What’s for Dinner Tonight?

Set up some chicken wings to marinate in soy sauce, grated ginger, orange peel, minced garlic, rice vinegar and spices, today.

One of DGD’s fav dishes and I make it for her every “stupor bowl Sunday”. She doesn’t like football anymore than I do but somehow the dish became entwined with her, the cold of the new year and her
Oompah (aka the man) thus becoming an annual dish for the two of them to munch on. Weird that I’m making it and neither of them are here; weirder still that I don’t really like chicken wings and yet I purchased and made them.
Think I need to start writing shopping lists to avoid hiccups like this. Interim, I’ll just store em in the freezer and hope they get eaten eventually.

All that and the truth of the matter is I’m really not hungry today. Made some more fresh fruit salad and that sufficed for dinner.
 
I've seen Mississippi Pot Roast mentioned here several times & decided to try it today for the first time. Should I add anything to the 5 basic ingredients? Also, the recipe calls for 4 to 5 pepperoncini. They vary in size so greatly that I'm not sure I put enough in. How many & what size do you normally use? (I put in 2 fairly large ones & 4 small ones that are bite size or less.) FWIW, we don't like bland food. We like a lot of flavor, but not a lot of heat.

Okay, so it is "homemade" but I have started to cheat with it a bit and it actually tastes better this way, and more like take-out Chinese food.
Feel free to adjust things to how you need it for however many is dining.

Giraffe Zen's Honey Sweet and Sour Chicken (with rice and veggies)


INGREDIENTS:
1 bag of Tyson Fully Cooked Honey Battered Breast Tenders (chicken)
Kikkoman Less Sodium Soy Sauce
La Choy Sweet and Sour Stir Fry Sauce and Marinade
White or Brown Rice (brand and type of your choice). Sometimes we do something like this and it has the veggies already in it.
Vegetables of your choice (I've used Bird's Eye Steam Fresh Broccoli and Carrots in the past, but these aren't needed if you are using the steam fresh rice w/ the veggies already in it). I've also used Success Boil-in-bag rice.
Olive Oil Spray


DIRECTIONS:

1. Cook Honey Battered Breast Tenders to bag directions (I use the air fryer for about 6-8 mins at 385 degrees), but you can also follow their bag directions for the oven. I just don't recommend using the microwave for these as they come out mushy that way and you don't want that.

2. If making the steam fresh veggies do this. When they are done place in skillet that has been sprayed with olive oil spray and sprinkle some of the soy sauce on them and cook them at med temp until they sizzle a bit and they are to your liking--make sure to be moving them around with tongs so they don't singe. Reduce the heat to keep them warm but not cooking).

3. Place bag of rice in microwave and follow bag directions. (If using boil in bag rice boil to box directions).

4. When Tenders are done, place in another skillet that was also sprayed with olive oil spray, sprinkle some of the soy sauce on them and in the pan (not a lot), and then partially cover them in sweet and sour sauce as well as some in the pan to your liking (again not too much). Use tongs and toss them around on medium/high heat to coat them. Place skillet lid on them and reduce heat to medium. The sweet and sour sauce should start to bubble with cooking a bit, this is when you take lid off and start to move them around a bit with the tongs so they fry up some, but don't burn. When it is warm enough, turn the stove off and move it from the burner.

Everything else should be done (hopefully at this point and still warm, if you used the microwave rice and it's still in bag just reheat it in microwave for 30 seconds and it should heat right back up).

Place rice on plate and add the veggies to your liking (you can add more soy sauce if you want for the rice on your plate--however you like).
Place sweet and sour chicken on plate (it's up to you if you want to place it in with the rice and veggies or in a separate spot on your plate).

Enjoy! :)

Sounds homemade to me! This is a great option for us and right up our alley. I will let you know when DH and I get a chance to try it. Appreciate you taking the time to post it.

Yay! :) You are welcome. I'm used to making it for just me and DH too so I usually make about 8 tenders each for us, but that is totally up to you and how many you both think you would like to consume. One bag of boil in bag Success brand rice, one bag of veggies usually feeds the two of us with sometimes leftovers. I don't use more than half of the bottle of sweet and sour sauce if that helps. And if you are making the veggies separate, feel free to experiment with the kinds you use I have added baby spinach a few times that are cookable (is that a word? LOL). Bird's Eye also makes stir-fry mix veggies if you like those.

I can't wait to hear how it goes and if you like it!

You should be good with that amount of pepperoncini. They don’t really add heat, just flavor. I always pour a bit of the juice from the jar in too. Maybe 2-3tbls worth. Again, just for flavor. It’s a favorite for football Sundays over here. We usually have it on crusty rolls although I’ve served it over rice before or with a side of mashed potatoes.

I’ve got Gumbo on the stove right now. Also made some stuffed garlic knots with the leftover knots from the pizzeria on Friday. Added mozzarella, roasted red pepper and salami then heated them up in the oven. We’ll snack on them while we watch the games.

Thanks for the advice. I like pepperoncini. I mentioned heat, so no one would suggest adding a half bottle of hot sauce or something. :laughing: (My DS adds hot sauce to everything.) I will add some juice.

Tonight, I'm serving it over garlic, mashed potatoes with roasted carrots on the side. We'll have plenty of leftover roast, so I'll have to come up with a different combo next time.
 
Well it was supposed to be leftover burgers with fries. But I must have accidentally thrown the burgers out when cleaning out the fridge today. So the freezer is saving me tonight b/c we have a bag of frozen chicken filets in there I can throw in the airfryer along with fries.

So dinner tonight is air fryer chicken filet sandwiches and fries. LOL
 
Decided to make this a true Sunday with nothing to do but drink pots of tea, read the paper and stream shows online. Very relaxing.

Took some butternut squash soup out the fridge and a slice of meatloaf out the freezer. Heated everything up, made a green salad and that was dinner.
 
Miso glazed salmon, seasoned brown rice and sauteed snap peas with a little bit of red pepper. It was one of the meal subscription recipes. Turned out very well; as most of them do. No pre-planning or shopping, 20 minutes in the kitchen and zero waste. I freaking LOVE our meal subscription service. :thumbsup2
 
Trying a new recipe I found for Chicken Enchilada soup that sounds tasty. I'm going to cheat it a little bit by cooking up some ground chicken instead of the leftover chicken it calls for. I don't have any on hand right now and I cannot tolerate the rotisserie chickens from the store anymore, just gross. I'll just toss a beer bread in the oven and possibly pull together a salad if we're in the mood for it at dinner time.

I wish I had your ability to throw together meals so easily/quickly. My Mom was that way. Unfortunately, she didn't pass that gene my way.
