What’s for Dinner Tonight?

Trying a new recipe I found for Chicken Enchilada soup that sounds tasty. I'm going to cheat it a little bit by cooking up some ground chicken instead of the leftover chicken it calls for. I don't have any on hand right now and I cannot tolerate the rotisserie chickens from the store anymore, just gross. I'll just toss a beer bread in the oven and possibly pull together a salad if we're in the mood for it at dinner time.
I wish I had your ability to throw together meals so easily/quickly. My Mom was that way. Unfortunately, she didn't pass that gene my way.

??? No, that doesn't sound like me. These days I'm usually scrambling by the seat of my pants and performing a lot of parlor tricks to make it look like I'm "cooking dinner". I've totally lost most interest, motivation and downright willingness to do it, plus time has been lots shorter with different pulls on our time. If you look back at my posts it shows. Tonight's dinner is coming darn close to "going all out" these days and it's a recipe that is supposed to take about 20 minutes to prep and then some cook time. The beer bread is just a cheat using self-rising flour, no yeast or rising and kneading dough. I'm already crossing my fingers DH will be disinterested in salad so I can get out of chopping up the veg for that.

I've always been kind of seat of my pants cook, but I did used to generally pull together more rounded out and involved meals. Not at the level or results of the other cooks here I'm sure, but definitely light years from the shenanigans I pull these days.

That's my point. :laughing: You can scramble by the seat of your pants & throw together a meal at the last minute. I can't do that. I need some type of advanced planning.

If I was making your meal at the last minute, that bread would be coming from the bakery & the salad would be coming out of a bag. Shoot, I'm serving salad & bread tonight. With advanced thought, my salad will still be a bag mix & my bread will be coming out of the freezer. Having bread out of the freezer vs. from the bakery qualifies as preplanning for me.

I am right there with you! If someone told me being an adult meant figuring out what to have for dinner everyday and then making it I might have passed. 😂

I’m in a food rut, I’m out of ideas, I have no time, and I’m unmotivated. I’ve been thinking about trying to learn to cook something new. Maybe it will inspire me. I was hoping to try Big, bubbly focaccia last weekend but this house remodel has taken over my life.

This thread is a source of inspiration for me, when I get into a rut. It's also a source of embarrassment that so many of you are so much more creative in the kitchen than I am in my older age. (I used to do better, honestly I did.) :o

Um, I'm pretty sure you're one of the actual cook cooks here. You're doing reno and putting out meals and considering yourself cutting corners with the pulled bbq chicken. We had furniture delivered on Saturday and that required me putting a brisket in the crock pot so I would have time to get everything done -- and then to top it off the brisket was horrible. Both daughters showed up to eat with us so they could check out the new furniture and I'm sure wound up leaving hungry anyway it was so bad. Bag salad and bread from the bakery would probably be a massive improvement at my house these days.
 
Busy today, making up for my chilled out Sunday.
Going thru my Mom’s files looking for some paperwork. She had a unique method of filing that mean going through every bit of ephemera with the ability to read upside down and sideways useful too 😉. On the bright side, clearing out a file cabinet I’ve been ignoring.

Felt like eating light so made a salad of butter leaf lettuce, mango and cuke with some shreds of prosciutto added.

my son is currently addicted to the '8 can chicken taco soup' recipie I saw online and tried one day. easiest recipie ever and with the exception of canned chicken it's all canned goods I normally have on hand so now I keep one of those 3 can packs on hand so I can throw it together in a heartbeat.
 
Guess where we are!! Last night dinner was old fashioneds, shrimp on a wire, and charcuterie flatbread at Geyser Point Bar & Grill. Tonight will be... not sure, Morimoto, Jaleo, Homecomin, Boathouse? We'll see who has availability! Tomorrow night I have an ADR for Steakhouse 71.
