I don't know how much worse things can get for me. Kyle was on his way home from baseball this evening and a bucket fell out of a truck in front of him and rolled under his car and busted his radiator. As He & Johnny left to take the car to the auto repair shop he gets hit from behind by a policeman about two blocks from the house....:sad1:

I did find a Wii. :banana: At my brother's suggestion, I checked Walmart.com, and they had it. I had to buy it in a bundle with a lot more games and accessories than I would have bought at the outset, but the way I figure it, I now have stuff for Easter (the Easter bunny doesn't really bring candy to our house because mom doesn't let Liam eat it. ;) ), and a head start on Christmas. :thumbsup2

I didn't make those clams last night, so I will do something with them, as long as they are still okay. I am leaning toward an Asian meal with baby bok choy, spring rolls, and fried rice. I'm not sure where the clams fit in, but I'll figure it out.
 
Pastel de Cuatro Leches
Saveur Magazine, 2/08

2 tsp butter
1 tbsp plus 2 cups flour
2 tsp baking powder
1 1/2 tsp fine salt
6 eggs, at room temp, separated
1 1/4 cups sugar
1/2 cup whole milk
1 1/2 tbsp dark rum (I omitted cuz I didn't have any on hand)
1 tbsp vanilla extract
1 14-ounce can sweetened condensed milk
1 12 ounce can evaporated milk
1 cup heavy cream
1 16 ounce jar dulce de leche (milk caramel)-my store only had 13 oun cans

1. Heat oven to 350. Grease 13X9 pan with the butter and dust with 1 tbsp of the flour. Invert the dish, tap out the excess flour and set aside

2. Sift the remaining flour, baking powder, and salt into a large bowl and set aside. Put the egg whites into a large bowl and beat wiht a hand mixer on med speed until soft peaks form, about 2 minutes. While the mixer is still running add the sugar in a gradual stream and continue beating again to soft peaks. Add the egg yolks one at a time, beating well after each addition. Alternately add th reserved flour mixture and the whole milk in 3 parts. Add the rum and vanilla and beat again briefly until smooth

3. Pour batter into reserved baking pan and bake until golden brown, about 30 minutes. Set the cake aside and let cool slightly for 30 minutes

4. Whisk together the sweetened condensed mil, evaporated milk, and heavy cream. Using a knife, poke the cake with holes all over penetrating to the bottom of the pan. Pour the milk mixture over the warm cake and set aside to let cool completely

5. Cover the cake with plastic wrap and refrigerate until well chilled and liquid is absorbed, at least 4 hours. Spread the dulce de leche across the top of the cake and serve

Yummo--gonna go grab another piece now!

The chilequiles lasagna was really good last night! Predictably, my kids didn't like it "too spicy", but Alan, Katie and I ate it happily!!! Today it's a cold, rainy day, so I'm making some comfort food: Hamburg Gravy over mashed potatoes. I'll make some green beans to go with it.

Here's my recipe for Corned Beef Brisket with Cabbage

3 pound corned beef brisket
1/2 C. chopped onion
2 cloves garlic, minced
2 bay leaves
1 medium head cabbage, cored, cut into wedges
1 C. maple syrup
1/2 C. mustard
1 Tbs. horseradish

Place meat in large saucepan with onion, garlic and bay leaves. Add water just to cover. Cover. Bring to boil. Reduce heat to medium-low; simmer 1 hour. Drain. Cover with fresh water. Cover; simmer 2 or 3 hours or until meat is tender. Remove meat from pan, reserving liquid in pan. Add cabbage to reserved liquid in pan and cook until tender. Meanwhile, mix syrup, mustard and horseradish. Place meat in shallow baking pan; spoon 1/2 of the syrup mixture over meat. Reserve remaining syrup mixture for serving with the meat (I don't do this, but pour all the mixture over the meat). Bake at 350 degrees for 20 minutes or until meat is well glazed, brushing frequently with remaining syrup mixture. Heat pan drippings; pour over meat. Serve with cabbage.

Ahhh see that is part of it......she finds E-cards tasteless unless you live far away or for those who are housebound.....If I EVER did this to her I would never hear the end of it..I do not have ANY issue at all with an E-card from anyone at all, or the fact that she sent one on my godmother passing..but I find it wrong/odd to get a sympathy card from my MIL on my own Mothers death, I was sent a lot of nice e-cards from friends and I cherished every one of those ......I wish I could agree with you that she is trying, but not even close....she is PO'D that I have not gone to see her since my mother passed, and that she thinks it is time for me to get over it......(I know this for a fact, as my hairdresser is one of my close friends and I started a year ago having my mil go to her, as she didn't have a hairdresser, and she doesn't think that LULU will tell me what is said :confused: )...never mind the line in the E-card that say's "WHEN you are done grieving, I will be there for you"
If this was the first time she has done something like this then I would just shrug it off, but as all of you know this is just another one for the list.....Kris is furious as they have not even called to see how we are, never mind stopping over....we only live 8 min away.

Sorry I didn't check in yesterday. No cooking, I was busy up-chucking again. My IBS acting up aagain. Weird thing I just realized, when researching fibromyalgia, is that IBS is often part of it. I had no idea the two things were related. But, yeah that's another dr's appt I'll have to make. Feeling a little better today, but nooo cooking.

