Well, Alexis saw a diff. pediatrician today, who didn't dismiss it has a virus. We're glad she ran a battery of test even though putting her through it was awful. When they took blood, she was crying "Nana, help me!" I felt soo bad!

She had x-rays, blood & urine taken. They found high white blood cell count again . The Dr. just called Chris with the rest of the results, her blood sed. rate was also high, which also indicates infection somewhere. Even though the preliminary urine test looked ok, she is running cultures on her urine, looking (& hoping) for a bladder infection. We won't have the results on that until tom. afternoon.

If that doesn't come back positive for infection, she'll have to have ultrasounds/cat scans, looking for either appendicitis or something worse. We are really praying that it's just a bladder infection.

We're also more than P.O.'d that when she was in the ER 2 weeks ago & put the poor child through being catheterized that they didn't send it for cultures!
Awww, poor Alexis. I hope it's nothing serious and she feels better soon.

I have never posted before here or anywhere else, so I hope I do it right. I have been following this thread since almost the beginning and today I got the courage to sign up. I don't know why I didn't before. Tonight we are having boneless porkchops, baked beans, cornbread, and whatever veg I find in the freezer.

Tonight is comfort food! I'm making spaghetti and meatballs with what my husband has name Extra-special Kitty Bread. It's just bakery bread (today it's rosemary garlic), with a compound butter made with about a half a stick of room-temperature butter and a buttload of minced garlic. Put into a 375 degree oven for about 10-15 minutes. MMMM!!

I looked into the beef situation around here but really couldn't find one that seemed "user friendly". I have wondered though if one of the Amish markets here isn't selling organic meats and just don't advertise as such. Unfortunately I don't know when I wll be able to get down there again, they are only open a couple days during the week and Saturday and I am busy the next couple Saturday's.

Ya know, I never thought of that. We have an Amish market here too...open a few days like yours. I guess I should check that out as well. I never thought of that.

Evening all-- Whew what a night, it was looong, 20 kids worth of "stuff" (3rd-5th)... but it was a blast.

Lauren--Glad you had a good day today, and took the time to do something other then the house this morning!! Stepping back and taking a deep breath is important!!

Glad you had a great time! As soon as Tom leaves the house I may go back to bed or something like that. I need to regroup. ;)

Last night we had a change of plans. My Mom persuaded me to come for dinner and I was glad we did. She made :thumbsup2 stuffed articokes, roasted broccoli with grape tomatoes, homemade scallop potatoes, and pork chops.

WFD-I have a doctors appointment so something easy...lamb chops, creamed corn and who knows what else I can find in my fridge! I have been craving lamb chops, since I read last week about someone cooking them for their parents! There is also an open bottle of wine I may need to finish ... to make room in the fridge of course!:rotfl:

I'm trying a new chicken recipe tonight. If it tastes half as good as the marinade smelled when I made it yesterday it should be a winner - Chicken Scampi with rice pilaf and green beans.

Morning all! Tonight I'm gonna give Kathy's Cajun Pork Tenderloin a try. But unfortunatley I'll be cooking it in the oven, as DH hasn't exchanged the propane tank yet. :rolleyes: Anyone have a roundabout estimate on oven temp and time to cook after searing the tenderloin?

I have been doing mine in the oven. I make a paste out of rub with olive oil then bake at 450 for 10 minutes, then 20 - 25 min per # at 250. I have been using a thicker loin cut so if you have then thin tenderlon, go with about 20 min...check with a thermometer if you could. It should be 160 - 170 degrees.

She had a pretty good evening last night, only complaining every now & then. Her fever didn't shoot up too high either. Just waiting to hear from the dr. on the urine culture & praying that they find something there!

I just took the dog for a walk and we are having the most beautiful spring day, of course next week my daughter is off from school so it will probably rain then! Tonight we are having sesame chicken with peanut dipping sauce, broccoli, and I think rice. Does anyone know how to make brown rice taste good? Thanks for being so welcoming, off to work in the yard.

I saw your question on the rice, but I can't help you there. Rice (other than risotto) is one of my weakest points in the kitchen. I can tell you that in college one of my favorite meals was brown rice with tahini on it. I don't know if I would enjoy that now though...

Here are some pictures. This is the mango cocktail from the weekend--as you can see, it "kind of" froze. It was not as icy as I hoped though. And, as usual, I thought it was too sweet.

Last night I had some buttermilk that needed to be used up, so I made the Pioneer Woman's onion straws. I added some cornmeal to mine though, for extra crunch. We noshed on these while I ate dinner--most of them got tossed. They were tasty, but when you are having bels for dinner, there's not much room for anything else:

I buy jarred sauce and dress it up myself with onions, peppers, garlic, mushrooms, spices, vodka/red wine, etc. I have always heard that you can add the rind from a block of parmigiano reggiano to soups to add flavor. Could you do the same with spaghetti sauce? Would it be good? Has anyone ever tried it?

I have never done it before but it can't hurt. I put alot of grated cheese on my pasta, then add the sauce...I am sure that putting the rind in the sauce would give it a nice flavor too.

I think Becky uses the rinds in soups. She can probably elaborate.

Yes, you can do this. I do it all the time. It adds a very nice, rich flavor. Just don't forget to fish it out when the sauce is done cooking! :laughing:
