What’s for Dinner Tonight?

DD is making braised short ribs with garlic mashed potatoes and... steamed green beans? I don't know how she's doing the short ribs, but the last 2 times we had them, they were amazing, so I'll trust her! (Of course, the mess in the kitchen was amazing, too, and as the rule here is "they who don't cook, clean"... well... but I'm sure it'll be worth it!)
 

We are headed to our friends pool for the day. I’m bringing cheese platter, crostini with whipped ricotta, and roasted blueberries, and corn on the cob.

For the meal we are having hot dogs, hamburgers, grilled shrimp, corn, pasta salad, green salad, and fruit salad.

No idea what we are having for dessert, one of my friends is going to try something new.

Interesting. I've never heard of roasted blueberries. How do you roast them & what do they taste like? We've recently acquired two huge blueberry bushes. I'll be looking for lots of different ways to serve them.
 
The town my extended family live in had their 4th celebration last night. We all met at my sisters house for a meal & to watch the fireworks. We had:

BBQ pork sliders, hotdogs, slaw, baked beans, macaroni salad, deviled eggs, chips, corn on the cob, fruit platter, banana pudding, some type of Angel Food, jello & strawberries dessert & a birthday cake for my 6 yr. old great nephew.

Dinner tonight is to be determined.
 
Interesting. I've never heard of roasted blueberries. How do you roast them & what do they taste like? We've recently acquired two huge blueberry bushes. I'll be looking for lots of different ways to serve them.
I took a pint of blueberry and put them on a foil lined baking sheet (to make cleanup easier) I squeeze the juice of a lemon on and drizzled with a heaping tablespoon of honey. Stirred and cooked at 400 degrees for 7 minutes, put in a bowl and let cool.

It was good, I served it on a toasted piece of baguette with whipped ricotta (1 16ounce container whole ricotta), juice of a half a lemon with the zest. Tossed in the food processor for 1-2 minutes.

I liked it better when I made it with strawberries during strawberry season. The strawberries had a deeper flavor but I would make it again. My husband said it would be great on pancakes or waffles or on vanilla ice cream too. We have some leftover so I may try it on ice cream later.

Do you drink? If so I would highly suggest infusing some vodka with blueberries. I pint blueberries, 2 tablespoons sugar, medium size bottle of vodka. Dump it all in a large glass container, shake a couple times a day for 3 days. Strain back into the vodka bottle. Store in the fridge once it’s infused so it doesn’t go rancid. It’s great with lemonade.
 
Thanks for the tips. I'll give the berries a try soon, but we'll probably try the vodka first. :teeth:
I’ve had good luck infusing vodka with blueberries, vanilla, and pineapple. Raspberries were not good, it was super bitter.

At the holidays I crush small candy canes and infuse with that. I do small bottles and give it with fancy hot cocoa mix as a hostess gift at the holidays.

DH thinks the blueberries, vanilla & pineapple sounds really good. We'll try it both ways.
