What’s for Dinner Tonight?


Bought 2 chicken breasts on sale today. Sliced them up and mixed in a seasoned cornstarch slurry. Everything but the egg white needed for “velveting”. Had an egg and of course One Handed Sally broke it wrong mixing the yolk and white together . GRR%D!@? whadda maroon! Yeah well no more eggs so will just wait until tomorrow’s food delivery to finish the prep.

Meantime, took some manicotti stuffed with spinach and ricotta out of the freezer. Plated it with a Rao’s tomato sauce (good enough to call homemade!) top and bottom and into the oven it went. Meanwhile heated up a ham steak in a skillet and made a green salad. Dinner is ready to be served and I’ll see youse later!
 
my son is currently addicted to the '8 can chicken taco soup' recipie I saw online and tried one day. easiest recipie ever and with the exception of canned chicken it's all canned goods I normally have on hand so now I keep one of those 3 can packs on hand so I can throw it together in a heartbeat.
would you share please? I'd love to make it.
 
Terrible dinner tonight. Pork chops with gravy, rice and peas. Sounds fine right? Nope. The pork chops were some sort of mangled pork assortment with bones. Tons of fat and gristle throughout with very little actual meat. 😝 Gross. The gravy, rice and peas were good. But those “chops” kind of ruined it.
 
Tonight will be unstuffed cabbage. No time (or motivation for that matter) for making cabbage rolls, so I'll just serve it casserole style instead. It will taste fine, but I do miss the days when I kept a stash of golabki in the freezer and could just pull some out to pop a frozen homemade dinner on the table.
 
Apparently the egg shortage has hit the local market hard. Not only are they expensive but as difficult to find as hen’s teeth. Ordered a half dozen eggs and WF substituted plant eggs instead. Not ready for a science experiment so tomorrow the nearby supermarkets will be checked. Cut chicken breasts still in fridge, sigh.

Looked in the fridge and noted too many short-term leftovers that needed using. Made a shakshuka with yesterday’s broken egg, cauliflower steak and a frozen pepper and onion medley. The cooking base was a combo of Rao’s tomato and pepper sauce and chicken broth. Breathing space in the fridge again! Had some lemon sorbet for dessert.

Eggs here today were $7.29 for 2 dozen. Got some for DD and DIL......we're leaving soon, so I didn't need any
