What types of Christmas cookies are you baking?

Still trying to decide. I will make these

Sugar Cookies
Choc Chip
Haystacks
Belgian Waffles
Snickerdoodles
Choc Hazelnut Wontons
Peanut Butter cookies

I might also make

M&M cookies
Choc covered pretzels
Choco-Mallow
shortbread cookies
Crunchy Choc peanut butter cups
 
I've already got 3 different kinds of chocolate chip cookies and some whipped shortbread cookies in the freezer. I'm going to a cookie exchange this Sunday and I'm making Pizzelle's to take to that. I'm also making a sugar cookie to flood / decorate with royal icing. I'm also going to make a couple of different kinds of mini cupcakes based on Disney's Butterfinger Cupcake that I had at Hollywood Studios this summer.

I've also got peanut butter bars, date squares and butterscotch chocolate oatmeal squares in the freezer as well. The butterscotch squares are absolutely wonderful. I'm not doing a lot this year:

Peanut blossoms
gingerbread men (I have a really good recipe if anyone wants it...it uses pudding mix)

and not cookies, but:

puppy chow
oreo truffles
and seasoned pretzels
 
Oh my! Already so many recipes I want to ask for!!

The cookies I know I want to make (if the baby EVER takes a nap) are-
pecan tartlets (my husband calls them nut cups)
sugar cookies, decorated with royal icing
gingerbread men
pizelles
jam thumbprints
knock off thin mints (easiest ever, and they taste just like them)
chocolate dipped graham cracker peanut butter sandwiches (I should think of a shorter name for those)
cranberry bread
snowball cookies
whipped shortbread
english toffee

OK, now to look back through the thread and pester you all for some recipes. And to eat another truffle, since the closest thing I have to a Christmas cookie is a Teddy Graham, and that's NOT going to cut it!

What are the hazelnut wontons? That sounds good!

And how do you multi quote? Where you put quotes from lots of different posters in one post?
 
My wife has to make 15 dozen cookies for a charity bake sale this weekend. Her staples are macaroons, peanut butter chip with pecans and peanut butter/oatmeal.

I am getting hungry just thinking about it.

Are the peanut butter chip with pecans, peanut butter cookies with chocolate chips and pecans? (because that sounds exceptionally delicious) Or some kind of cookie with peanut butter chips and pecans? I just bought a giant bag of pecans at Costco and they are burning a hole in my freezer.

the cookies I always do:

nutmeg/eggnog cookies
Choc hazelnut crinkles (Nutella)
Vanilla cake mix with crushed candy canes
Italian sour cream lemon and orange cookies
almond paste

Cookies I might add:
Nanaimo bars
miini brownies with green mint frosting
mini cheesecakes
chai spice
something cranberry



I have more time this year, so I really want to do it up. Depending on DD's mood, we may do decorated sugar cookies. Might experiment with royal frosting this year.

Sooo...I kinda' want the recipe for everything you listed!!! They all sound good, and they are all (with the exception of the cheesecake and brownies) things I've never had before. I am especially interested in the Nutella cookies. In my experience if Nutella is involved, the results are delicious!
And Chai spice? Yum!

Do you make the cookies and then freeze them or do you freeze the dough, then bake?

I would love to make a whole bunch of different cookies but I don't know how to go about the freezing process.

So none. Haven't had working oven for 2plus years. Was gonna say I hope my mom bakes some this year but then they will just taste like I am eatting a carton of cigarettes. :rotfl: So guess we won't get any this year unless store bought.

I usually bake them and then freeze them. I just put them in air tight plastic containers and separate the layers with waxed paper or put them in plastic ziploc freezer bags.

I made chocolate chip cookies a couple of weeks ago and froze the dough for the first time. When I put some of the frozen ones in the oven, the bottoms burned. Now I'm afraid to make the rest of them. I'm wondering if maybe I should have let them thaw first. :confused3
 
All this cookie talk is making me want to go bake...vegan chocolate chip peanut butter cookies anyone?

I freeze the dough for sugar cookies (it's like pie crust in that the freezing actually makes better cookies), and I've frozen gingerbread dough too.
Usually I make the cookies and then freeze them though.
The cookies that I don't freeze (or refrigerate) are-
Anything dipped in Chocolate
Anything decorated
Pecan tartlets (I think the centers get runny)
Pizelles (I don't know if you can, just figured you couldn't)

I freeze baked gingerbread and sugar cookies undecorated, and then just decorate them a few days before they will be eaten.


This year I have to ship the cookies because we will be in California for Christmas. Does anyone have any tips for that?

We live in a rental and our oven door doesn't shut. We have to shove a chair under the handle and try to jam it closed, but it still doesn't shut tight, so it's always a bit of a guessing game as to what to set the temperature at. Sometimes the results are good, sometimes not so much.

Cigarette cookies are no good! That is just a crime against butter, sugar, and flour (you know...the holy trinity), and it makes me want to send you some nicotine free cookies!

Aww your so sweet! I welcome all nicotine free cookies! Ya know its not because we don't have the money to replace the 70s golden rod colored stove. It is the fact for me that I will loose a whole counter and cabinet because the stoves of the 70s were a tad smaller than the ones of today. And hubby doesn't want to replace the stove until we redo the whole kitchen. I think he is nuts!

So I will continue to use my toaster oven. I can bake my casseroles and other things in there. But since it is small it would take several days to make a batch of cookies hahhha. But seriously have you considered a toaster oven? That way you won't have to guess on your temps and the food will come out even. Do you think your landlord will replace your stove??

We are baking...well I should say the DH is baking..LOL..so you will get cookies, and he promised pumpkin cookies of some sort!!
