What’s for Dinner Tonight?

Had a lunch with a friend at one of our fav coffee shops & I brought back 1/2 of my giant sandwich. Might eat the rest of it for dinner tonight.

Last night I had a bowl of popcorn & a small protein shake for dinner last night, while I watched the Gabby Petito documentary. Very sad.
 

We drove to Long Island, attended DH aunt’s funeral went to the after reception then dove home. We left at 4 this morning and got home around 6. I was exhausted so we picked up Chinese food.

The temporary construction door was down when we got home and they start painting next week! I need to pick paint colors this weekend.

Looks to be a good season here in Louisiana, as there was plenty of water this past winter, after a dry season last year. DD flew all the way from Michigan this week to scarf up some mudbugs.
Smart girl! I hope we can get to Savannah, before the prime season ends.
 
Not the best dinner tonight. I had a gift card for Applebees so we ordered that. While dh went to pick it up, I stayed back to wait for the water company guy. Apparently, they haven’t been charging us enough for the past FOUR YEARS! It was a mistake on their end with billing, but in the end, they can backbill even if it’s on them. I insisted someone come out in person so I knew their reading was actually correct this time. 😒
Anyway, when dh got back, my salad was missing the dressing so I had to make some sort of southwest dressing on the fly and dd’s chicken fingers looked more like nuggets.
 
I've kind of been in the mood for eggplant parm, but I'm lazy as per usual so I might pass on that and switch to a quick lentil soup instead. I'm hoping to talk DH into heading out somewhere for some live music or possibly trivia night and calling some friends to join for fun. Got the blahs, tired of constant obligations, need to shake it up with some laughs and time being social for a change.
 
Winding down on leftovers this way so making a chicken soup with half a rotisserie chicken, a small pack of frozen mixed veggies, celery, carrots and onions plus fresh spinach leaves and dill added at the end. Toying with the idea of adding cooked gnocchi or rice at the very end. Time will tell how carb hungry I really am.
