What’s for Dinner Tonight?

Last night was leftover meatballs in sauce from our family's 4th of July party.Served over tagliatelle with a salad.
tonight was Maple Bourbon Brown Sugar salmon for the main. Sides were corn on the cob & pasta salad. Too hot to heat an oven for 60+ minutes for a baked potato.
 
Last night was supposed to be braised short ribs, but decided it was too freaking hot to cook, so made "Big Sandwiches." This is 3 or 4 different deli meats, whatever sliced cheese is available, and cut up veg. We had roast beef, turkey, ham, bologna, swiss, cheddar, and Cooper sharp. Veg options were pickles, lettuce, tomato, onion, black olive, banana pepper, yellow peppers, diced green peppers, avocado. There was regular bread and bulkie rolls, with chips and watermelon. everyone makes their own "Big Sandwich!"

Guess what? It's still so hot that tonight's dinner was "Big Sandwich, Part 2!"
 

This summer has been so hot that I haven't been "cooking" much at all. We eat a salad, sandwich, other "cold" dinner. Last night I made something in the crock pot and heated up a side dish in the microwave.

It's too hot to run the oven/stove and too hot to grill.

We've also eaten out/ordered pizza more often too. Pizza once a week; probably eat out twice a week.

Normally I love to cook and we eat home cooked meals.
 
Back home today and a bit tired from unpacking chores. Glad I thought to put together a weekly freezer packet and have a sister stick it in the fridge over the weekend. It was nice to come home to a not quite empty fridge.

Tonight it was a chicken schnitzel, arugula and a few cut up peaches. I so enjoy incorporating fruit into dinner and this certainly is the right time of year.
 
@LuvOrlando you asked for a pic of the steak salad w/ tomato ginger vinaigrette I made on vacay on a different thread but I don’t recall which one so I parked it here.

Not the best picture (or plating) but I was too busy having fun 🤩 .

Wound up placing the steak atop arugula, grated carrots, sliced radishes, cuke spears, and grape tomatoes. I’m sure this was my plate since I eat less meat and added mozzarella stored in olive oil and parsley. All the prep except the cut up tomatoes was done at home, placed in baggies and put together on site. The prepped veggies were used in other lunch dishes until there were none left. Generally, it took about 10 - 15 minutes to put lunch together and about the same for breakfast which was a hot beverage, yogurt and fresh fruit. Next trip will probably be longer so I’ll try to vary breakfast a bit more.

Hard to gauge exactly how much was saved bringing these meals as I wound up paying for checked luggage ($40.00) but the funds saved allowed us to eat at Signature eateries throughout our stay. Oh and the prices at Disney really have gone up! Pulling up costings from past trips to compare and it’s a hard road to travel. Still we had a nice time and I’m already planning another trip for the winter months.
 
DH & I spent the evening with my recently widowed sister, before we leave the area. DH had fried fish, fries & okra. Sis had a deep fried hotdog w/ okra. I ate my salad & brought my Cuban sandwich home for lunch tomorrow.
 
Taking DD to the airport, should make it back in time to make a fast dinner.
It will be Cheese and Tomato Stack.....English Muffin then slices of tomato and Mozzarella with balsamic dressing (so a Caprese)
