What’s for dinner?

Can you share your oven fried chicken recipe? I can never get mine to turn out right.
It’s nothing fancy. My husband likes everything pretty plain. Preheat oven to 425. Put 1/4 cup of shortening and 1/2 stick of butter in a foil lined 9x13 baking pan and put in oven enough time to melt shortening and butter until it’s sizzling a little but not burning. Keep your eye on it. Toss chicken in combination of flour, paprika, salt and pepper. Place in pan SKIN SIDE DOWN first and bake for about 20-25 minutes. I use bone-in thighs with skin. Turn over and bake another 20 minutes. Drain on rack or paper towels. We love this chicken. I don’t make it too often cause the skin is just too irresistible not to eat.
 

wilted lettuce...like what the had last night at the MET and according to the inside edition...if i went to goodwill store...I could dress up....halloween wrecks...i mean racks are full....what I saw from last night....wilted lettuce wrecks.

Made pulled pork in the crockpot and then made up a few sandwiches for my son. Dad is out at an overnight conference and I'm too tired to eat.
 
Beyond Meat burgers, homemade sweet potato fries, with garlic/lemon aioli and a spinach salad with homemade balsamic dressing.

OhhhHhhhhOOoo....share your homemade sweet potato fry recipe. Mine always come out soggy.
 
Just did some store bought appetizers and homemade nachos for supper. Cheaper than eating out but a fun Friday supper.
 
Grilled ham and cheese sandwiches on sliced sourdough bread along with tater tots !
 
I had Papa John's last night...I'll reheat and have it for lunch today.
 
We had grilled marmalade salmon and salad. I woke up hungry and just had some more, which is why I'm online at 3:30 in the morning.
