Staying Wednesday to Wednesday 8/23 to 8/30.

Planning on two MK days with two kids under 10. Would you do MNSSHP on the Friday or the Tuesday (the last night of trip)? Again, planning on a full non-party event day at MK. Was debating doing one of the days on a party day for the "lower" crowds, go back to resort for a mid-day break etc.

Currently looking like
Thursday - MK (especially for HEA)
Friday - HS
Saturday - pool day but Epcot at night for date night with wife
Sunday - HS
Monday - Epcot full day
Tuesday - MK day, then MNSSHP for evening

or:
Thursday - Epcot - full day
Friday - MK day, then MNSSHP for evening
Saturday - pool day but Epcot at night for date night with wife
Sunday - HS
Monday - MK (especially for HEA)
Tuesday - HS

Just debating which option!
 
Personally, I would go with your second choice and maybe not do MK during the day that you go to MNSSHP. I think it sounds less exhausting and more "doable". That way, you can sleep in on the day after your E day to rest for the party.

I also am hoping that my family goes to the MNSSHP earlier in our trip so that everyone is more rested, since we seem to lose steam by the end of our trip if we've been going, going, going.

Do you have an early flight to catch on departure day? If not, I'd do the first option. I'd pick Tuesday as a quieter night over Friday. Is there a reason you're skipping AK? I know there are shorter lines on party days, but I'd do AK during the day and then head over to the party.
 
our flight home Wednesday is not until 6pm so we were just going to sleep in, pool, lunch, etc.

no real reason skipping AK other than little kids and I figured maximizing as much MK as possible so we are not cramming and rushing and just going at a better pace and not feeling pressured.
 

I'd probably go with the first option since I think the party would be a nice way to end a trip. But as someone who has been to multiple parties, I would recommend that regardless of which option you choose, you don't go into a park the day of the party. My family and I are always exhausted by the end of parties, and I really don't know how I would get through one if I had already spent all day in a park. If you get to the park as early as the ticket lets you that still gives you 8 hours of park time. Even with the extra fireworks, parades, trick or treating, etc. my family and I have still gotten on all the major rides, some of them multiple times, at every party we've been to because everything is a walk on.
 
I'd build my trip on a party night for Tuesday. I don't like Friday night party crowds and while it may be a negligible difference, I try to avoid weekend party nights. We will do a full day at MK on a party day and we've also just done the party only, both are great. When we've done a full day at MK with a break and the party, we were able to ride several rides multiple times. Being in MK on a party day and having a party ticket usually allows you to get alot of stuff done. We are not big parade, meet/greet people so we ride when people are watching shows and at character meet ups.

Both of your plans sounds good, neither is inherently better/worse, just comes down to your preference for how you like to tour and how much time you want in the park. I'd look at park hours, how late you think you'll be in the parks, when you want to arrive the next day, etc. and plan from there.
