What’s for Dinner Tonight?

I bought some fruit at the farmers’ market today. Layla, my home attendant thought I’d bypass the visit but seeing all that produce is inspiring so off we went. Bought some stone fruit and blackberries, mixed it with ricotta cheese and a few sprigs of mint and that’s dinner.
 

It's some kind of burrito named thing.
Made in a crock pot....layered with bell peppers, onions, black beans, chile peppers, tomatoes (I use Rotel), spices. Then layered....veggies, tortilla, cheese, repeat.
 
Well with my cooktop broken, I am now the proud owner of a Zojirushi rice cooker and a single burner hot plate. So tonight will be a pot of rice and some sautéed veggies. Finally feeling up to cooking after about a week of covid.

Finished my leftover fideo last night with a salad and we are leaving for a 4 day weekend tomorrow so cleaned out the fridge and ordered pizza. Tried to be a little healthy with cauliflower crust. Every time we do it I regret not getting real dough but I suppose the fact that the taste isn't spectacular makes me eat less lol.

Do you use a recipe? I'm always on the lookout for a good macaroni salad recipe.
It’s nothing special. Macaroni, sweet onion, green olives, boiled eggs, mayo or Miracle Whip (whichever you prefer), a dash of salt and a dash of cayenne pepper. The quantities can be adjusted to taste. For mine, I used one pound of macaroni, a medium onion, a six oz jar of green salad olives (no chopping needed), eight eggs (minus the white of one since I like it yolky) and then dressed it to just coated (I like it a little dry). You could substitute pickles or other veggies for the olives if you like.