Thanks for all the compliments on the Mini Chef! It's just too easy to get kudos when I have that little face in the kitchen cooking. ;) I only wish y'all could have heard her too. I didn't quite know what she was talking about at first when she says with a real southern drawl " Well Naana, don't we need to throw in some BUUUDTTER in these meatbaaalls?" I said "What, no, no butter in meatballs." Then she went into a full-on Paula Deen imitation! :rotfl2: It was so funny! She is really good at it!

Janice, The monster Balloonballs came out great!:laughing: I always brown them in olive oil in a frying pan first, before putting them into the sauce. But with the size variety that worked out really well! ;) The big ones were actually the best! Really moist & delicate on the inside!

Lauren, I ended up chickening out (or maybe that's turkeying out) on total turkey meatballs. I used half ground round & half turkey sweet italian sausage. They came out wonderful. Other than the change in meat, I followed the Mario B. recipe I posted a while back. I know that soaking the bread in water sounds strange, but it really works to give you a light & moist meatball!

Stephanie, That dulce de leche cake sounds wonderful! The last couple of years I've been making DD a Tres Leche cake for her b-day, ( her b-day is Cinco de Mayo ). The tres leche is always a big hit! I wish I could do that one, but she is hypo-glycemic so adding dulce de leche cream would probably really send her into sugar overload. They had an interesting version on that Recipe Showdown show with coconut milk in it, & toasted coconut on top that sounded great too! But of course DD hates coconut too! :confused:

I'm planning on cooking something for St Pats day, but haven't quite figured it all out yet. And this all depend on my if these stomach issues clear up. I'm thinking of going Nuevo Irish like Raglan Road's menu. Maybe cedar plank maple glazed salmon & colcannon, leek & cabbage soup.
:idea: Oh! I wonder if that bread pudding recipe is on that other thread? Oooh that would be so good!

You have had a rough few days, haven't you? Please do not put that Dr appt off, the sooner you get to the root of this the faster you will feel better. You cannot go on never knowing when you are going to be in pain or be so ill. I hope you are better soon.

Oops! I came to post dinner and forgot because I talk too much!

We are just going to have the soup from last night. It was really good and I don't think I'll feel like eating much more. Buddy can add a sandwich if he is still hungry, he will feel like he won the lottery ;)

I'm the Mean Nana here too, but I've ended up giving in on that fight. Alexis's parent's allow her to wear those things! (as long as they don't show when she's in her school uniform.) So regularly she come in from school & raises up her shirt up over her head to show me her newest TAT!! Thank goodness it's usually Disney princesses or the mouse, otherwise they are coming off!
 
Thanks for all the kind words my friends.:grouphug: I wasn't told the details of the accident last night as my guys knew I was in bad shape already so they kept quiet until today. Kyle's car was spun and landed on a guard rail over a canal, he was literally inches away from ending up in the canal.

Everyone is fine, now we just need to deal with the insurance company.

Baby A seems to be feeling under the weather... He is kinda not himself. Not cranky but not happy. I wonder if he is teething again. :sad1:
 
I cook a lot of vegetaran food, and own a lot of veggie cookbooks. If you post what kinds of ingredients, etc. you were thinking of, I could suggest some stuff to try!

Yummmmmmmy!!!! Those eggs look fantastic. How do you get them to come out like that? Is the recipe posted? :hyper:

A version of it was posted on the old wfd thread. This way is my futzy way of making them. I like my eggs cooked through but the yolks runny, so this is what I do:

For each serving, you will need three eggs, 2 tsp. butter, 2 tsp. cream, 1/2 clove garlic, minced very fine, 1 tbsp. minced herbs of your choice (I use thyme and parsely), and 2 tbsp. finely grated parmesean cheese.

1. Preheat broiler.

2. Put cream and butter into ramekin and place under broiler until cream is bubbling and butter is melted.

3. Meanwhile, seperate your eggs. Discard one egg white.

4. When the cream is bubbly, pour the egg whites into the ramekin and place back under the broiler. Broil until almost cooked through--about 4 minutes.

5. Now take the ramekin out of the oven, and place the egg yolks on top of the whites. Sprinkle with the herbs and cheese, and season with salt and pepper to taste.

6. Place back under the broiler and broil until the cheese is just melted and the yolks are done to your liking--2-3 minutes more.

Let rest for a minute or so before serving.

I don't even try to argue the tattoo thing, those things are way too cool for kids :rotfl2:, Oh no......she had used her markers to totally design her palm and it was in dark blue! It looked like a giant spiderweb :eek:. He Mom would have had a conniption and I was not too happy myself. I just got all of the green she had on her little Marie running suit when she colored with her Pa.

I am trying to get up enough energy to go take a shower after I lay Aiden down, but I am worried I will fall asleep with him :( and I felt like I got enough sleep.

74 degrees outside!!!

There's a cool breeze out there, I opened my sunroof, and I could have driven for hours. But alas, I had to get home, but it gave such a burst of energy. For those of you who know about the craziness going on in my life recently, you will understand, I really needed this :)

That is how I feel, tired, achy and just out of sync. If you are tired you need the sleep, you may be fighting something off. Please get some rest when the little one is asleep.
 
Kat--WOW!!! Well I understand why they waited on telling you....Your parents were riding Kyle's shoulders that is for sure!! I am sure you are a bit shaken with just the thoughts of it all, so make sure you have a glass of wine tonight. How is Kyle feeling about the events? :hug: hugs to all of you!!

Ross had a friend over playing Wii this afternoon and Rock Band on the Xbox.....I like Wii better as there is no preteen boys singing out loud involved:eek:

Lachesis--Rest when the baby rests, especially if you feel run down...everything else can wait, and will be there.
