, blech. Now, I just need to scour through our thread for some yummy recipes!

Tonight is going to be hectic, I have to go to three stores and to the library to drop off books. Then I have to throw dinner together really quickly then try to get my office area cleared out some. I am getting a new desk this weekend and have to get it cleaned out so I can put it in. We are having a yard sale Saturday so I have to get the old desk ready to sell, plus anything else I want to sell. And I have to do it by Thursday night, :scared: I am going to Bunco Friday night and will not be home until late.

I was going to ask if it was possible that it could be appendicitis. My godson had that last year although his came on suddenly. We thought he had food poisoning because he had eaten something we hadn't. He started throwing up really badly and when it didn't stop by the next day his mother had me drive them to the ER.
