What’s for Dinner Tonight?

A bit cooler today and I woke up with lots of energy.
Did a bit of veggie prep and decided I wanted to eat Asian foods for the week.
Tonight it was Singapore rice noodles with shrimp and roast pork. Had a peach for dessert but trying not to eat them all as I’d like to try my hand at making peach gelato.
 

I'm having a bad health day, so we ordered Japanese takeout. DS had steak & scallops. DH & I shared shrimp & scallops. Both meals came with fried rice, carrots & broccoli.

Tonight is breakfast for dinner.
pancakes for DH, French toast for me, bacon, sausage, fried eggs and apple slices and some cherries that are left
 
Made an unexpected 180 degree change today.
Anticipated making something Asian influenced but as I pulled out the frozen veggies realized there was quite a bit and went off in a new direction: shrimp and corn chowder using dribs and drabs of broccoli, bell peppers, sliced onions, cauliflower and green peas.
No heavy cream so I used the last of the half and half and a few spoons of cream cheese.
Nice low carb meal.
 
Using the last of the frozen fish and seafood (hopefully) I made a Thai seafood salad with rice noodles ,fresh cukes, radishes, bell pepper slices, shredded cabbage and arugula. Poached shrimp, scallops, and monkfish with a cilantro and fish sauce dressing topped the greens.
Looks like I’ve made dinner for a few nights.

Err Im going to need more peaches for the gelato so going to eat what’s on hand today 😉.
 
Grilled ribeye for DH, grilled chicken for me with local corn and jalapeño, and my mom’s macaroni salad.

I’ve been trying to recreate it for 2 years and it’s off. I have a list of ingredients but no measurements. I cooked the pasta and she is going to come over so I can watch her mix it. I call with my ingredients list to make sure I have everything. I read her the list and she says and sugar. What that is not on my list! I’m sure that’s why it’s off when I’m making it.

So, I have to ask. You've mentioned corn and jalapeño a few time. I've never seen that combo. How do you make it?

I like the combination of a little spice with the sweet corn. I cut the corn off the cob and small dice 1-2 jalapeño (depending how spicy you like it) in a large skillet/fry pan I melt butter, add the jalapeño and let it cook for a minute. Add the corn and salt and pepper and cook over medium for 5-7 minutes or until the corn is cooked. We eat a lot of corn in the summer so I try to mix it up with this, boiled, and grilled.

That sounds great! I'll have to give it a try, when I'm back in the area that has roadside stands with fresh vegetables.

I'm jealous of your garden. We spent last summer & fall taking care of MIL, while she battled terminal cancer. Her friends brought in more fresh veggies than we could eat. That's a luxury we don't have at home.

I hope you enjoy it! My garden is my happy place. I enjoy being out there and the fresh veggies are so rewarding. Remind me of this in mid August when I’m running out of ideas for what to do with everything 😂
